POACHED ARCTIC CHAR WITH PEAR-VANILLA BEURRE BLANC



Poached Arctic Char with Pear-Vanilla Beurre Blanc image

This meal is quick to prepare in 30 minutes or less. I used Arctic Char but salmon or trout work equally well, although the cooking time will vary a little. Enjoy with a crisp white wine from Châteauneuf-du-Pape. We did!

3 1/2 cups White Wine (divided)
20 Baby carrots (for the side)
juice of a Meyer Lemon
1 shallot (peeled and cut in half)
large pinch of Salt
1 Pear
1/2 tsp Vanilla extract
pinch of Sugar
4 X 6 oz Arctic Char fillets (skin removed, or salmon)
4 tbsp Butter
microgreens (for garnish (optional))

Steps:

  • Bring 3 cups wine to a boil in a skillet in which the fish will easily fit without being crowded.
  • Add the carrots and reduce heat to a simmer. Cook until carrots are crisp-tender, then remove the carrots to a plate, cover, and keep warm.
  • Place the remaining 1/2 cup white wine, Meyer lemon juice, and halved shallot in a small saucepan and bring to a boil.
  • Add salt and boil until liquid is reduced to a couple of tablespoons.
  • Remove from heat and discard the shallot.
  • Place a double layer of cheesecloth on the counter and, using the large holes on a box grater, grate the pear (skin and all) onto the cheesecloth. Gather up the cloth and, over a bowl, squeeze out all the juice. You should have about 1/3 cup.
  • Add the pear juice, vanilla, and a pinch of sugar to the wine-lemon reduction and return to the heat to reduce, once more, to a couple of tablespoons. Remove from heat and set aside.
  • Bring wine in skillet back to a simmer, just about to boil. Please see note below.
  • Place the fillets, skinned side up, in the wine and simmer briskly for 2 minutes. Carefully turn the fillets and simmer an additional two minutes.
  • Remove from the heat and set aside, keeping fish warm in the wine. (If using salmon, you will need to cook longer, as salmon fillets are much thicker than char.)
  • Bring the sauce reduction to a boil again; whisk in the cold butter one tablespoon at a time until the beurre blanc is emulsified and ready to serve.
  • Place the fillets on 4 plates, and gently spoon sauce over, allowing to pool on the side. Place cooked carrots to the side, and add a few microgreens atop the fish for garnish, if you like.

5 tablespoons unsalted butter, at room temperature
2 tablespoons capers in brine, drained and finely chopped
1 tablespoon finely chopped fresh parsley
Finely grated zest and juice of 1/2 lemon, plus lemon wedges for serving
Kosher salt and freshly ground pepper
1 cup 1/2-inch pieces stale bread (from a baguette or country bread loaf)
1 tablespoon vegetable oil
1 to 1 1/4 pounds skin-on arctic char, cut into 4 pieces
12 ounces haricots verts, trimmed
Lemon wedges, for serving

Steps:

  • Combine 4 tablespoons butter, the capers, parsley, lemon zest and juice, 1/2 teaspoon salt and a few grinds of pepper in a bowl with a rubber spatula; set aside. Bring a medium saucepan of salted water to a boil.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the bread pieces, season with salt and cook, stirring occasionally, until toasted, about 4 minutes; transfer to a plate.
  • Wipe out the skillet; add the vegetable oil and heat over medium-high heat. Season the fish on both sides with salt and pepper and add to the skillet, skin-side down. Cook until the skin is browned and crisp, about 4 minutes. Carefully flip and continue cooking until just cooked through, about 1 more minute; transfer to a plate.
  • Meanwhile, add the haricots verts to the boiling water and cook until crisp-tender, about 4 minutes. Drain and season with salt and pepper. Divide among plates and sprinkle with the croutons. Add the fish and top with the lemon-caper butter; serve with lemon wedges.

I'm a huge fish fan and I'm always looking for new ways to make fish. I couldn't find any recipe that sounded tasty on the net for arctic char so I decided to try my cooking talent and come up with my own recipe. My husband and I couldn't believe how delicious this turned out, all of the flavors balanced perfectly. He wasn't hungry that night and ended up eating majority of the fish, haha! This recipe will not disappoint.

1 (10 ounce) fillet arctic char, rinsed and patted dry
1 pinch sea salt to taste
1 lime, zested and juiced
¼ cup olive oil
¼ cup sherry wine
3 sprigs rosemary, leaves stripped
2 cloves garlic
ground black pepper to taste
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
  • Season arctic char with salt, place in prepared baking dish, and sprinkle with lime zest.
  • Combine lime juice, olive oil, sherry, rosemary, and garlic in a food processor; pulse until garlic is finely chopped. Spread mixture over fish and season with black pepper and cayenne pepper.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes, basting with pan juices about halfway through. When the fish is close to being cooked, switch the oven to broil for remaining two minutes or until browned.

