STUFFED CURRIED AUBERGINES
Jam-packed with flavour, this totally tasty traybake is a must-try dish.

- Preheat the oven to 190ºC/375ºF/gas 5.
- Peel the onion, garlic and ginger, place in a food processor with the coriander stalks and chillies (deseed if you like), and whiz to a fine paste.
- Put the spices and curry leaves into a 25cm x 35cm roasting tray on a low heat with 2 tablespoons of oil and fry for 1 minute, or until smelling fantastic, stirring constantly.
- Tip in the paste and cook for 5 minutes, or until softened, stirring regularly.
- Stir in the peanut butter, mango chutney and tamarind paste, season with a good pinch of sea salt and black pepper, then scrape into a bowl, adding a splash of water to loosen to a paste, if needed.
- Leaving them intact at the stalk, prick the whole aubergines all over with a fork, cut into quarters lengthways, rub and stuff them generously with all the paste, then arrange them in the tray (if using regular aubergines, simply trim then cut into 1cm-thick rounds and sandwich the paste between them).
- Place the tray on a medium heat and fry for 5 minutes, turning halfway.
- Add the coconut milk, roughly chop and sprinkle over the tomatoes, season well with salt and pepper, and bring to the boil.
- Cover with tin foil and roast for 40 minutes, or until thickened and reduced, removing the foil halfway. Season to perfection and scatter over the coriander leaves. Always good with fluffy rice, poppadoms, yoghurt and extra fresh chilli.

PICKLED EGGPLANT (AUBERGINE) - JAMIE OLIVER
From "Jamie at Home" episode JH0111 "Pickles and Preserves". This is the recipe as prepared on-screen. You can substitute the eggplant and oregano with other vegetable-and-herb combinations suggested by Jamie at the Food Network website: mushrooms with thyme, rosemary and sage; zucchini with mint; fennel bulbs with their fronds; small (pearl or cipollini) onions with 4-6 bay leaves; red and yellow bell peppers with thyme.

Steps:
- Combine water, vinegar and salt in a pot. Bring to a boil.
- Remove the green end of each eggplant. Slice in half lengthwise, then cut across into 1/2" slices. Cut slices into 1/2" batons. Add to boiling brine for 3 minutes. If they float, keep re-submerging them with a spoon.
- Combine oregano, chile, garlic and both oils. Drain eggplant and add to oil mixture. Toss well.
- Put canning jars into boiling water for 5 minutes. Transfer eggplant and oil to canning jars and seal.

AUBERGINE PICKLE
Use up a glut of aubergines in this Indian-spiced chutney with tamarind, ginger and mustard seeds

- Put the onions, ginger and oil in a large saucepan and gently cook for 15 mins until soft. Stir in the spices and curry leaves and fry for a few mins, then add the tomato purée and tamarind and fry for a few mins more.
- Stir in the aubergines, raisins, sugar and vinegar. Heat gently until the sugar has dissolved, then simmer for 20 mins until the chutney has thickened. Leave for 10 mins, then spoon into sterilised jars and seal. The pickle can be eaten straight away and keeps for up to 6 months.

- First make the chutney. Squeeze the lime juice into a food processor and blitz with all of the other chutney ingredients (removing the chilli stalk) until smooth, adding a little water to loosen if needs be.
- Pour the chutney into a small bowl and chill in the fridge while you make your fritters.Place the gram flour, spices and mango powder in a large bowl and whisk in 150ml to 180ml of cold water until it forms a thin batter.Cut the aubergines into 3mm rounds.In a deep saucepan, pour in sunflower oil to a depth of at least 2.5cm and bring it to 180ºC over a medium heat – test this with a thermometer, or drop in a cube of bread and when it bubbles immediately the oil is ready.Using metal tongs, dip each aubergine slice in the batter, shake off the excess, then slide it into the hot oil.
- Do this in batches and cook them for 2 to 3 minutes on each side, or until golden and crisp.Carefully remove from the oil and leave to drain on kitchen paper, seasoning with sea salt while still hot.Drop the curry leaves into the oil and fry for 30 seconds, or until crisp (be careful as the oil will spit).
- Serve the fritters with the crispy curry leaves on top, a squeeze of fresh lime, and the coriander chutney on the side.
