This recipe for Serbian stuffed cabbage is known as sarma and is made with a filling of ground beef, pork, and rice and baked on a bed of sauerkraut.

1 (3 -to 4-pound) large head cabbage
1 pound ground chuck
1/2 pound ground pork
1 cup raw rice, rinsed
1 (1.4-ounce) package dehydrated onion soup mix
1 (32-ounce) jar sauerkraut , rinsed and drained
6 smoked ribs or ham hock or other smoked meat
1 (8-ounce) can tomato sauce
1 (10 3/4-ounce) can tomato soup

Steps:

  • Gather the ingredients.
  • Steam the head of cabbage until the outer leaves are limp, then cool slightly and separate the leaves.
  • With a paring knife, remove the tough ribs from the leaves without damaging them. Reserve the tougher outer leaves, but don't use for rolling.
  • In a medium bowl, mix together the ground chuck, ground pork, rice, and onion soup mix.
  • Adding a small amount of water will make the mixture easier to handle.
  • Heap 2 tablespoons of filling onto each steamed, prepared cabbage leaf.
  • Fold the bottom of the cabbage leaf up over the meat.
  • Fold sides to the center and roll away from yourself to encase completely.
  • Repeat until the meat filling is gone.
  • Heat oven to 350 F.
  • Discard the cabbage core and coarsely chop any remaining cabbage except the tough outer leaves you have reserved.
  • Spread the chopped cabbage on the bottom of a large casserole dish or Dutch oven. Add the drained sauerkraut.
  • Layer on the cabbage rolls, seam-side down.
  • Cut the smoked ribs into pieces. Space the ribs or other smoked meat of choice between the cabbage rolls.
  • Cover rolls with reserved tough outer leaves.
  • Mix tomato sauce and soup with enough water to make a liquidy consistency.
  • Pour over rolls until mixture is level with rolls, but not over the top.
  • Cover the casserole dish and bake 1 hour.
  • Then reduce temperature to 325 F and bake for 2 more hours.
  • Let sit 20 to 30 minutes before serving.
  • This dish freezes well.

Steps:

  • Cover cabbage leaves with boiling water.
  • Let stand until leaves are limp.
  • Drain.
  • Mix beef, rice, 1/2 CUP tomato sauce, garlic salt, pepper, onions and green pepper.
  • Put 1/3 cup in each leaf; roll, tucking in the sides.
  • Place, seam side down in baking dish.
  • Mix remaining tomato sauce with the sugar, pour over rolls.
  • Cover and bake at 350* for 45 minutes.
  • Remove from pan, pour juice in saucepan.
  • Mix cornstarch and water; stir into saucepan.

1 cup quick-cooking rice, cooked and cooled
1 pound lean ground beef (90% lean)
1 medium onion, chopped

  • Cook cabbage in boiling water only until leaves fall off head. 1 large head cabbage
2 teaspoons oil
½ cup minced onion
1 (14 ounce) can tomato sauce
1 (14 ounce) can petite diced tomatoes, undrained
¾ cup water
1 tablespoon red wine vinegar
1 teaspoon ground black pepper, divided
1 pound ground sirloin
1 cup uncooked white rice
2 cloves garlic, minced
½ teaspoon ground allspice
1 medium lemon, cut into 6 wedges

  • Bring a large pot of water to a boil. Stir in 4 teaspoons salt. Remove loose, outer leaves from the cabbage and place in the boiling water for 1 minute. Remove from the water and set aside.

3 tablespoons extra-virgin olive oil
2 cups cauliflower rice
1 large head green cabbage
1 pound ground turkey, preferably dark meat
One 14.5-ounce can diced tomatoes, drained
2 tablespoons chopped fresh basil
1 teaspoon Italian seasoning
1 large egg
1 yellow onion, diced
3 tablespoons chopped fresh parsley
4 cloves garlic
One 28-ounce can tomato purée
1/2 teaspoon onion powder

Steps:

