This recipe makes 7 quart jars of filling for apple pies. 2 quarts make a 9 inch pie. Need to have 7 one quart canning jars, with rings and lids.

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 teaspoons salt
10 cups water
3 tablespoons lemon juice
2 drops yellow food coloring
6 pounds apples

Steps:

  • in a large pan, mix sugar, cornstarch, cinnamon and nutmeg. Add salt and water and mix well. Bring to a boil and cook until thick and bubbly. Remove from heat and add lemon juice and food coloring.
  • Sterilize canning jars, lids and rings by boiling them in a large pot of water.
  • Peel, core, and slice apples. Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.
  • Fill jars with hot syrup, and gently remove air bubbles with a knife.
  • Put lids on and process in a water bath canner for 20 minutes.

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon salt
10 cups water
3 tablespoons lemon juice
7 quarts peeled, cored and sliced apples

Steps:

  • Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
  • Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
  • Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
  • Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

7 quarts peeled sliced cooking apples
4 1/2 cups sugar
1 cup cornstarch
2 teaspoons cinnamon
1/4 teaspoon nutmeg
10 cups water
3 tablespoons lemon juice

Steps:

  • Peel and slice apples.
  • Fill quart jars with apples leaving 1 inch head space.
  • Be sure to pack the apples in there, put a few in and smosh down with the handle of a wooden spoon, then a few more and repeat.
  • Make syrup by combining sugar, cornstarch, cinnamon, nutmeg, and water.
  • Cook until thick.
  • Add lemon juice.
  • Pour syrup over apples in jar, leaving 1/2 inch headspace.
  • Be sure to run your plastic spatula around the inside of the jar to get the air bubbles out.
  • Place the lids on and screw the rings down just finger tight.
  • Process 20 minutes in hot water bath.

4 -5 cups white sugar
1 cup cornstarch
4 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
10 cups water, divided
5 tablespoons lemon juice
7 quarts apples

Steps:

  • In a large saucepan, combine sugar (IF THE APPLES ARE QUITE SWEET, USE ONLY THE 4 CUPS OF SUGAR), cornstarch, cinnamon, nutmeg and salt with *5 cups* of water.
  • Mix well over low heat until all is dissolved.
  • Slowly add the remaining water.
  • Cook stirring often until mixture is thick and bubbly.
  • Add lemon juice.
  • Peel and cut fresh apples into small wedges and fill quart jars.
  • Pour prepared sugar mixture over the apples and seal.
  • Boil 20 minutes in a hot water bath.

This recipe is adapted from Bernardin Complete Book of Home Canning. I can this in small 1/2 cup jars for my kids' snacks. I still use 20 minutes processing time. Prep and Cooking Times are estimates, please follow recipe times. Recipe written in assumption you know how to safely can foods. Processing time is based on sea level, please adjust for your altitude.

12 lbs apples, peeled, cored, quartered, treated to prevent browning and drained
water
3 cups granulated sugar (optional)
4 tablespoons lemon juice
3 teaspoons cinnamon
1/4 teaspoon ginger
1/4 teaspoon clove
1/2 teaspoon nutmeg

Steps:

  • Prepare canner, jars and lids.
  • In a large stainless tea saucepan, combine apples with just enough water to prevent sticking. Bring to a boil over medium-high heat. reduce heat and boil gently, stirring occasionally, for 5-20 minutes, until apples are tender (time will depend upon the variety of apple and their maturity.) Remove from heat and let cool slightly, about 5 minutes.
  • Working in batches, transfer apples to a food mill or a food processor fitted with a metal blade and puree until smooth.
  • Return apples puree to saucepan. Add sugar, if using, and lemon juice; bring to a boil over medium-high heat, stirring frequently to prevent sticking. Maintain a gentle boil over low heat while filling jars.
  • Ladle hot applesauce into hot jars, leaving 1/2inch head-space. Remove air bubbles and adjust head-space, if necessary, by adding hot applesauce. Wipe rime. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
  • Place jars in canner, ensuring they are completely covered with water, by at least 1 inch. Bring to a boil and process both pint (500 ml) and quart (1L) jars for 20 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.
  • Notes: If you prefer a tart flavor use half tart and half sweet apples when making this applesauce and reduce the quantity of sugar as desired. Tart apple varieties include Granny Smith and Jonathon. Sweeter varieties include Golden Delicious, Rome and Fuji, Gala and Pink Lade make a nice tart/sweet combination.
  • Adding sugar to applesauce is optional. If the sugar is omitted in this recipe, the yield will be slightly reduced. However; lemon juice is not an optional addition. Lemon juice is added to help preserve the apples' natural color and to assure the acidity of the finished produce, since different varieties and harvesting conditions can produce apples of lower acidity.
  • Makes: 8 pints or 4 quarts
  • I can this recipe in 36 1/2 cup jars, still at 20 minutes processing.

This is apple jam - something you can't seem to buy - spiced to resemble the taste of most apple pies. Usually there is enough pectin in the apples to make it jell without adding anything. You can use 1 package of pectin (such as SureJel®), if desired.

6 Granny Smith apples - peeled, cored, and finely chopped
4 cups white sugar
½ cup light brown sugar
1 large lemon, zested and juiced
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon allspice
5 half-pint canning jars with lids and rings

Steps:

  • Combine apples, white sugar, light brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, cloves, and allspice in a pot; bring to a rolling boil. Cook at a boil, stirring occasionally, until fruit is soft and jam gelling point (220 degrees F (104 degrees C) is reached, at least 45 minutes. Put a small amount of jam on a cold plate; freeze for several minutes. If the mixture is gelled, it is ready to process in a canner.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
