Well, I love apple crisps and rhubarb crisp - but didn't like the strawberry. I took a few recipes I found and mixed and matched and got something that everyone loved. Hope you do as well. Apples-to-rhubarb mixture can be tweaked depending on how much you like rhubarb or how tall you want the crisp to be.

6 large apples, cored and diced
1 cup diced rhubarb
1 cup white sugar
¼ cup all-purpose flour
1 teaspoon ground cinnamon
1 ¾ cups quick cooking oats
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup chilled butter, cut into pieces
2 tablespoons white sugar, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Mix apples, rhubarb, 1 cup white sugar, 1/4 cup flour, and 1 teaspoon cinnamon in a bowl until thoroughly combined; spread fruit mixture into bottom of prepared baking dish.
  • Mix quick oats, 1 1/2 cup flour, and brown sugar in a separate bowl; cut butter into the oats mixture until crumbly. Spread the oats mixture evenly over the fruit mixture. If desired, combine 2 tablespoons white sugar with 1/2 teaspoon cinnamon in a small bowl and sprinkle cinnamon sugar over the top of the crisp.
  • Bake in the preheated oven until the fruit is bubbling and thick and the topping is golden brown, about 45 minutes. Let cool 10 to 15 minutes; best served warm.

Steps:

  • In a medium bowl, toss together the rhubarb, sugar and cinnamon. Add half of the bread cubes, and toss lightly to distribute. Transfer to an ungreased 2 quart microwave-safe baking dish. Top with remaining bread cubes. Drizzle melted butter over the top.

3/4 cup packed brown sugar

1/2 teaspoon ground mixed spice
1/2 teaspoon ground ginger
3 1/2 ounces stale plain cake or 3 1/2 ounces brioche bread, crumbs
3 ounces butter, melted
18 ounces rhubarb
2 cooking apples
4 tablespoons orange juice

Steps:

  • Mix the sugar and spices.
  • Add 3 tbsp of this into the crumbs and pour over the butter.
  • Trim the rhubarb and cut into chunks.
  • Peel, core and slice the applies thinly and add to the rhubarb and the rest of the sugar and spice.
  • Butter a shallow pie dish and put half the crumbs in the bottom.
  • Add the fruit and pour over the juice.
  • Put the rest of the crumbs on top.
  • Bake for 20 minutes, loosely covered with foil, in an oven preheated to 108 deg Celsius 350 deg fahrenheit.
  • Remove the foil and bake for 20 minutes more until the fruit is tender and top golden.
  • Serve with whipped cream or vanilla ice cream.

1 teaspoon ground cinnamon
3 packets instant oatmeal with raisins and spice, divided (recommended: Quaker Oats)
6 tablespoons butter, divided

Steps:

  • Preheat oven to 375 degrees F. Spray a 9 by 13-inch casserole dish with butter flavored cooking spray.
  • Spread half of the apple pie filling in the bottom of the casserole dish. Sprinkle with the cinnamon and 1 1/2 packets of oatmeal. Dot with half the butter. Repeat with remaining ingredients.

1/4 cup plus 2 tablespoons packed light brown sugar
2/3 cup plus 1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
Pinch of ground cloves
5 stalks rhubarb, cut into 1-inch pieces (about 4 cups)
1 teaspoon fresh lemon juice
1/2 cup roughly chopped almonds with skins
4 tablespoons cold unsalted butter, cut into small pieces, plus more for the skillet
Strawberry ice cream, for serving

Steps:

  • Preheat a grill to medium low. Whisk the panko, brown sugar, 1/4 cup granulated sugar, the cinnamon, allspice, ginger and cloves in a medium bowl until combined. In another bowl, toss the rhubarb with the remaining 2/3 cup granulated sugar and the lemon juice to coat.
  • Butter a shallow 8-inch ovenproof skillet or flameproof baking dish. Sprinkle 3 tablespoons of the breadcrumb mixture in the bottom of the skillet. Top with the rhubarb, then sprinkle with the remaining crumbs and the almonds. Dot with the cut-up butter.
  • Put the skillet on the center of the grill; close the lid or place a disposable roasting pan over the skillet. Grill until the filling is bubbly and the topping is golden brown and crisp, 15 to 20 minutes. Let cool slightly, about 10 minutes. Serve warm and top with strawberry ice cream.

5 cups thinly sliced peeled Fuji apples (about 5 medium)

TOPPING:
1/3 cup all-purpose flour
1/4 cup sugar

Steps:

  • Preheat oven to 375°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling and topping., In a large bowl, combine apples and rhubarb. ½ cup unsalted butter, melted
6 ounces brioche, torn into 1/2 inch pieces
3 cups diced rhubarb
1 Granny Smith apple -- peeled, cored and sliced into thin wedges
⅝ cup dark brown sugar
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
½ lemon, zested and juiced
1 tablespoon butter, diced
⅜ cup warm water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a shallow, 1-quart baking dish.
  • In a medium bowl, combine melted butter and brioche. Line the bottom of the baking dish with one-third of the mixture.
  • In another bowl, combine rhubarb, apple, brown sugar, cinnamon, nutmeg, lemon juice and zest. Let rest until juices begin to run, 5 minutes. Then spread half of the mixture over the brioche in the dish. Top with half the remaining brioche. Spread the remaining rhubarb over that and top with the last of the brioche. Dot with 1 tablespoon butter. Spoon the warm water evenly over the top.
  • Cover and bake in preheated oven 25 to 35 minutes, until rhubarb is tender. Increase oven temperature to 400 degrees F (200 degrees C), uncover dish, and bake until top is crusty, rhubarb is soft, and bubbles form at the edges of the dish, 10 to 15 minutes. Serve warm.

  • In a large saucepan mix together the rhubarb, apples, sugar, water and cinnamon. Bring to a boil, then cook over medium heat for 20 minutes or until the fruit is soft. Stir in the pectin and boil for 5 minutes.
