ALMOND MAPLE GRANOLA



Almond Maple Granola image

This granola is good and crunchy with lots of sweet flavor, thanks to the pure maple syrup and dark brown sugar. It uses a lot less oil than some granola recipes. Can be made 1 week ahead.

3 cups rolled oats
1 cup blanched slivered almonds
¼ cup wheat germ
1 (14 ounce) package flaked coconut
⅓ cup unsalted sunflower seeds
6 tablespoons pure maple syrup
6 tablespoons packed dark brown sugar
¼ cup vegetable oil
2 tablespoons warm water
½ teaspoon salt
1 cup raisins

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Lightly grease a cookie sheet with sides, or a large cake pan with cooking spray.
  • In a large bowl, toss together the oats, almonds, wheat germ, coconut, and sunflower seeds. In a separate bowl, whisk together the maple syrup, brown sugar, oil, water and salt. Pour the liquid over the oat and nut mixture, and stir until evenly coated. Spread out on the prepared cookie sheet. If you want some chunky bits, squeeze some small handfuls into little clumps.
  • Bake for 1 hour and 15 minutes in the preheated oven, stirring occasionally until evenly toasted. Mix in raisins. Cool, and store in an airtight container at room temperature.

4 cups old-fashioned oats, or more to taste
1 cup chopped pecans
½ cup almond flour

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Mix maple syrup and coconut oil together in a bowl; add oats, pecans, and almond flour and mix until evenly coated. Spread onto a baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.

5 cups old-fashioned oats
2 cups slivered almonds
2 teaspoons ground cinnamon
1/2 cup canola oil
1/2 cup pure maple syrup (preferably Grade B)
1/2 cup hot water
1 tablespoon vanilla extract
2 teaspoons almond extract
1/2 teaspoon fine sea salt
1 1/4 cups dried blueberries or cranberries (about 6 ounces)

Steps:

  • Arrange 1 rack in top third and 1 rack in bottom third of oven; preheat to 300°F. Line 2 rimmed baking sheets with parchment. Toss oats, almonds, and cinnamon in large bowl. Whisk oil, maple syrup, 1/2 cup hot water, both extracts, and sea salt in medium bowl. Drizzle over dry ingredients; toss to coat. Divide mixture between sheets, spreading in even layer.
  • Bake granola 20 minutes. Stir granola; reverse sheets and bake until golden brown, 25 to 30 minutes longer. Transfer granola on sheets to racks. Sprinkle dried fruit over and cool completely, stirring occasionally. DO AHEAD: Can be made 1 week ahead. Store airtight at room temperature.

  • 2. In a small bowl, whisk together the maple syrup, canola oil, agave nectar, and vanilla. Pour over the dry ingredients and mix well. I do this with my clean hands.
  • 3. Spread the mixture out onto a baking sheet that has been sprayed with cooking spray. Bake for 20-30 minutes at 300 degrees, stirring occasionally. I probably stir every 7 minutes or so. Take the granola out as soon as it starts to brown.

Or, pinch the ingredients together with your fingers. Add the crumbs to the grain mixture and toss. In a small pitcher, combine the maple syrup with the vanilla and almond extracts. Pour over the grain mixture and stir until the grains are evenly moistened.
  • Spread the granola on the buttered baking sheet in an even layer and toast for 12 to 14 minutes, stirring once, until golden and dry. Let cool completely then stir in the raisins and cranberries.
