A shiny, deep colored sauce that is especially good over ice cream, bread pudding, shortcake, pound cake or anything your heart desires. Nothing could be easier, more natural or more delicious! 1 pint blackberry (2 cups)
3 tablespoons sugar (more or less depending on your personal taste)
1/4 teaspoon lemon juice

Steps:

  • Puree the berries through a food mill or in a food processor and press them through a fine-mesh sieve to remove their seeds.
  • Whisk in the sugar and lemon juice, whisking until the sugar dissolves.
  • Taste for sweetness and adjust, if necessary.

4 cups fresh blackberries
1 cup sugar
1 tablespoon brandy
2 tablespoons cornstarch
¼ cup water

Steps:

  • Place the blackberries, sugar, and brandy into a saucepan, and place over medium heat. Slowly bring to a simmer, and cook until the blackberries have softened, about 10 minutes. Dissolve the cornstarch in the water, and stir into the simmering berries. Continue cooking and stirring until the sauce has thickened and reached your desired consistency, about 10 minutes.

This blackberry sauce recipe comes from "Preserved" by Nick Sandler and Johnny Acton. Serve this with peaches and sponge fingers, or over ice-cream (or indeed as a base for home-made blackberry ice-cream) for a speedy dessert. Posted for Zaar World Tour 2005.

300 g frozen blackberries
50 ml port wine
125 g sugar
1/2 lemon, juice of

Steps:

  • Simmer the blackberries in a saucepan with the port, sugar and lemon juice until the fruit is tender (about 10 minutes).
  • Break up the fruit with a potato masher.
  • Pass blackberry mash through a fine mesh nylon sieve.

1 1-pound bag frozen unsweetened blackberries, thawed
1 cup plus 2 tablespoons semidry white wine (such as Chenin Blanc)
6 tablespoons (about) sugar, divided
3 whole cloves
2 Turkish bay leaves
1/4 teaspoon ground allspice
1 teaspoon brandy

Steps:

  • Place berries, wine and 4 tablespoons sugar in blender; puree. Pour into medium saucepan. Add cloves, bay leaves, and allspice. Bring to simmer, stirring occasionally. Reduce heat, cover, and simmer 8 minutes.
  • Strain into medium bowl. Discard solids in strainer. Whisk in brandy; sweeten with remaining sugar, if desired. (Can be made 5 days ahead. Cover and chill. Rewhisk before using.)

2 16-ounce bags frozen blackberries
1 cup sugar
2 tablespoons fresh lemon juice, divided
4 teaspoons cornstarch
1/2 teaspoon finely grated lemon peel

Steps:

  • Bring frozen berries and sugar to simmer in heavy large saucepan over medium-high heat, stirring often. Simmer 1 minute. Stir 1 tablespoon lemon juice and cornstarch in small bowl until cornstarch dissolves. Add to berries and stir until thickened, about 1 minute. Mix in remaining 1 tablespoon lemon juice and lemon peel. Cool slightly. Serve warm or at room temperature. DO AHEAD: Sauce can be made up to 3 days ahead. Cover and chill. Rewarm slightly before serving.
