AUSTRALIAN HASTY PUDDING
Taken from the Epicure section of The Age newspaper, which in turn was taken from a grandmothers recipe book, this is an absolutely fast and delicious dessert best served with cream or ice-cream. You can substitute the golden syrup for some other sugar syrup like honey or maple but it will be a LOT sweeter.

Steps:
- Preheat oven to 180°C.
- Melt butter, add sugar and egg. Beat briskly then add flour, and then milk. Beat to batter consistency.
- Pour golden syrup into a buttered/greased small pie dish (my Granny used an old enamel baking dish that holds about two cups of liquid - it's important the dish is not too shallow and the batter not spread too thinly) and allow to settle, then pour batter on top of golden syrup.
- Bake for about 25-30 minutes. It should have a crisp, golden crust (almost biscuit-like) and a soggy bottom. Spoon straight from pie dish into bowls and serve with ice-cream or cream and a little extra golden syrup.

This is a quick, yummy recipe that makes it's own hard sauce. Serve it with real cream. It's an old German recipe my family has made for many holidays.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking dish.
- In a medium bowl, mix together brown sugar, boiling water, vanilla, and butter. Pour into prepared baking dish.
- In a clean bowl, mix together white sugar, flour, milk, baking powder, nuts, and raisins. Drop by spoonfuls on top of the mixture in the baking dish.
- Bake in preheated oven for 30 minutes. Serve warm.

HASTY PUDDING
Hasty pudding is a pudding or porridge grain cooked in milk or water; it's closest American cousin is the famous grits of the South. The North American version, also known as corn mush or Indian mush, in its simplest form is corn meal cooked slowly in water until it thickens. It may be eaten hot, or left to cool and solidify. Slices of the cold pudding may then be fried. Hasty pudding was once a popular American food because of its low cost, long shelf life, and versatility, and was eaten with both sweet and savory accompaniments, such as maple syrup, molasses, or salted meat. Hasty pudding, itself, is memorialized in a verse of the early American song Yankee Doodle: Fath'r and I went down to camp Along with Captain Goodin', And there we saw the men and boys As thick as hasty puddin' The directions in this recipe call for long slow cooking (thus making the name a misnomer), but these days the slow-cooker might be a good alternative way to go. - Make a paste of the corn meal and cold water, stirring until there are no lumps and pour gradually into the boiling water.
- Stir until very thick.

- 1. Put the cornmeal in a bowl and add 1cup of cold water.. In a heavy saucepan bring 3 cups of water, and 1/2 teaspoon of salt to a boil. Carefully stir in the cornmeal mixture, making sure it does not lump. Cook over low heat, stirring occasionally,for 12 to 15 minutes. Serve pudding with a pat of butter ( Oh! go ahead LOTS,of butter) and the sweetener of your choice, or cream.

TRADITIONAL AUSTRALIAN SUMMER PUDDING
A visually stunning and totally scrumptious pudding, this traditional Australian summer pudding is made when berries are at their peak; and it is served cold with Cardamom Cream. Blackberries, raspberries, strawberries, blueberries, blackcurrants, redcurrants: the ratios are unimportant. What I've indicated below in the ingredients is but one possible berry combination. It was easier than trying to get Zaar to recognise all the possible alternative ingredients! Vary the ratios to suit your taste preferences and, of course, depending on what is available. What is important is that overall you have 1 kilo of berries (Australian): 2 pounds of berries (American) or 910g of berries (Canadian). A variety of berries will naturally make for a more interesting flavour combination. The preparation and cooking time does not include the overnight chilling time. Because it is a dessert that needs that overnight chilling, it can of course be made totally ahead of time! I have adapted this recipe from the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'.

- Cut a large round from one of the slices of bread to fit in the bottom of a six-cup pudding bowl or basin. Cut the remaining slices in half and use to line the sides of the bowl, overlapping the slices slightly and trimming where necessary. Once you have finished lining the bowl, you should have enough bread left over for the top.
- Put the redcurrants, blackcurrants and blueberries in a saucepan with the sugar, lemon juice, water and kirsch (if using) and heat gently until the sugar has dissolved and the juices start to flow from the berries. Add the remaining fruits - the blackberries, raspberries and strawberries - and heat gently for 5 minutes or until the berries have just softened. Remove from the heat.
- Spoon the fruit and juice into the lined pudding bowl and cover with the reserved bread, then cover with plastic wrap. Stand the bowl on a plate or small plastic tray to catch any juices. Place a small, flat plate on top of the pudding and add some extra weight, ideally about 1 kilo. Two tubs of margarine would do the job! Chill the pudding overnight.
- When you are ready to serve the pudding, remove the weights and the plate and plastic wrap, and using a palette knife, gently loosen it from the sides of the bowl. Invert the pudding onto a plate, preferably one with a small lip, to retain the juices and keep them on the plate. Shake gently to release the pudding, decorate with extra fruit around the base of the pudding and serve the pudding with cardamom cream.
- Cardamom Cream: Mix together the cardamom seeds and the cream and chill for two hours.
- Chef's Tip: To prevent gaps appearing in the bread as you line the bowl, trim the sides of each slice at an angle so that the slices fit more easily around the bowl.
