ASPARAGUS WITH SALSA VERDE

Asparagus with Salsa Verde image

The scarlet onions and fine slivers of orange peel in this green sauce look and taste like spring. The sauce can be made ahead of time, the orange juice and vinegar added at the very end so that the greens remain bright and snappy. This sauce is also good over grilled asparagus. Serve at room temperature or slightly chilled.

Provided by Deborah Madison

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds asparagus
1 quart Water
Sea salt
1 red onion, small
rice vinegar, Or apple cider vinegar
1/4 cup parsley, finely-chopped
1 tablespoon capers, rinsed
1 orange
5 tablespoons extra-virgin olive oil
1/2 teaspoon Dijon mustard
1 tablespoon orange juice
3 teaspoons tarragon vinegar
Pepper, freshly ground

Steps:

  • Trim the asparagus by snapping off the woody, tough ends, and peel thick asparagus. It will look and taste better. Bring a quart or two of water to a boil in a wide pan, generously salt to taste.
  • FOR THE PICKLED RED ONION: While the water is coming to a boil, pickle the red onion and make the sauce. To make the pickled red onion, peel a whole, small red onion, then slice it thinly into rounds. Separate the rounds and put them in a bowl, then cover with a white wine or rice wine vinegar and a few pinches salt. Toss them with your finger so that they are all coated, then refrigerate until you need them. It takes only about 10 to 15 minutes for the color to blossom.
  • FOR THE ORANGE ZEST: Bring a small saucepan of water to a boil. Zest a few strips of orange peel in wide bands. Julienne the bands into thin strips and blanch in boiling water for 10 to 15 seconds. Drain and chop half of the orange rinds into a fine dice. Set aside.
  • Add the trimmed, peeled (if necessary) asparagus to the wide pan of salted boiling water, and cook until it is tender and bright green, about 5 minutes for thin asparagus, 7 to 8 minutes if it is thick. Set the cooked asparagus on a towel to drain briefly.
  • FOR THE SAUCE: Meanwhile, combine the chopped parsley and capers in a bowl. Mince half the slivered orange zest and add it to the bowl along with half of the pickled onion, minced. Stir in the mustard, orange juice, vinegar, and olive oil. Season with salt and pepper.
  • TO FINISH: Drain the asparagus. Lay the asparagus on a platter. Ladle the sauce over the stems and garnish with the remaining slivers of orange peel and pickled onion.Suggestions: You can vary the taste by using aromatic sesame or peanut oils in place of the olive oil. Both flavors go well with asparagus and also harmonize with orange. Keep the parsley or use cilantro instead if you're wild for that herb. Other spring herbs to consider including are tarragon, lovage, chives and chervil and all are excellent with asparagus.

Categories     Vegetable     Freeze/Chill     Vegetarian

Yield Serves 2 as a dinner first course or light lunch.

Number Of Ingredients 9

1/2 small onion
2 fresh tomatillos, husked OR 2 small-medium ripe green tomatoes
1 Japanese cucumber
8 medium fresh green asparagus spears (woody bottoms trimmed away)
1 cup vegetable stock
2 cloves of garlic
2 sprigs of Italian parsley
2 sprigs of cilantro
croutons as desired

Steps:

  • 1. Slice the onion and soak in some cool water to take away the bite. 2. Quarter and seed the tomatillos or tomatoes. Hold the cucumber under running water and scrub the skin clean with your thumbs. Cut into 1/2 in lengths. Cut the asparagus tips off and cut the rest of the asparagus into 1 inch lengths. 3. In a small saucepan, bring the stock to a boil. Add the asparagus, except for the tips, and parboil for about 1 minute. Remove the asparagus from the stock and plunge into ice water, then set aside on a paper towel. Add the asparagus tips to the boiling stock and parboil 30 seconds, plunge into ice water and set aside on paper towels. 4. Drain the onion and pat dry. Put the onion, tomatillos or tomatoes, cucumber, aparagus (except tips), garlic, parsley and cilantro into a food processor, pulse until you get a rough puree. Add the stock into the mixture a little at a time, pulsing as you do, until you reach the desired thinness (It should still be fairly thick). 5. Divide the mixture into serving bowls, cover with plastic wrap, and place in the refrigerator to chill for about an hour. 6. Remove the bowls from the refrigerator, remove the plastic, and sprinkle with your favorite croutons as desired. Take the reserved asparagus tips and stand them point up in the gazpacho. Serve.