  • Bring a large pot of salted water to a boil. Preheat the oven to 350 degrees F.
  • Heat a sauté pan over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the pan. Add the cauliflower rice, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the cauliflower rice has started to soften, about 3 minutes. Turn the heat off and let cool to room temperature.
  • Line a baking sheet with paper towels. Use a paring knife to remove the core from the cabbage. Place the cabbage in the boiling water. Use a rubber spatula to slide under the outer leaf of cabbage and carefully separate it from the head. Use tongs to remove the cabbage leaf to the lined baking sheet. Continue removing leaves in this manner until you have 12. Turn the heat off and reserve the remainder of the cabbage for another use. Set aside the cabbage leaves to cool slightly.
  • Add the ground turkey, cauliflower rice, tomatoes, basil, Italian seasoning, egg, onions and 2 tablespoons parsley to a large bowl. Grate 2 cloves of garlic directly into the bowl and sprinkle the mixture with 1 teaspoon salt and 1/2 teaspoon pepper. Use clean hands to mix the ingredients together until they are well combined. Set aside the mixture.
  • Add the tomato purée, onion powder, remaining 2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 cup water to a 4-cup measuring cup. Grate the remaining 2 cloves of garlic directly into the measuring cup. Use a fork to whisk the mixture until it is well combined. Pour half of the mixture into the base of a 9-by-13-inch baking dish. Set aside the baking dish and reserved sauce.
  • Place one blanched cabbage leaf on a clean work surface. Use a paring knife to cut a V-shaped notch at the base of the cabbage leaf to remove the thick rib. Spoon 1/3 cup meat mixture in the top third of the cabbage leaf. Roll the top of the cabbage leaf over the meat mixture, then fold the sides in, and continue rolling in a continuous motion to create a roll. Place the roll, seam-side down, in the prepared baking dish. Continue the process with the remaining 11 cabbage leaves.
  • Pour the remaining sauce over the cabbage rolls. Cover the baking dish tightly with foil and transfer to the oven to bake until the meat is cooked through, 55 minutes to 1 hour.
  • Garnish with the remaining tablespoon chopped fresh parsley. Serve with the extra sauce spooned over the cabbage rolls.

  • In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

1 large head of cabbage
2 cups white rice, cooked
1 1/2 lbs raw ground sirloin or 1 1/2 lbs ground round
1 onion, diced
2 garlic cloves, minced
2 raw eggs
1 (15 ounce) can tomato sauce
oregano
kosher salt
4 (15 ounce) cans tomato sauce
tomatoes, diced
2 tablespoons brown sugar
tomato juice (optional)

Steps:

  • Core head of cabbage by cutting around the core and removing as much as possible. Boil large pot of water (fill pot only 1/4 or 1/2 full -- when boiling put cabbage into water and cover with top. Leave cabbage in water and every so often as leaves loosen up remove leaves and place in collander in sink to cool -- when all leaves are removed turn off water and throw away -- (if you have any little pieces of cabbage left at end of core, you can save them to place on top of leaves if you would like.
  • In a large bowl mix cooked rice, ground meat, onion, garlic, raw eggs 1/2 can tomato sauce and oregano and a little pinch of kosher salt. Mix well with your hands --.
  • Spray 9 X 13 inch pans with Pam. Take cabbage leaves and fill with 1/4 to 1/2 cup meat mixture (depending on how big hour leaves are). Place with seam side down in pans -- Turn oven on 350 degrees. Make up sauce (depending on how many rolls you get from your cabbage and how much sauce you want,you can use between 4 to 6 cans of diced or stewed tomatoes for your sauce), if you like cabbage rolls to have more sauce, you can add a little tomato juice to your sauce. Pour sauce over top of rolls. Sprinkle with kosher salt over top of rolls.
  • Bake uncovered to 2 1/2 hours or until browned on top, you may need to add a tomato juice to them once in a while so they do not dry out --.
  • Freezes well.

Cabbage Rolls
1 large head green cabbage, about 2 to 21⁄4 pounds
2 pounds ground beef
2 eggs (not necessary, you can leave them out, but they bind and make the meat fluffier)
1 medium onion, grated or minced
2 garlic cloves, minced
2 teaspoons salt
1 teaspoon black pepper
1⁄2 cup uncooked white rice (I like using long-grain) * Tomato Sauce **
2 tablespoons butter or vegetable oil (I use 1 tablespoon of each)
2 cloves garlic, finely chopped
1 medium onion, chopped (medium dice)
2 15-ounce cans tomato sauce or one 32-ounce can whole tomatoes, pulsed in a food processor with juice until pureed.
juice of one lemon or 2 tablespoons (or more to taste) apple cider vinegar
Salt and pepper to taste
1⁄2 cup golden raisins (optional) Chopped parsley, for garnish

Steps:

