2 cups Gold Medal™ all-purpose flour
3 tablespoons granulated sugar
3 teaspoons baking powder
2 teaspoons grated orange peel
1/2 teaspoon salt
1/2 cup chopped dried apricots
1/2 cup white vanilla baking chips
1 1/3 cups whipping cream
1 cup powdered sugar
2 to 3 tablespoons orange juice

Steps:

  • Heat oven to 400°F. Lightly grease cookie sheet. In large bowl, mix flour, granulated sugar, baking powder, orange peel and salt until well blended. Stir in apricots and baking chips. Add whipping cream all at once; stir just until dry ingredients are moistened.
  • On lightly floured surface, knead dough 6 or 7 times until smooth. Divide dough in half. Pat each half into 6-inch round; cut each into 6 wedges. Place 2 inches apart on cookie sheet.
  • Bake 10 to 13 minutes or until light golden brown. Cool 5 minutes. Meanwhile, in small bowl, mix powdered sugar and enough orange juice for desired drizzling consistency. Drizzle icing over warm scones. Serve warm.

175g unsalted butter , softened, plus extra for greasing
175g dried apricot , chopped
zest 2 large orange , juice of 1
175g golden caster sugar
3 medium eggs , beaten
280g self-raising flour
drop of milk (optional)
50g icing sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 900g loaf tin with baking parchment. In a saucepan, heat the apricots with the orange zest and all but 1 tbsp of the juice. Simmer gently for 5 mins until the apricots have absorbed all the juice. Set aside to cool.
  • Beat the butter and sugar in a bowl until light and fluffy. Gradually beat in the eggs, then fold in the flour. Stir in the cooled apricots. If the mixture is dry at this stage, add a drop of milk.
  • Scrape the batter into the tin and smooth the top with a spatula. Bake for 50 mins-1 hr until a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins before removing, then leave on a wire rack to cool completely.
  • Gradually add the reserved orange juice to the icing sugar, stirring until smooth and slightly runny. Drizzle the icing in a zigzag pattern over the top of the cake and leave to set.

750 ml apricot brandy
2 liter bottle of grapefruit soda/pop (squirt, fresca)

  • In large sauce pan bring water and sugar to boil. Remove from heat when sugar has dissolved. Let cool to room temperature. Stir in juices and brandy.   • In a medium skillet, heat oil over medium-high. Add onion and cook, stirring occasionally, until soft, 6 minutes (do not let brown). Season with salt and pepper. Add apricots and 1/2 cup water; cook until apricots soften and onion begins to brown, about 5 minutes. Add vinegar, marmalade, and ginger; cook, stirring occasionally, until liquid is syrupy and apricots are plump, 3 to 5 minutes. Season to taste with salt and pepper. Steps:

  • Coarsely grate and keep the zest.
  • Separate the orange segments.
  • Combine orange segments (minus membranes), zest, apricots and sugar.
  • Bring to a boil over medium heat.
  • When mixture begins to boil, start mashing.
  • Reduce the heat to maintain a low boil and cook for 15 minutes, stirring constantly--apricots like to burn.
  • Hot pack and seal.

1kg apricot , halved and stoned, larger halves halved again
750g preserving sugar
juice 1 lemon
1 tbsp orange blossom water
few knobs butter (optional)

Steps:

  • Mix the apricots and sugar together, cover and leave to stand overnight.
  • Put a saucer in the freezer. Tip the syrupy apricots into a preserving pan or a large, wide-based pan (the wider and more open the pan, the faster the jam will be ready, so a preserving pan is ideal). Add the lemon juice and place over a gentle heat. Once any last bits of sugar have melted, turn up the heat and boil for 15 mins. Turn off the heat and spoon a little hot syrupy jam onto the cold saucer. Once cool, push the jam with your finger. If it wrinkles a little, it's ready and has reached setting point. If it is too runny to wrinkle, return the pan to the heat and boil in stages of 2-3 mins, removing the pan from the heat each time you do the saucer check, until the jam wrinkles.
  • Skim the surface, then stir in the orange blossom and knobs of butter, if you like - this will help to dissolve any remaining scum. Leave the jam for 15 mins before ladling into sterilised jars (see tip, below) - this allows the fruit to settle so it doesn't sink to the bottom. Will keep in the fridge for 6 weeks.

My parents have an apricot tree, so I've eaten fresh apricots all my life. I'm used to eating them fresh only, but I recently purchased some apricots that ripened very quickly. I wanted to make a jam or syrup out of them and couldn't find what I wanted, so I made something up. The result is a very sweet, thick syrup. Leave out the amaretto if you don't use it in cooking.

¾ pound very ripe fresh apricots, pitted and halved
½ cup white sugar
½ teaspoon vanilla extract
½ cup orange juice
1 tablespoon amaretto liqueur
1 tablespoon water, if needed
½ teaspoon cornstarch
¼ cup water

Steps:

  • Mix together the apricots, sugar, vanilla extract, orange juice, and amaretto liqueur in a saucepan over medium heat, stirring until the sugar has dissolved. Bring to a boil, and cook, stirring constantly, until the apricots are soft and have started to release their juice, about 5 minutes. Reduce heat to low, and simmer until the apricots have broken down, about 1 1/2 hour. If mixture is too thick or begins to burn, stir in 1 tablespoon of water and mix well.
  • Stir cornstarch into 1/4 cup water, and pour into the apricot mixture. Bring to a boil, and simmer until the mixture forms a thick syrup, about 30 more minutes.

1 1-inch strip orange rind
1 1-inch strip lemon rind
1/2 cup fresh orange juice
1/3 cup apricot preserves, sweetened with fruit
2 teaspoons Dijon mustard
8 ounces skinless, boneless chicken breasts
2 navel oranges
1 teaspoon olive oil

Steps:

  • With food processor running, put ginger, orange rind and lemon rind through feed tube, and chop fine.
  • Add the orange juice, apricot preserves and mustard, and process to mix well.
  • Wash and dry chicken breasts, and place in small bowl; pour orange mixture over chicken, and marinate until it is time to cook the chicken.
  • Peel the oranges, and cut into small segments. Heat oil in nonstick skillet; brown chicken on both sides; add marinade mixture and orange pieces, simmer briskly until chicken is cooked through and marinade has been slightly reduced.

1 bottle (750 milliliters) champagne or other sparkling wine, chilled
