Steps:
- Drain olives and place them on a paper towel to dry.
- In a small bowl, combine butter and sharp cheddar with a wooden spoon. Add flour, paprika, kosher salt, and black pepper. Mix as well as you can with the wooden spoon, and then finish by combining with your hands. It will turn into a moist, dense dough that can easily be formed into a ball.
- With a small scoop, portion out 18 balls of tightly packed dough. My small scoop holds a little more than 2 teaspoons of dough when tightly packed. Roll each portion into a ball and place it in the palm of one hand. With the thumb of your other hand, press the dough ball to flatten it. Place an olive in the center of the flattened dough and mold the dough up around the olive. Give it a gently roll between your palms to finish. Place two inches apart on ungreased baking sheet - this 10" x 15" rimmed pan works perfectly. Cover and refrigerate for 1 to 2 hours.
- Heat oven to 400° F. Bake for about 15 minutes, until lightly browned. Let cool on pan for 5 to 10 minutes before serving. These are best when eaten while still warm. Serve with homemade buttermilk ranch if you like to dip!

AUNT NANCY'S BLUE CHEESE BALL (KICKED UP )
This is a recipe from my Aunt Nancy. Every Christmas we would gather at her house and she would have this awesome cheese ball. When I got married and had a family of my own, I asked her for her recipe. I touched it up with some red and green peppers. I love this cheese ball! its my all time favorite.

Steps:
- Lay the olives on a paper towel-lined plate and gently pat them dry.
- Slice a small piece of cream cheese about 1/4 inch thick and place 1 olive in the center of the slice. Wrap the cream cheese around the olive and roll it between your hands so it is completely covered and forms a smooth ball. Repeat until all of the olives are covered in cream cheese.
- Mix the walnuts and parsley in a bowl or shallow dish. Roll each ball in the mixture to completely coat. Refrigerate the coated olives, uncovered, until chilled, at least 1 hour. These can be made a day in advance.
- Slice in half before serving.
AUNT ANNIE'S CHEESE BALL
I'm asked to bring this to every family function. This is my great aunt's recipe and when she could no longer make it, I took over. I hope you enjoy it as much as we do. You can use low-fat or fat-free cream cheese for this, but it will not get hard and form a ball. If you make it with low-fat ingredients, place the mixture in a bowl or decorative crock and top with crushed pecans. Cook time does not include chill time.

AUNT FRANCES' CHEESE BALL
Delicious spread for appetizers or a quick snack. I like these best served on club crackers. (The easiest way to chop the olives is in a food processor or blender.)

AUNT LORI'S CHEESE BALL PINWHEELS
Aunt Lori always has the best cheese ball. Instead of serving it in traditional cheese ball style she would spread it in flour tortillas, roll them & cut them in to pinwheel slices. Much easier when you are on the go with them.

AUNT SUE'S SMOKY CREAM CHEESE CHEESE BALL
A family favorite for years and years: it's just not Christmas/New Years/Easter without Aunt Sue's cheese ball. She borrowed the recipe from a co-worker at the telephone company YEARS ago and has adopted it as her own. Easy. Quick. DELISH. If you want a fancier version, use cream cheese, worchester, accent, green onions....but substitute proscuito for the beef and add chopped roasted red peppers and minced black olives.

AUNT NANCY'S FAMOUS HOT CHEESE DIP
This has been my go-to potluck recipe for years! I'm not allowed to enter my friend's parties without it! It's always gone by the end of the night. It's super easy to make, and only dirties one dish. The flavor of the onion and green chilies with the cheese is mild yet savory. Serve with tortilla chips or Doritos.
