THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- Finely chop the onion. Seed and finely dice the green pepper.
- In a bowl, combine the Worcestershire sauce, mustard, water, brown sugar, and tomato sauce.
- Place a large skillet or dutch oven over medium/high heat. Add olive oil and ground beef. Saute the beef for about 5 minutes until cooked through and longer pink, breaking it up with a spatula. Season with salt and pepper and add in the diced peppers and onion. Cook another 5 minutes until the veggies are tender and beef is browned.
- Add the minced garlic and saute 30 seconds until fragrant, stirring constantly. Add in the sauce and bring to a light boil. Reduce heat to low and simmer uncovered for about 10 minutes. Season to taste with salt and pepper and serve on toasted buns for Sloppy Joe Sandwiches.

- Mix water, curry ketchup, tomato powder, Worcestershire sauce, coconut sugar, garlic powder, salt, and pepper together in a small bowl. Set aside.
- Heat avocado oil in a large skillet over medium-high heat and add mushrooms and onions. Cook until vegetables begin to soften, about 5 minutes. Sloppy joes seems to be one of those foods that each family has their own special recipe. This is my sister's recipe. I like it because it is made from common ingredients that I always have in the kitchen and it can easily be changed. You want sweeter..add more sugar. You don't like peppers,leave them out. It is a simple basic recipe, play with it and make it your own individual recipe.
