BRAN MUFFINS WITH APPLESAUCE
This is one of my favorite bran muffin recipes, handed down from my mom. I made a few tweaks to make it even healthier. Add some raisins for a touch of sweetness.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
- Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
- Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

BREAKFAST APPLE BRAN LOAF
Steps:
- Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
- Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
- While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
- Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
- Slice with a serrated knife and serve with butter on the side.
- Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.
APPLESAUCE BRAN MUFFINS
Applesauce replaces oil in this old recipe for healthy bran muffins. Great for breakfast or a snack.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Mix bran cereal and buttermilk together in a bowl; let sit for 10 minutes.
- Beat brown sugar, applesauce, egg, and vanilla extract together in a bowl until smooth; stir into bran cereal mixture. Stir flour into bran cereal mixture until batter is well mixed; fold in walnuts and dried cranberries. Spoon batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted in a muffin comes out clean, 15 to 20 minutes. Transfer muffins to a wire rack to cool.

APPLESAUCE BRAN BREAD

- 1. In large electric mixer bowl, mix together 1/2 cup of the flour, KELLOGG'S ALL-BRAN cereal, sugar, salt and yeast. Set aside.2. Combine applesauce, milk and margarine in small saucepan. Heat until very warm (120° to 130°F). Margarine does not need to melt. On low speed, gradually add to cereal mixture and beat 2 minutes on medium speed, scraping bowl occasionally. Add egg and 1/2 cup flour. Beat 2 minutes on high speed, scraping bowl occasionally. Stir in enough remaining flour (1 1/2 to 2 cups) to make stiff, sticky dough. Cover loosely. Let rise in warm place until double in volume.3. Stir down dough. Spoon into 1-quart round casserole dish coated with cooking spray. Cover and let rise in warm place until double in volume.4. Bake at 375°F about 35 minutes or until done. To prevent over-browning, cover loosely with foil during last few minutes of baking time. Remove from casserole. Cool on wire rack.
