So easy and always a hit at our holiday dinners! This should be made at least one day ahead and refrigerated to thicken.

1 cup orange juice
1 cup water
4 cups fresh cranberries
¾ cup sugar
1 cup chopped dried apricots
1 cup golden raisins
1 tablespoon grated orange zest

Steps:

  • In a large saucepan over medium heat, mix the orange juice, water, cranberries, sugar, apricots, raisins, and orange zest. Stir constantly until sugar has dissolved, about 5 minutes. Bring to a boil, and cook 10 minutes, or until cranberries have burst. Remove from heat, and chill at least 8 hours, or overnight, before serving cold.

1 cup chopped sweet onion
1 cup chopped celery
2 Tbs. butter
6 oz. fresh cornbread cubes
6 oz. fresh wheat bread cubes
6 oz. fresh sourdough bread cubes
2 tsp. sage
1/4 tsp salt
1/8 tsp white pepper
1/2 cup dried apricots, diced
1/4 cup dried cranberries
1/2 cup chopped walnuts
1/4 cup butter, melted, plus 1 2 TBS
1/2 cup dry white wine
1/2 cup vegetable or chicken broth

Steps:

  • Saute onion and celery in butter until onion turns dark brown. Add wine 1 Tbs at at time if onion and celery begin to stick to pan. Add sage, salt, pepper, fruit and nuts.
  • Place mixture in a large mixing bowl. Add any remaining wine, the broth, and melted butter. Gradually add bread crumbs and toss to coat.
  • Transfer to a 2 1/2 to 3-quart oven-proof covered baking dish, or cover with foil. Bake at 350 degrees for 40 minutes. Uncover and bake for another 10 minutes.

1-1/2 pounds chicken tenderloins, divided
1/4 teaspoon salt
2 tablespoons olive oil, divided
1 medium onion, chopped
3/4 cup chicken broth
1/2 cup dried cranberries
1/2 cup apricot preserves
2 tablespoons cider vinegar

Steps:

  • Sprinkle chicken with salt. In a large skillet, heat 1 tablespoon oil over medium-high heat and brown half of the chicken on both sides. Remove from pan; repeat with remaining oil and chicken., Add onion to same pan; cook and stir over medium heat 2-3 minutes or until tender. Stir in broth, cranberries, preserves and vinegar; return to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly reduced. 1 tablespoon extra-virgin olive oil
1 pork tenderloin (1 to 1 1/4 pounds)
16 shallots, peeled and halved lengthwise, keeping root intact, plus 1/3 cup coarsely chopped shallots, for sauce (about 2)
1 jar (10 ounces) all-fruit apricot jam
1/2 cup low-sodium canned chicken broth
1/2 teaspoon coarse salt
1 cup fresh or frozen (thawed) cranberries
1 1/2 tablespoons red-wine vinegar
1/2 teaspoon freshly ground pepper
1 teaspoon chopped fresh thyme, plus sprigs (optional), for garnish

Steps:

  • Preheat oven to 425 degrees. Heat oil in a large ovenproof skillet over medium-high heat until hot but not smoking. Add pork and halved shallots to skillet. Brown pork on all sides, turning occasionally,6 to 8 minutes. Remove skillet from heat.
  • Brush pork in skillet with half the jam; drizzle 2 tablespoons broth over shallots. Transfer skillet to oven. Roast, turning shallots occasionally, until an instant-read thermometer inserted into center of pork registers 155 degrees, 30 to 35 minutes.
  • Remove skillet from oven. Using tongs, transfer pork and shallots to a plate. Let pork rest (it will continue to cook; temperature should reach 160 degrees).
  • Place skillet over medium-high heat; add remaining chopped shallots. Sprinkle with salt; add remaining jam and 6 tablespoons broth. Deglaze skillet, scraping up browned bits with a wooden spoon; add cranberries, vinegar, and pepper. Cook, stirring, until berries are juicy, about 5 minutes. Stir in chopped thyme.
  • Slice pork; divide among plates. Garnish with thyme sprigs, if desired. Serve with cranberry pan sauce and shallots.

1/2 cup golden raisins
1/2 cup dried cranberries
1/3 cup (packed) golden brown sugar

1/4 cup (1/2 stick) unsalted butter, melted
2 cups sparkling apple-cranberry juice
1/4 cup frozen concentrated cranberry juice cocktail, thawed

Steps:

  • Preheat oven to 400°F. Remove stems from apples.Using melon baller, scoop out core of each apple, making 1-inch-wide hollow center but leaving bottom of apple intact. Make 1/8-inch-deep cut in skin around center of each apple. Arrange apples, hollowed side up, in 8x8x2-inch glass baking dish.
  • Mix raisins, cranberries, sugar, apricots, and 1/2 teaspoon allspice in small bowl. Pack fruit mixture into hollows of apples. Sprinkle any remaining fruit mixture around apples in dish. Drizzle butter into filling and around apples in dish. Pour sparkling juice and cranberry concentrate into dish. Sprinkle remaining 1/4 teaspoon allspice into dish. Bake apples uncovered until tender, occasionally basting with cranberry juice mixture, about 1 hour 10 minutes.
  • Transfer apples to 4 bowls. Pour juices from dish into medium saucepan and boil until thick enough to coat spoon, about 4 minutes. Spoon sauce over apples.

2 pounds onions, sliced thin
1/3 cup sugar
1/2 stick (1/4 cup) unsalted butter
2 teaspoons minced garlic
1/2 cup red-wine vinegar
1/4 cup water
2 cups cranberries, picked over
1/8 teaspoon salt
1/2 cup chopped dried apricots

Steps:

  • In a skillet cook the onions and the sugar in the butter over moderate heat, stirring, until the onions are pale golden, add the garlic, and cook the mixture, stirring, for 1 minute. Stir in the vinegar, the water, the cranberries, and the salt and cook the mixture, stirring, for 10 to 15 minutes, or until the berries have burst and are softened. Stir in the apricots and cook the confit for 1 minute. The confit keeps, covered and chilled, for 2 weeks. Serve the confit warm or at room temperature.