ASPARAGUS WITH SALSA VERDE AND SCARLET ONIONS

Asparagus With Salsa Verde and Scarlet Onions image

Provided by Julia Moskin

Categories     side dish

Time 25m

Yield 2 to 4 servings

Number Of Ingredients 12

1 small red onion, sliced into thin rounds
A few tablespoons white wine vinegar or champagne vinegar, more to taste
Sea salt
1 1/2 pounds asparagus
1/4 cup chopped parsley
2 tablespoons chopped tarragon
1 tablespoon capers, rinsed
1 wide band orange zest, finely slivered and blanched for 10 seconds
4 to 5 tablespoons olive oil
1/2 teaspoon Dijon mustard
1 tablespoon orange juice
Black pepper

Steps:

  • Separate sliced onion rings and toss with vinegar and a pinch of salt. Set aside in refrigerator.
  • If asparagus spears are thick, peel stalks and cut off tough stem ends. If they are thin, snap off bottom of each stalk where it breaks easily and trim ends. Simmer asparagus with water to cover until bright green but still a little firm, about 3 minutes for thin spears, 5 minutes or longer for fat. They can be a bit underdone. Remove to a towel to dry; asparagus will finish cooking as it sits.
  • Put parsley, tarragon and capers in a bowl. Finely dice half the orange zest, then dice half the pickled onion. Add diced zest and onion to bowl. Stir in oil, mustard, orange juice and vinegar to taste. Season with salt and pepper.
  • Lay asparagus on a platter. Ladle sauce over stems and tips and finish with remaining slivered orange zest and pickled onion rings. Serve at room temperature or slightly chilled.

GRILLED ASPARAGUS WITH GAZPACHO VINAIGRETTE

Grilled Asparagus With Gazpacho Vinaigrette image

A recipe from the famous Hotel Galvez in Galveston, Texas. And now a little history: After the Great Storm of 1900-when a massive hurricane devastated Galveston, Texas - a group of prominent businessmen, dedicated to the economic recovery of the island, knew there was a desperate need of a luxury beachfront hotel to fill the void that was left when the Beach Hotel burned down in 1898. At a cost of more than $1 million, the St. Louis firm of Mauran & Russell designed and built Hotel Galvez - a six-story Spanish Colonial Revival building named for Bernardo de Galvez, the Spanish colonial governor who chartered the Texas Gulf Coast and for whom the city is named. When it opened in 1911, the luxury hotel offered 275 elegant guestrooms, some with private baths. In 1912, Hotel Monthly billed it as one of the "most richly furnished seaside hotels in America". The public areas featured a barbershop, candy shop, drugstore, soda fountain and Gentleman's Bar & Grille. Roller chairs lined the front of the hotel for those wanting to take a trip along the famed Seawall Boulevard. In 1918, Hotel Galvez hosted more than 400 guests each day, with room rates starting at $2 per night. In the 1920s, the first bathing beauty contests in the nation were held at the hotel, with future movie stars Joan Blondell and Dorothy Lamour as participants. During the '20s and '30s, Hotel Galvez became known as the "Playground of the Southwest", as hundreds of celebrities and dignitaries stayed there. Notable guests included Presidents Franklin Roosevelt, Dwight Eisenhower, Lyndon Johnson and John Kennedy, as well as General Douglas MacArthur, Phil Harris, Alice Faye, Frank Sinatra, Jimmy Stewart and Howard Hughes. On October 3, 1940, W.L. Moody Jr. acquired Hotel Galvez. During World War II, the hotel served as a living and working facility for the U.S. Coast Guard. In 1950, Moody's hotel chain, National Affiliated Hotels, added a motel on the east side of the main building. In 1965, the owners spent more than $1 million to refurbish the hotel. Another million-dollar-plus renovation was undertaken by the next owners, Harvey O. McCarthy and Dr. Leon Bromberg, who acquired the hotel in 1971. Hotel Galvez changed hands again in 1978, when it was purchased by well-known heart surgeon Denton Cooley, who had a long-standing sentimental attachment to it. Not only had he stayed there as a child and medical student, but his parents spent their wedding night at the hotel in 1916. Cooley sold half of his interest to Archie Bennett Jr., president of the Mariner Corporation. In 1980, the partners spent one year and more than $12 million renovating the hotel, after which it was named to the National Register of Historic Places. The most recent renovation was brought about through the efforts of Galveston preservationists and developers George and Cynthia Mitchell, who attained ownership of Hotel Galvez in March of 1993. Since June 1, 1998, Wyndham International as Wyndham Historic Hotels has managed the hotel. Today, Hotel Galvez stands proudly as "Queen of the Gulf", fully restored to its original glamour while continuing to offer gracious hospitality, old-world charm and new-world conveniences. Adapted from the cookbook Recipes from Historic America by Linda and Steve Bauer.

GAZPACHO VERDE

Gazpacho Verde image

Based on a recipe I discovered in The Moosewood Restaurant Kitchen Garden by David Hirsch. Refreshing as the tomato-based version, this one takes advantage of produce available earlier in the season. Other greens, such as arugula, and herbs can be included. The original recipe calls for fresh dill, but I did not have any in the garden. If you don't have nasturtiums, add a couple of fresh, red radishes instead.

Categories     Spinach

Time 21m

Yield 4 serving(s)

Number Of Ingredients 16

1 quart water
4 ounces fresh spinach, washed and dried in a spinner
3 scallions, trimmed and roughly chopped

1 cucumber, roughly chopped
1 tablespoon extra virgin olive oil

2 tablespoons fresh lime juice

1 scallion, white and green parts, finely chopped
