1/2 tsp salt
1 tsp baking powder
1/2 cup firmly packed light brown sugar

1/2 cup unsalted butter, melted and cooled
2 apples, chopped
1/4 tsp cinnamon

Steps:

  • Preheat oven to 400 degrees.
  • Mix dry ingredients until well combined. Add in sugar and wet ingredients, stirring to incorporate.
  • Fold in 1 chopped apple.
  • Spray a muffin tin with nonstick cooking spray and divide batter between muffin cups. Top with the other chopped apple and cinnamon.
  • Bake for 20 minutes or until a toothpick inserted in the muffins comes out clean.

Steps:

  • Preheat oven to 350°F. Line a muffin pan with liners and set aside.
  • Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside.
  • In a large bowl, beat the eggs with a whisk until foamy and pale. Add the Greek Yogurt, honey and vanilla extract and whisk until the mixture is thick and well combined.
  • Fold in the rolled oats, baking powder, salt, cinnamon, and the grated apple. Pour in the almond milk and continue mixing until everything is well incorporated.
  • Pour the batter into 12 muffin tin cups lined with cupcake liners. Top with your choice of toppings.
  • Bake for 35-40 minutes until the muffins have set and just started to turn golden brown.

Steps:
