HOMEMADE HERBED PASTA WITH FETA, LEMON AND PINE NUTS

- For the pasta: Sift the flours into a pile on a clean work surface. Create a 6-inch well in the middle. Add the parsley, olive oil, eggs and yolks, 1 teaspoon salt and 2 teaspoons pepper to the well. Whisk gently with a fork. When the center is combined, begin to incorporate the flours into the eggs a little at a time. Once you can no longer use your fork, use your hands to knead the dough. When the dough is shaggy, knead the dough until smooth and elastic, about 10 minutes. Divide the dough into 2. Cover with plastic wrap and let sit for 30 minutes.
- Roll out the dough, using semolina flour as needed. The pasta should be about 2 centimeters thick. Fold the pasta in half lengthwise, then in half again. Slice into 3/4-inch wide ribbons, or desired width. Shake out the noodles and hold in nests.
- Bring a large pot of water to a boil and salt it ferociously. Cook the pasta to al dente, about 3 minutes. Drain the pasta, reserving 2 cups pasta water.
- For the feta, lemon and pine nut sauce: Heat the olive oil in a large skillet over medium heat until a drop of water sizzles when flicked across the surface. Add the pine nuts and garlic and cook, stirring, until lightly browned, about 2 minutes. Add the preserved lemon and 1 cup mint and cook, stirring, for another 1 to 2 minutes. Add 1 cup of the reserved pasta water. Allow it to cook down and reduce for another minute. Add the cooked pasta to the skillet, reduce the heat to low and toss the pasta to coat it evenly in the mixture. Add more pasta water if it needs a bit more sauce. Add about 20 turns of black pepper and top with the feta, a few pinches of crushed red pepper and the remaining 1 cup mint. Serve immediately and enjoy.
ANGEL HAIR PASTA WITH FETA AND PINE NUTS

- mise en place ~ gather ingredient
- warm plates
- bring water to boil - add salt
- toast pine nuts - set aside
- coarsely crumble feta - set aside
- shave parmesan - set aside
- dice and deseed tomato - set aside
- mince garlic and shallot - set aside
- measure out parmesan - set aside
- chiffonade parsley and basil - set aside
- When pot of water it is boiling -
- Add oil to a skillet, when it shimmers, add shallots, just to soften.
- Add garlic - just until fragrant about 20 seconds - careful not to burn.
- Drop angel hair in the pot of salted boiling water for 1 minute to soften.
- Add diced tomatoes to skillet - just to warm through - about 45 seconds
- Off heat - Add in parsley, basil, crumbled feta, salt, and pepper - stir gently.
- Add a little pasta water if needed to loosen dish.
- Remove angel hair from boiling water; drop into skillet toss gently.
- Taste for salt - (remember feta can be salty)
- Place on a warmed plate - when plating use tongs; twist pasta into a mound - this will help hold the heat.
- Top with toasted pine nuts and shaved Parmesan.

Steps:
- Cook angle hair pasta in boiling water for 3 to 4 minutes, be careful not to over cook, Keep Warm.
- Heat olive oil to a sizzle in a skillet; when oil is hot, remove the saucepan from the flame and add the roma tomatoes, green onions, garlic, basil, salt, pepper and tomato juice to the skillet, then place back on flame; Mix well too heat through approximately 30 seconds, remove from heat.
- Add cooked drained pasta to the hot skillet, spreading it over the entire veggie mixture; add feta cheese to the pasta and gently fold all ingredients until the cheese is melted.
- With tongs pull the pasta out of the skillet and mound high into bowl, with a rubber spatula, scrape the remaining ingredients on top.
- Sprinkle toasted pine nuts, feta cheese and fresh Parmesan cheese all over the pasta, sprinkle with parsley, serve.

- Bring a large stockpot of water to a boil.
- In a large saute pan, heat the olive oil. Over medium-high heat, saute the broccoli florets, stirring as necessary, 2 to 3 minutes. Season lightly with salt and pepper. Transfer to a bowl and reserve until needed.
- Deglaze the pan with the stock, and add the thyme leaves. Bring to a boil and reduce by half. Add the butter and the goat cheese and stir together until the cheese melts. Keep warm.
- Meanwhile, add a little salt to the pot of boiling water and cook the pasta until it is al dente, about 1 minute for fresh pasta. (Cook packaged pasta according to the directions on the package). Drain the pasta well and add to the reserved broccoli in the saute pan. Cook until heated through, about 2 minutes. Season with salt and pepper, to taste.
- To serve, divide the pasta among 4 heated plates. Sprinkle with toasted pine nuts and garnish with a sprig of thyme.

- In a 6- to 8-quart pan over high heat, bring about 4 quarts water to a boil; add angel hair and cook, stirring occasionally, just until tender to bite, 3 to 4 minutes.
