APRICOT-OATMEAL MUFFINS



Apricot-Oatmeal Muffins image

Sweet bits of dried apricots balance the hearty texture of oats in mouth-watering muffins.

3/4 cup Gold Medal™ all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup packed brown sugar
1/3 cup milk
3 tablespoons vegetable oil
1/2 teaspoon vanilla
1 egg
1/3 cup finely chopped dried apricots
1 tablespoon quick-cooking or old-fashioned oats, if desired

Steps:

  • Heat oven to 400°F. Grease bottoms only of 6 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • In medium bowl, mix flour, 1/2 cup oats, the baking powder and salt. In small bowl, mix brown sugar, milk, oil, vanilla and egg with fork or wire whisk until blended. Stir milk mixture into flour mixture just until flour is moistened. Fold in apricots. Divide evenly among muffin cups. Sprinkle each with about 1/2 teaspoon oats.
  • Bake 23 to 25 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Serve warm or cool.

These are moist and chewy. I sometimes add 1/2 cup of dates as well as the apricots. A family favorite!

1 cup chopped dried apricots
1 cup boiling water
2 cups all-purpose flour
¾ cup white sugar
1 teaspoon baking soda
½ teaspoon salt
¼ cup melted butter
¼ cup vegetable oil
1 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups. Place apricots into a small bowl, and pour the boiling water over them. Let stand for 5 minutes.
  • In a medium bowl stir together the flour, sugar, baking soda and salt. In a separate bowl, whisk together the melted butter, oil, buttermilk and egg. Pour the wet ingredients into the dry ingredients, and stir until just blended. It is okay for the batter to have some lumps. Drain water from apricots, and mix them into the batter. Spoon into the prepared muffin cups.
  • Bake for 15 minutes in the preheated oven, or until the top springs back when lightly pressed. Cool in the pan over a wire rack.

40 g dried apricots
75 g butter, at room temperature
2 eggs
2 tablespoons sugar
100 g flour
1 teaspoon baking powder
100 ml heavy cream

Steps:

  • Soak the dried apricots in warm water for 15 minutes, then drain and pat dry.
  • Cut in small pieces.
  • Beat or whisk the butter, sugar and eggs together.
  • Sift the flour and the baking powder together.
  • Add the flour,the cream and the apricot pieces to the butter mixture.
  • Stir till everything is well incorporated.
  • Bake in an oiled waffle iron according to manufacturer's directions.
  • Serve warm!

1/2 cup chopped dried apricots
1/2 cup apricot nectar
1 teaspoon grated lemon peel
1/4 cup reduced-fat ricotta cheese
1/4 cup apricot preserves
2 tablespoons sliced almonds, toasted

Steps:

  • Place bread on an ungreased baking sheet. Bake at 350° for until toasted, 4-6 minutes. Cool., Meanwhile, in a small saucepan, combine apricots, nectar and lemon peel. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Remove from the heat; cool to room temperature. Strain and discard liquid., Combine cheese and preserves; spread over toasted bread. 1/3 cup vegetable shortening solid, melted
1 tablespoon orange rind grated (optional)

  • In a small saucepan over medium-high heat, melt butter or margarine with brown sugar. In a small bowl, mix orange juice and cornstarch until smooth. Add to brown sugar mixture. Stirring, bring to a boil and boil for 1 minute. Stir in preserves and heat through. Set sauce aside and keep warm.In a large bowl, mix flour, sugar, baking powder and salt set aside.In a small bowl, beat egg yolks and milk until well blended. 1 pound apricots, quartered
1 cup sugar
2 teaspoons fresh lemon juice
Pinch of salt
1/2 pound Bing cherries, pitted and halved (or use whole frozen cherries)
(makes about 3 cups)

Steps:

  • Whisk together crème fraîche and confectioners' sugar in a small bowl. Refrigerate until ready to use (up to overnight).
  • Whisk together flour, cornmeal, granulated sugar, baking powder, and salt in a large bowl. Whisk eggs, buttermilk, and vanilla in a small bowl. Add egg mixture to flour mixture; stir until combined. Add oil and butter; whisk until smooth.
  • Heat a waffle iron (preferably Belgian-style). Ladle 1/2 cup batter into each mold. Cook according to manufacturer's instructions until golden brown. Place waffles on a baking sheet in a 200°F oven to keep warm while you make the rest. Serve topped with compote and sweetened crème fraîche.
