Pan Seared Halibut Recipe With Lemon Butter Sauce image

This pan seared halibut recipe with lemon butter sauce takes just 20 minutes... which you'd never guess with how fancy pan fried halibut looks. I'll show you how to pan sear halibut, plus how to make the perfect sauce for halibut.

4 6-oz Halibut fillets ((1.5 lb total))
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1/2 cup Salted butter
1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.
  • Use the Zulay Kitchen Lemon Squeezer to squeeze all the juice from both halves of the lemon into the pan. Bring to a simmer, then reduce heat and simmer for about 3-4 minutes, stirring often, until volume is reduced by half. The lemon butter sauce will still be thin.
  • Drizzle a little lemon butter sauce over each serving plate. Place the pan seared halibut fillets over the sauce, then drizzle more sauce on top.

¾ cup sour cream
¾ cup mayonnaise
5 large fresh mushrooms, sliced
1 onion, sliced
1 ½ cups shredded Cheddar cheese
½ cup crushed saltine crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer half the halibut slices in a 9x13-inch baking dish. Mix sour cream and mayonnaise in a small bowl until smooth; spread half the sour cream mixture over halibut. Spread mushroom slices on top, followed by a layer of half the onion slices and half the Cheddar cheese. Repeat layers of halibut, sour cream mixture, onion, and Cheddar cheese. Sprinkle with saltine crackers.
  • Bake until crackers are browned and fish is easily flaked with a fork, 35 to 40 minutes.

1 tablespoon Old Bay Seasoning
1 1/2 lbs halibut fillets
1/2 cup unsalted butter
3 garlic cloves, minced
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
1 tablespoon finely chopped herbs (dill, oregano, tarragon, marjoram, chervil, rosemary, take your pick)

Steps:

  • In a small bowl, mix the olive oil and Old Bay together; brush the halibut fillets with the mixture.
  • Arrange fillets in a single layer in an ovenproof baking dish; cover and refrigerate for up to 24 hours.
  • Melt butter in a small saucean over low heat; add in garlic; stir/saute until the garlic is fragrant, about 5 minutes, being careful not to burn the garlic.
  • Remove pan from heat; add in lemon juice, lemon zest, and herbs; store in the refrigerator until you are ready to bake the fish.
  • Preheat oven to 400°; let fish come to room temperature for about 15 minutes.
  • Melt the garlic butter and pour it over the fish.
  • Bake the fish for 10 minutes, basting once with the sauce.
  • The fish is done when it is opaque all the way through when slashed in the thickest part or an instant-read thermometer reads 165°.
  • Serve fish with the garlic butter spooned over each portion.

5 tablespoons butter, cubed
1 medium onion, sliced and separated into rings
1-1/2 pounds halibut or salmon steaks
3/4 cup mayonnaise
3/4 cup sour cream
3/4 teaspoon garlic powder
3/4 teaspoon seasoned salt
3/4 teaspoon dried basil
3/4 teaspoon dried thyme
1/8 teaspoon pepper
1/2 cup dry bread crumbs
1 cup shredded Parmesan cheese

Steps:

  • Place butter and onion on a double thickness of heavy-duty foil (about 34 in. x 18 in.). Cut fish into serving-size pieces, removing and discarding the bones. Place over the onion., In a bowl, combine the mayonnaise, sour cream and seasonings. Set aside 1/2 cup for serving. Spoon the remaining sauce over fish. Sprinkle with bread crumbs and Parmesan cheese. Fold foil around fish and seal tightly. Grill, covered, over indirect medium heat for 15-20 minutes or until fish flakes easily with a fork.

Olive oil
Salt and pepper to taste
1/4 cup Chardonnay
Garnish: lemon wedges and fresh dill sprigs
1/2 cup regular, light or fat-free sour cream
1 Tablespoon fresh lemon juice
2 teaspoons grated lemon zest
1 teaspoon minced garlic
1 Tablespoon chopped fresh dill or 1 teaspoon dried dill weed
1/4 cup grated cucumber (squeeze dry)
Salt and pepper

Steps:

  • Cucumber-Dill Sour Cream Sauce( Makes about 3/4 cup). Mix sour cream, lemon juice and zest, and garlic. Stir in dill and cucumber; season with salt and pepper to taste. Refrigerate, covered, until ready to serve. Make the sauce first and keep refrigerated. Bring it to room temperature and stir it well before serving. Preheat oven to 450°F. Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with paper towel. Heat a large heavy ovenproof skillet over medium-high heat. Brush both sides of halibut with oil. Place halibut in heated skillet and cook, uncovered, about 3 to 4 minutes, until browned. Shake pan occasionally to keep fish from sticking. Turn halibut over, season with salt and pepper, and cook 2 minutes more. Remove pan from burner and add wine to pan. Place pan in preheated oven and cook for an additional 6 to 8 minutes for frozen halibut or 3 to 4 minutes for fresh/thawed fish. Cook just until fish is opaque throughout. Transfer halibut to warm plates and dollop with 2 tablespoons sauce per portion; garnish with lemon wedges and fresh dill. Pass the remaining sauce on the side.