  • 1. Fill a large pot with water and bring it to a rolling boil. When the water comes to a boil, fill a large bowl with ice water. Cut out as much of the core as you can from the bottom of the cabbage, then drop the whole, cored head into the boiling water for 3 to 4 minutes. Once the leaves separate and are pliable, immediately remove and drop the blanched leaves that separated (keep the pot of water boiling) in the ice water. Once cooled down, remove and pat the leaves dry. Repeat with any leaves still attached to the head and not pliable, until you've gotten all the leaves off the head, and they are all soft and pliable.Alternatively, If you've got time on your hands, you can freeze the wrapped head of cabbage for two days then defrost. Cut out as much of the core as you can, then wrap tightly and freeze. When defrosted, the leaves will peel off easily and be soft enough to roll.Here's some other ideas from readers, although I have yet to try them so I cannot confirm that they work. 1. Place the cabbage in the microwave for 6 minutes. The core will slip right out and the leaves will be perfect for rolling. 2. Cut out the core, fill the hole with water, then tie it up tightly in a microwave safe plastic bag. Microwave it for 6 minutes, then remove it from the microwave and let it steam in the bag for about a half hour. 2. Set aside about 16 of the largest leaves (these will be your cabbage rolls. If you can only get 14 leaves, it's fine) and slice off any thick parts of the vein on each of them, or just cut out the thick vein since that part will be covered once the cabbage leaf is rolled. Chop some of the remaining cabbage leaves to make 1 cup of chopped cabbage, and reserve. 3. Make the sauce (recipe below). Set aside to let cool. IMPORTANT: Taste the sauce as you add the brown sugar, anywhere from 2 tablespoons to 3⁄4 cup as stated in the ingredient list above, starting with only 2 tablespoons so you sweeten it to YOUR preference. Some like it very sweet and sour, and some do not. 4. In a large bowl, mix the ground beef with the eggs, grated onion, chopped garlic, salt, pepper, and rice. (If you use cooked rice, you can test the seasoning of the meat mixture to your liking by frying up or microwaving a piece of it and tasting, if desired). Divide the meat mixture into sixteen equal pieces, or 14 equal pieces, about 2 to 3 oz each, depending on whether you have 16 or 14 cabbage leaves. Using slightly moistened hands (or not, since it rarely sticks to my hands), form the pieces into thick cylinders. Place a cylinder of filling near the bottom of a cabbage leaf (if the vein in the leaf is really thick, shave it down with a knife before placing the beef on it, being careful not to cut a big hole through the leaf itself OR, cut the thick vein out completely in a narrow V. When you roll the cabbage, that V will be covered sufficiently, as mentioned above). 5. Roll the meat filled cabbage leaf up, folding both sides over the filling, (like you see in the above photos) and finish rolling to enclose the filling, like a burrito. Continue, filling and rolling all the cabbage leaves. Line the bottom of a 13 x 9 roasting pan or glass dish with a layer of sauce. Place cabbage rolls, seam side down, on top of sauce. 6. Top cabbage rolls with remaining sauce then cover the whole pan with tin foil. Bake for 2 hours in a preheated 350 F oven. Sauce Directions 1. Over medium heat, melt the butter and/or oil in a heavy, non-reactive saucepan. Sauté the second onion until soft and golden. Add the garlic and saute for 2 more minutes, then add the reserved 1 cup chopped cabbage and sauté for about 30 seconds to 1 minute more. 2. Add the tomato sauce, lemon juice, brown sugar, salt and pepper to taste, and stir to combine. Increase the heat until it comes to a boil, then lower it and simmer for 5 minutes. Add raisins now, if using. Set aside to cool while making the cabbage rolls. notes: * You can cook the rice before adding it to the meat mixture, if desired (just follow the rice manufacturer's directions for cooking 1⁄2 cup of rice, which should give you about 11⁄2 cups cooked rice), but my grandmother used uncooked rice, and I've never ended up with even one uncooked grain when my cabbage rolls are done. The rice always cooks to perfection. Either way, it's up to you! ** Sauce can be made 2 days ahead; just cover and chill. Also, if you like a lot of sauce, just double or add another half of the original recipe.

1 clove minced garlic

1 (7 1/2 ounce) can diced tomatoes
1/2 cup long grain rice
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1/4 teaspoon pepper
1 (15 ounce) can tomato sauce
1 teaspoon sugar
1/2 teaspoon dried basil
1/8 teaspoon salt
1 tablespoon grated parmesan cheese

Steps:

  • Immerse 4 cabbage leaves at a time into boiling water for 3 minutes or until limp.
  • Drain on paper towels.
  • In large skillet cook meat, onions, and garlic until meat is browned.
  • Drain and stir in water, undrained tomatoes, uncooked rice, Worcestershire sauce, 1 teaspoon oregano, and pepper.
  • Bring to a boil, reduce heat, cover and simmer 20 minutes or until the rice is tender.
  • Place 1/3 cup meat mixture onto each cabbage leaf and fold in sides.
  • Roll up starting at an unfolded edge and make sure folded sides are included in roll.
  • In a small bowl mix tomato sauce, sugar, basil, and salt.
  • Pour half of it on the bottom of a 9x13 baking dish.
