A yummy, healthier, gluten free version of a family favorite! **I've also made this with fresh peaches - just add a teeny bit less water and a couple of dashes of nutmeg and cook a little less - YUMMY!!**

4 cups apples, peeled & sliced, such as Granny Smiths
1 tablespoon sugar
2 tablespoons water
1 teaspoon cornstarch
1 teaspoon ground cinnamon
1 pinch nutmeg
1/2 cup almond flour
1/2 cup certified gluten free old fashioned oats
1/4 cup brown sugar
1 teaspoon cinnamon
2 tablespoons softened unsalted butter

Steps:

  • Preheat the oven to 350. Coat a pie dish with cooking spray. In a large bowl, toss together the apples, sugar, water, cornstarch, 1 teaspoons cinnamon, and nutmeg until well combined. Set aside.
  • Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, and butter until crumbly.
  • Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.

6 medium or large granny smith apples ((pink lady, honey crisp, and other crisp apples also work well))
1 tablespoon pure maple syrup
3 tablespoons water
2 teaspoons cinnamon
1 cup old-fashioned or quick oats
1/2 cup almond flour or almond meal
1/2 cup chopped almonds, walnuts, or pecans
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup melted coconut oil or butter
1/4 cup pure maple syrup

Steps:

  • Preheat oven to 350 degrees. Peel apples and dice into cubes of approximately equal size.
  • In a large bowl, toss the apples with maple syrup, water, and cinnamon. Pour apples into greased 9x9 or 8x8 inch baking dish.
  • In the same (now empty) bowl, add oats, almond flour, nuts, cinnamon, salt, coconut oil or butter, and maple syrup. Stir crumble topping together and pour into baking dish on top of apples.
  • Bake at 350 degrees for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent over-browning. Serve warm with vanilla ice cream or whipped cream!

2/3 cup cold water

1 teaspoon baking soda
3/4 cup cold butter, cubed
5 cups sliced peeled tart apples (about 5 medium)
1/2 cup coarsely chopped salted roasted almonds

Steps:

  • Preheat oven to 350°. In a small saucepan, bring syrup to a boil; cook 3-5 minutes or until liquid is reduced by half., In a small bowl, mix sugar and cornstarch; whisk in water until smooth. Whisk into reduced syrup. Return to a boil; cook and stir 1-2 minutes or until thickened. Whisk in 2 tablespoons butter until blended. Remove from heat., In a large bowl, mix oats, flour, brown sugar, almond flour and baking soda; cut in cold butter until crumbly. Reserve 1-1/3 cups mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. baking pan. Arrange apples over top; drizzle with syrup mixture., Stir almonds into reserved crumb mixture; sprinkle over top. 1 cup (112 g) blanched almond flour
1/4 teaspoon ground cinnamon
1/8 teaspoon fine sea salt (optional, but highly recommended)

Steps:

  • Preheat oven to 350F (175C). Line a cookie sheet with parchment paper.
  • If leaving skin on, scrub apple well. Otherwise, peel the apple.
  • Core and cut apple into chunks; process in a food processor, stopping to scrape down sides, until pureed (mixture will look like raw apple sauce). Measure 1/2 cup (125 mL) of the puree.
  • Place the almond flour in a medium bowl. Add the 1/2 cup (125 mL) apple puree, cinnamon and (optional) salt. Stir until completely blended.
  • Using a small cookie scoop or a tablespoon, drop dough in 12 mounds, spacing 2 inches apart, on prepared cookie sheet.
