1/2 cup granulated white sugar
1/2 cup packed brown sugar
1/2 cup heavy whipping cream
1/2 cup (1 stick) butter, (cut into pieces)
1/4 cup rum
1 cup (2 sticks) butter, (at room temperature)
1 cup granulated white sugar
2 large eggs, (well beaten)
1 1/2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
3 medium apples ((peeled, cored and chopped))
3/4 cup coarsely chopped pecans ((optional))

Steps:

  • Combine the sugars and cream in the top part of a double boiler and cook over simmering water, stirring occasionally, for 1 1/2 hours. Add the butter and cook another 30 minutes. (The mixture may look curdled but will smooth out when beaten). Remove from heat, add the rum and beat until smooth.
  • Preheat the oven to 350°F. Spray a 10-inch pie plate or 9-inch square baking pan with nonstick spray. Use an electric mixer to combine the butter and sugar until light and fluffy; beat in the eggs and vanilla until well mixed. Whisk together the flour, cinnamon, nutmeg, soda and salt; blend into the butter mixture. Stir in the apples and pecans (if using). Spoon the the batter evenly into the prepared pan and bake about 45 minutes or until golden brown. Serve topped with the warm sauce.

2 cups sugar
2 large eggs
2 cups (about 2 apples) grated unpeeled Granny Smith apple (see Cook's Note)
2 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/4 teaspoon kosher salt
1 cup chopped walnuts (optional)
Homemade Caramel Sauce, recipe follows
Whipped cream or ice cream (optional)
1 cup packed light brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch of kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Beat the butter with a mixer at medium speed until fluffy; gradually add the sugar, beating well. Add the eggs, 1 at a time, beating just until blended after each addition. Add the apple, beating just until blended.
  • Whisk together the flour, baking soda, cinnamon, cloves and salt; add to the butter mixture, and mix just until blended. Stir in the walnuts, if desired.
  • Pour into a lightly greased 13-by-9-inch baking pan. Bake 30 to 35 minutes or just until a wooden pick inserted into the center comes out clean. Let cool on a wire rack 10 minutes. Serve with Homemade Caramel Sauce and, if desired, whipped cream or ice cream.
  • Cook the sugar, half-and-half, butter, and salt in a small saucepan over medium-low for 5 to 7 minutes, whisking slowly, until thickened. Remove from the heat, and let cool slightly before serving.
  • Keep refrigerated up to one week after you make it. Just be sure to warm it up before serving.

  • Peel, core, and grate the apples.

1 21 oz can Apple Pie Filling
1 egg
1 cup flour
1 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
2 Tablespoons flour
1 cup water
1/2 cup butter

Steps:

  • Combine diced apples and sugar; let stand until sugar is dissolved into a syrup.
  • Stir beaten egg into apples and syrup.

It's up to your taste if you want to add the pecans or not to the sauce. I like it both ways.

1/2 lb butter, unsalted, at room temperature (2 sticks)
1 cup sugar
2 large eggs, at room temperature
1 1/2 cups all-purpose flour
1/4 teaspoon ground nutmeg

1/4 teaspoon salt
3 medium tart apples, peeled, cored and finely chopped (about 1 1/4 pounds)
3/4 cup chopped pecans (about 3 ounces)

1 quart vanilla ice cream, for serving
4 tablespoons unsalted butter
1/2 cup pecan halves
1 cup firmly packed dark brown sugar
1 cup whipping cream

  • Preheat oven to 350 degrees Fahrenheit. Grease and lightly flour a 9 x 2" cake pan.
  • Beat butter and sugar in a large bowl with an electric mixer on high speed until light and fluffy, about 2 minutes.   • NOTE: the sauce maybe refrigerated for several days. Reheat before serving.
  • To Serve: place a wedge of warm cake on a dessert plate. Serve with a scoop of vanilla ice cream and spoon hot Caramel Pecan Sauce over all.

5 medium apples to yield 2 1/2 cups chopped (use firm cooking apples like Northern Spy or McIntosh)
1/2 cup butter at room temperature
1 cup granulated sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 scant teaspoon ground nutmeg
1 cup all-purpose flour
1/2 cup butter
1 cup light brown sugar

1/2 cup evaporated milk
Sweetened whipped cream and fresh unpeeled apple slices

Steps:

  • To make the cake, preheat the oven to 350 degrees. Place the pecans in the workbowl of a food processor and process until fine. Set aside. Peel, core and quarter the apples and place them in the workbowl of the processor and process until they are in medium-coarse shards, about the size of almonds. Set aside.
  • Place the butter in a large mixer bowl, add the sugar and beat until fluffy. Add the egg and beat until blended. Add the soda, salt, cinnamon, nutmeg and mix quickly. Add the flour and just blend, then the apples and nuts.
  • Pour the mixture into a greased 9-inch-round cake pan and bake for 30 minutes or until the top springs back when touched with a finger. Cool slightly. Center may sink somewhat.