3 bosc pears, unpeeled (cut into eighths)
4 tablespoons fresh orange juice
2 tablespoons grapeseed oil
8 shallots, sliced
2 tablespoons Grand Marnier
2 teaspoons fresh chives, minced
2 -3 teaspoons fresh ginger, minced
salt
fresh ground black pepper
1 cup panko breadcrumbs
2 tablespoons curry powder
2 lbs arctic char or 2 lbs salmon
3 tablespoons unbleached all-purpose flour
3 tablespoons butter, melted
3 tablespoons walnuts, toasted chopped (optional)

Steps:

  • Toss the pears with the orange juice in a large nonreactive bowl and set aside. Heat the oil and saute the shallots over medium-low heat for 20 to 30 minutes, until softened and slightly carmelized. Drain the pear slices and gently toss with the Grand Marnier, chives, ginger, and salt and pepper to taste. Fan out attractively on a serving platter, and top with the shallots.
  • Preheat the oven to 400°F.
  • Combine the panko with the curry powder. Dip the arctic char into the flour, shake to remove any excess, and place the fillets into a baking dish. Pat the panko onto their surfaces, and drizzle with the melted butter. Pour 2 Tablespoons of water around the fillets. Bake for about 12 minutes, or until the char is cooked through and the bread crumbs are browned.
  • Arrange the char over the pears, so that the pear design is visible. Sprinkle with the walnuts, if desired.

1 pound leeks, white and light green parts (about 4 large leeks)
2 tablespoons unsalted butter
2 tablespoons minced fresh thyme leaves
Kosher salt and freshly ground pepper

1/2 cup apple cider
1/3 cup heavy cream
1 tablespoon brandy or Calvados
1/4 cup chopped flat-leaf parsley
1 whole book-boned arctic char (about 4 pounds),* head and tail removed, if desired
Olive oil, for brushing
1 cup sour cream
1/3 cup prepared horseradish, drained
Kosher salt and freshly ground pepper

Steps:

  • 1. To prepare the fish: Halve the leeks lengthwise, then slice crosswise and transfer to a large bowl of water. Swish leeks to release any grit; lift from the water. Drain.
  • 2. Melt butter in large skillet over medium-high heat. Add leeks and thyme, and cook, stirring, until wilted and liquid reduces, 6 minutes. Season with 1/2 teaspoon salt and pepper, to taste. Add cider, bring to a boil, and cook until almost dry, 4 minutes. Stir in heavy cream, boil until thick and it coats the leeks. Add brandy, cook down slightly. Remove from heat and stir in parsley.
  • 3. Open fish and season well with salt and pepper. Spread leek mixture along flesh and close fish. Tie closed with kitchen twine (or cooked leek greens) at 4-inch intervals. Brush oil all over skin, season with salt and pepper.
  • 4. Preheat the broiler to high (with convection broiler if you have it). Line a pan with foil and lightly brush with oil. Place the prepared pan in broiler and heat for 5-10 minutes.
  • Carefully lay the fish on the preheated pan. Broil fish until an instant-read thermometer inserted into thickest part registers 130 to 135 degrees F, about 10 to 12 minutes. Remove from oven and rest fish for 5 to 10 minutes before serving.
  • 5. Stir all sauce ingredients together. Transfer fish to a serving platter, remove strings. Serve with sauce on the side.

4 strips thick-cut bacon, chopped (7 ounces)
6 tablespoons unsalted butter
1 yellow onion, thinly sliced
1 cup dry white wine
1/4 cup apple cider vinegar
1/2 head red cabbage, thinly sliced
Kosher salt and freshly cracked black pepper
Four 7 to 8-ounce arctic char fillets, pin bones and scales removed
Kosher salt and freshly cracked black pepper
Canola oil, for seraring

Steps:

  • For the butter-braised cabbage: Cook the bacon in a large high-sided saucepan over medium-high heat, stirring occasionally until crisp, about 12 minutes. Using a slotted spoon, transfer to a paper towel-lined plate. Add the butter to same pan, followed by the onions. Cook until the onions begin to caramelize, 3 to 5 minutes. Add the wine, vinegar and cabbage. Cover, reduce the heat to medium and continue cooking for 30 minutes.
  • Remove the lid from the cabbage and continue cooking until all the liquid has evaporated. Stir the crisped bacon into the cabbage and season with salt and pepper.
  • For the arctic char: The secret to crispy skin is lack of moisture. Leave your fish uncovered in the fridge 10 to 15 minutes to dry out. Then dry the fish with a paper towel to remove any excess moisture. Sprinkle generously with salt and pepper.
  • Heat a cast-iron skillet or heavy-bottomed saute pan over medium-high heat. Add enough oil to coat. When the oil is hot, but not smoking, place the fillets skin-side down in the pan, cooking in batches if needed. Using the back of a spatula, press down hard on the fillets for at least 20 seconds to ensure that the entire skin has full contact with the bottom of the pan. This will help to achieve the crispiest skin possible.
  • Continue cooking until the flesh cooks and there is only a bit of pink left, 5 to 6 minutes. The skin should be pulling away from the bottom of the pan. If necessary, use a spatula to loosen the skin before flipping. Flip the fish and continue cooking for an additional 30 seconds to 1 minute before transferring to a plate to rest.
  • Gently remove the fish skin with a paring knife and place the skin back into the pan, flesh-side down. Fry another 1 to 2 minutes over medium-high heat. Transfer to a wire rack or a paper towel-lined plate, at which point it will harden like a super-crispy fish chip.
  • Serve the crisp arctic char over the butter-braised cabbage and top with the crispy fish skin.
  • Cook's Note: Removing your fried fish skin to a wire rack will help it harden by letting the air circulate around it.
