AMISH FLUFFY HOMEMADE BISCUITS



Amish Fluffy Homemade Biscuits image

These biscuits are easy to make and so soft and fluffy. A great biscuit to go with your sausage gravy or to serve with any meal. They are so much better than anything you'll buy at the store.

Number Of Ingredients 7

2 c. flour (I use all purpose)
1/4 tsp. baking soda
1 Tbs. baking powder
1 tsp. salt
1 tsp. sugar
6 Tbs. cold butter
1 c. buttermilk

Steps:

  • Mix dry ingredients in large bowl.
  • Slice butter into chunks and cut in until crumbly.
  • Add buttermilk.
  • Gently mix until everything is moistened and combined. Do not overmix.
  • Place dough onto a floured surface, and roll or pat into a circle about 1 inch thick.
  • Cut circles with biscuit cutter or cup.
  • Place on greased cookie sheet with the sides touching.
  • Bake at 450° for 11 - 13 minutes.

When I got married, I made sure to copy this recipe of my mom's. I'm glad I did...it's become one of my husband's favorites. We especially like to eat them smothered with homemade country sausage gravy.

Number Of Ingredients 8

2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1/2 cup shortening
1 egg
2/3 cup milk

Steps:

  • In a bowl, combine flour, sugar, baking powder, salt and cream of tartar. Cut in shortening until mixture resembles fine crumbs. In a small bowl, beat egg and milk; stir into dry ingredients just until moistened. Turn onto a lightly floured surface; roll to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Bake at 400° for 12-15 minutes or until golden brown.

1 cup solid vegetable shortening, cold

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large mixing bowl, combine the flour, baking powder and salt. Mix well. Add 2 tablespoons of the cold butter and the cold shortening and work it into the dry ingredients, using your hands, until the mixture resembles coarse crumbs. Stir in the milk. The dough will be sticky.
  • Dust your work surface with some flour. Turn the dough onto the floured surface. Gently fold each side toward the center. Pick up the dough and dust the work surface with additional flour. Return the dough to the floured surface and fold each side towards the center again. Turn the dough over and press it out to 1-inch thickness. Cut the biscuits, straight down, do not twist the cutter, with a 2 1/4-inch round cookie cutter. Melt the remaining 2 tablespoons of butter and add to a 10-inch round cake pan. Place the biscuits in the pan, turning once (to coat both sides with butter), about 1/4-inch apart. Let the biscuits rest for 15 minutes before baking. Bake until golden brown, about 15 minutes.

  • Mix well.
  • Add starter to dry ingredients and mix until dough pulls away from sides of bowl.
  • Transfer to a lightly floured surface and roll until 1/2 inch thick.
  • Using a 3 inch circle cutter or floured glass cut out biscuits and place on a lightly grease cookie sheet. Brush top of biscuits with melted butter.
  • Cover and let rise 30 minutes.
  • Bake in a preheated 350 degree oven for 15 - 20 minutes.

3 cups flour
1/2 teaspoon salt
3/4 teaspoon cream of tartar
1 tablespoon sugar
4 teaspoons baking powder
1 cup butter
1 egg

Steps:

  • Pre-heat the oven to 425 degrees.
  • While oven is pre-heating, place ¼ cup butter in a 7x11 baking dish or 10" round skillet and place in oven to melt. (a well-seasoned cast-iron skillet really shines at creating the crispy edges, or use a glass baking dish for the prettiest job of browning).
  • While the pan is in the oven blend flour, salt, cream of tartar, sugar, baking powder, and then cut in the remaining butter.
  • Lightly beat 1 egg in 1 cup of milk before stirring it in the flour mixture.
  • Remove the buttered pan from oven.
  • Butter should be melted and just slightly browned.
  • Do not knead the biscuits, but instead use a large cookie/ ice cream scoop to immediately scoop out balls of dough into the buttered pan.
  • Biscuits should be nestled together somewhat tightly.
  • Quickly place back into oven and bake for 25 minutes or until the tops are lightly brown.
