4 Granny Smith apples (7 ounces each), peeled, cored and cut into 1-inch pieces
1/4 cup fresh lemon juice
1 1/2 teaspoons cornstarch
5 tablespoons light brown sugar
1 teaspoon almond extract
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 cup slivered almonds
2 tablespoons sweet butter
3 ounces amaretti cookies

Steps:

  • Place apples in an 8-by-8-by-2-inch glass or ceramic baking dish. Add 3 tablespoons of the lemon juice, and toss to combine.
  • Place the cornstarch in a very small bowl. Stir in 1 tablespoon of the lemon juice. Stir in remaining 2 teaspoons lemon juice, 2 tablespoons of the brown sugar and the almond extract, nutmeg and cloves.
  • Add the cornstarch mixture and almonds to the apples, and toss to combine. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven for 7 minutes, stirring once. Then prick the plastic to release steam.
  • Remove from the oven, uncover and set aside. Preheat the broiler.
  • Place the butter in a 1-cup glass measure. Cook, uncovered, for 1 minute, then remove from the oven.
  • Place the butter, amaretti and remaining brown sugar in a food processor. Process until finely chopped. Sprinkle over the apples, and brown under broiler for about 3 minutes.

Steps:

2 large lemons, zested
120g caster sugar
200g ground almonds
2 medium egg whites
2 tbsp almond liqueur, such as amaretto (optional)
5 tbsp icing sugar, plus extra for dusting

Steps:

  • Rub half the lemon zest into the caster sugar in a bowl using your fingertips until the mixture looks slightly damp. Set 2 tbsp of the lemon sugar aside, then stir the ground almonds into the rest until combined.
  • Pour the egg whites into a large, clean bowl and whisk for 3-5 mins until stiff peaks form. Gradually whisk in the 2 tbsp of reserved lemon sugar to help stabilise the egg.
  • Mix half the beaten egg whites and the almond liqueur (if using) into the dry ingredients until you have a smooth paste, then fold in the remaining egg whites until just incorporated. Chill for 1 hr.
  • Heat the oven to 190C/170C fan/gas 5 and line two large baking trays with baking parchment. Roll tablespoons of the chilled dough into 15 even-sized balls.
  • Fold the remaining lemon zest into the icing sugar, then roll the balls in this and place 2cm apart on the prepared trays. Dust with a little extra plain icing sugar, then bake for 13-15 mins until lightly golden but still soft. Leave to cool on the trays for 10 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight container for up to 10 days. Dust with more icing sugar just before serving.

With such a strong almond-like flavor, it makes sense to think that authentic Italian amaretti cookies are made with almonds. But, in fact, it's apricot kernels that give them their robust, nutlike bite. Whatever the source of their flavor, amaretti cookies have a remarkable affinity for stone fruits such as peaches. I often double (or triple) the recipe for this topping and freeze the leftover in a zippered plastic bag. That way, I have some on hand and can bake up a crisp at a moment's notice.

8 medium peaches (about 3 pounds/1.5 kg)
2 tablespoons (30 g) granulated sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla extract or 1/2 teaspoon almond extract
3/4 cup (110 g) all-purpose flour
1/4 cup (50 g) granulated sugar
1/2 cup (120 g) packed light brown sugar
3/4 cup (90 g) crushed amaretti (about 16 cookies; page 215)
1 teaspoon ground cinnamon
1/2 cup (65 g) almonds, toasted
1/2 cup (4 ounces/115 g) unsalted butter, cut into 1/2-inch (1.5-cm) pieces and chilled

Steps:

  • Preheat the oven to 375°F (190°C).
  • To make the filling, peel, pit, and cut the peaches into 1/2-inch (1.5-cm) slices. In a large bowl, toss the peaches with the 2 tablespoons (30 g) granulated sugar, 1 tablespoon flour, and vanilla or almond extract. Transfer the peaches to a shallow 2-quart (2-liter) baking dish. Set aside.

  • For a MIXED BERRY CRSIP, make the filling using 6 cups (1 3/4 pounds/795 g) mixed berries (raspberries, blackberries, blueberries, and quartered strawberries) with 1/3 cup (65 g) granulated sugar, 2 tablespoons (15 g) all-purpose flour, and 2 teaspoons kirsch or lemon juice.
  • If using store-bought amaretti, which are usually tiny, you'll need a few more than indicated in the recipe to make the right amount of crumbs.
  • Have a sheet of aluminum foil on the lower rack of the oven during baking to catch any overflow of fruit juices.
