Come autumn, Southerners love an apple dessert, no matter which form it takes. You'll see farmers' market apples filling everything from warm and gooey apple cobbler with a scoop of ice cream on top to a towering apple stack cake with sweet, sticky filling. But you really can't beat a classic apple cake-and Auntie's Apple Cake is certainly one for the recipe box. This traditional recipe for easy apple cake has everything you need: fresh apples, a pecan-studded spiced batter, and a heavenly praline-like frosting. Everyone will swoon when served a slice for dessert, but this cake works just as well as a brunch treat (paired with a cup of coffee!) or as a sweet snack with afternoon tea. Like most fresh apple cakes, it actually tastes better after a day or two. For this recipe, any baking apple will do; but we suggest using pink lady, granny smith, or honeycrisp apples. Get a taste of a Southern fall-favorite dessert when serving up Auntie's Apple Cake this season. Ice cream optional!

3 large eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon table salt
1 teaspoon ground cinnamon
3 cups all-purpose flour, divided, plus more for pan
3 cups diced peeled apples (from 3 medium apples)
1 cup chopped pecans
1 cup packed brown sugar
1/2 cup (4 oz.) unsalted butter
1/4 cup evaporated milk
Chopped pecans (optional)

Steps:

  • Prepare the Cake: Preheat oven to 325°F. Coat a 10-inch tube pan with cooking spray; dust with flour. Beat eggs, sugar, oil, and vanilla with a hand mixer on medium speed about 1 minute. Stir together baking soda, salt, cinnamon, and 2 1/2 cups of the flour in a separate bowl; gradually add to egg mixture, beating on low speed until blended.
  • Stir together apples, pecans, and remaining 1/2 cup flour in a bowl; fold mixture into batter. Spoon batter into prepared tube pan. Bake in preheated oven a until wooden pick inserted in center comes out clean, about 1 hour, 15 minutes. Cool in pan 15 minutes. Remove from pan; let cool until just warm, about 30 minutes.
  • Meanwhile, prepare the Frosting: Cook brown sugar, butter, and evaporated milk in a saucepan over medium, stirring often, until mixture comes to a boil and sugar is dissolved, about 2 minutes. Continue cooking, stirring constantly, until mixture reaches soft-ball stage (240˚F), about 3 minutes. Remove from heat; whisk until slightly thickened, abut 1 minute.
  • Drizzle Frosting over warm Cake. If desired, garnish with chopped pecans.

A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

3/4 tsp baking soda ((bi-carb soda) (Note 1))
3/4 tsp EACH salt, cinnamon and ground cloves
1/2 tsp ground nutmeg ((or 1/4 tsp freshly ground))
1 1/4 cups white sugar ((Note 2))
1 cup vegetable oil
2 eggs (, large, at room temperature (55-60g/2oz each))
1 1/2 tsp vanilla extract
2 cups apple ( , peeled, cored and cut into 8mm/ 1/3" cubes (~2 large, 3 small) (Note 3))
1/2 cup flaked raw almonds
Icing sugar . confectioners sugar, for dusting

Steps:

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

125 ml oil ((or half oil + half unsweetened applesauce))
125 g sugar ((but you could put less (110 g) if you do not like too sweet))
3 eggs
zest 1 lemon
salt a pinch
200 g cake flour
1 tsp baking powder
1 tsp vanilla extract
100 ml milk
3-4 apples
60 g walnuts
50 g golden raisins

Steps:

  • Preheat oven at 350 F.
  • Whisk the eggs, oil (or half oil + half applesauce) and sugar with a hand mixer until the mix becomes foamy. Add the lemon zest and the vanilla extract.
  • In another bowl mix the flour, the baking powder, and salt. Then add the liquid mix from the other bowl and mix just enough to blend the flour.
  • Add the milk and mix.
  • Pour the batter into a buttered round cake pan (9-inch diameter).
  • Sprinkle evenly all the nuts and raisins.
  • Cut the apple in two, then slice each half apple into thin slices, leaving 1/4 inch at the bottom unsliced (like the Hasselback Potatoes). Place the apples evenly by sinking them lightly into the batter.
  • Bake for about 40 to 45 min depending on your oven or until the tip of a knife comes out clean when inserted.

1 cup canola oil
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt and baking powder; gradually beat into oil mixture. Stir in apples. Transfer batter to prepared pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes. Run a knife around sides and center tube of pan. Remove cake to a wire rack to cool completely. Dust with confectioners' sugar.

  • 1. Beat oil, sugar and eggs until sugar is dissolved.

1 cup all-purpose flour, spooned into measuring cup and leveled-off
1 teaspoon baking powder
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
⅔ cup granulated sugar, plus more for sprinkling over cake
2 large eggs
1 teaspoon vanilla extract
3 tablespoons dark rum
2 baking apples, peeled, cored and cut into ½-inch cubes (I like Honeycrisp, Fuji or Granny Smith) (3½ - 4 cups chopped)
Confectioners' sugar (optional), for decorating cake

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. If using a regular cake pan, line the bottom of the pan with parchment paper and grease again.
  • In a small bowl, whisk together the flour, baking powder and salt.
  • Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Don't worry if the batter looks grainy at this point; that's okay. Add the flour mixture and mix on low speed until just combined. Using a rubber spatula, fold in the chopped apples.
  • Scrape the batter into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack in the pan. Once cool, run a blunt knife around the edges of the cake. If using a springform pan, remove the sides. If using a regular cake pan, carefully invert the cake onto the rack, remove the parchment paper, then gently flip the cake over and place right-side-up on a platter. Using a fine sieve, dust with confectioners' sugar (if using). Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
  • Freezer Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it tightly with aluminum foil or freezer wrap. Thaw overnight on the countertop before serving.

  • Bring to a boil and cook gently (not a hard rolling boil) for 5 minutes.
  • Add vanilla; stir, and pour over cooled cake.