  • Dump the canned apples into the baking dish and spread out.

3/4 tsp sea salt or table salt
2 tsp ground cinnamon

4 cups (468g) peeled, cored and 1/4-inch diced apples*
1 Tbsp fresh lemon juice
1 cup (210g) granulated sugar
1/4 cup (58g) packed light-brown sugar

1/2 cup chopped pecans, (for topping (optional))
1/2 cup (113g) unsalted butter, diced into 1 Tbsp pieces

  • For the apple cake: Preheat oven to 350 degrees. Spray a 13 by 8-inch baking dish with non-stick cooking spray.
  • In a medium mixing bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves for 20 seconds, set aside. In a separate medium mixing bowl toss apple cubes with lemon juice, set aside.

  • Bake in preheated oven until toothpick inserted into center comes out free of batter (a moist crumb is fine), about 33 - 38 minutes (prepare topping around last 5 - 10 minutes of baking so they'll both be served warm).
  • Let cool about 5 minutes then cut into squares and serve warm topping each slice with sauce and optional pecans.
  • For the sauce: In a medium saucepan combine butter, brown sugar, milk and salt (you can add a little extra if you like more of a salted caramel/toffee flavor).
  • Bring mixture to a boil over medium heat, stirring occasionally. Allow to boil 1 1/2 minutes, stirring occasionally.
  • Let sauce cool slightly. Serve warm over warm cake.

  • 5. Mix in the flour, baking soda, salt, cinnamon, and nutmeg, mixing until combined. Stir in the apples and nuts. ( Mixture will be thick).
  • 6. Spoon the apple mixture into the lightly oiled cake pan. Bake for 30-35 minutes.
  • 7. Prepare Caramel Sauce:
  • 8. In a small saucepan, melt the butter, brown sugar, and salt. Bring to a boil; stirring with a whisk.
  • 9. Remove from heat and whisk in the vanilla and evaporated milk.
  • 10. To serve, ladle 1-2 tablespoons of the hot Caramel sauce onto serving plates. Place a wedge of cake on top of Caramel sauce. Drizzle a little more sauce over the cake. Garnish with a dollop of whipped cream. Enjoy!
  • 11. Note: The sauce can be made ahead of time and then reheated in the microwave. You can also spoon out a tablespoon or 2 on a saucer, and reheat that amount up for a single serving. The cake should be served warm, or at least room temperature for the best flavor. :)

Nonstick vegetable oil spray
3 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 pound Golden Delicious apples, peeled, cored, cut into 1/3-inch cubes
2 cups (packed) golden brown sugar
1 1/2 cups vegetable oil
1 cup sugar
3 large eggs
4 teaspoons vanilla extract
3/4 cup pecans, coarsely chopped (about 3 1/2 ounces)
1/2 cup (1 stick) unsalted butter
1/4 cup whole milk

Steps:

  • Preheat oven to 350°F. Spray 12-cup Bundt pan with nonstick spray. Sift flour, cinnamon, baking soda, and salt into medium bowl. Transfer 3 tablespoons flour mixture to Bundt pan and tilt to coat. Set pan aside. Place apples and 2 tablespoons flour mixture in another medium bowl; toss to coat apples. Combine 1 cup brown sugar, vegetable oil, 1 cup sugar, eggs, and 3 teaspoons vanilla in large bowl. Using electric mixer, beat until mixture is thick, about 4 minutes. Gradually beat in remaining flour mixture. Fold apple mixture and pecans into batter; transfer to prepared Bundt pan.
  • Bake cake until tester inserted near center comes out clean, about 1 hour. Transfer cake in pan to rack. Let stand while making caramel.
  • Melt butter in heavy small skillet over medium heat. Whisk in remaining 1 cup brown sugar, then milk. Continue to whisk until topping is smooth and blended and comes to boil, about 5 minutes. Whisk in remaining 1 teaspoon vanilla. Spoon 1/4 cup hot caramel topping over warm cake in pan. Let stand until topping is absorbed into cake, about 15 minutes. Turn cake out onto platter. Pour remaining warm topping over cake. Let stand until cool, at least 1 hour. (Can be made 1 day ahead. Cover with cake dome. Let stand at room temperature.)
