1 pound boneless fish fillets, cubed
½ cup all-purpose flour
2 tablespoons oyster sauce
2 tablespoons sweet chili sauce
1 teaspoon fish sauce
1 teaspoon brown sugar
¼ cup chopped fresh cilantro
4 green onions, sliced
1 egg
all-purpose flour
oil for frying

Steps:

  • Combine fish, 1/2 cup flour, oyster sauce, sweet chili sauce, fish sauce, brown sugar, cilantro, green onions, and egg in a food processor. Process until well combined. Refrigerate for 30 minutes.
  • Shape mixture into patties, and dust with flour.
  • Pour enough oil into a heavy skillet to fill the pan with 1/2 inch of oil. Heat over medium-high heat until hot. Fry fish cakes for 8 minutes, turning once, or until golden brown.

Recipe video above. These taste JUST like the Thai Fish Cakes from your favourite Thai restaurant! They should be firm but bouncy, almost a spongey texture, well seasoned, golden brown and with lovely complex flavours from the red curry paste and other seasonings.

1 lb / 500g white fish fillets (, skinless and pin boned, cut into chunks (Note 1))
3 tbsp red curry paste ((Note 2))
1 tbsp cilantro/coriander leaves (, chopped)
1 tbsp fish sauce ((sub soy sauce))
1 tbsp lime juice
1 egg
1/4 cup (40g) rice flour ((or cornstarch / corn flour))
6 green beans (, finely sliced (optional, Note 3))
4 - 6 tbsp oil ((vegetable, canola, sun flower))
Sweet chilli sauce
Cilantro/coriander leaves
Lime wedges

Steps:

  • Place fish, red curry paste, cilantro/coriander, fish sauce, lime and egg in a food processor. Whizz until the fish is minced and it looks like a paste. (See video)
  • Transfer to a bowl and stir through rice flour and green beans until flour is all incorporated. (Note 4)
  • Measure 1/4 cup of mixture (I use an ice cream scoop - Note 5), form 1cm / 2/5" thick patties.
  • Heat enough oil in skillet over medium high heat to cover the base (4 tbsp or so)
  • Place in oil, cook 2 minutes until deep golden brown, then turn and cook the other side for 2 minutes. Transfer to paper towel lined plate.
  • Repeat with remaining mixture, adding more oil into the skillet if required.
  • Serve with Sweet Chilli Sauce, garnished with cilantro/coriander leaves and lime wedges on the side. Add a side of Thai Fried Rice or even just plain jasmine rice to make a meal!

Using authentic ingredients, these fried, curried Thai fish patties are served with a refreshing cucumber sauce. Make your own and have people raving how good it is and how your Thai fish cakes burst with authentic flavor. You will need a blender/food processor (better) or mortar and pestle. We use coconut oil but you can substitute to make an amazing sauce with your Asian fish cakes.

1 lb fish portions (white boneless fillets (blended))
1 egg
3 tbsp flour, tapioca (or corn starch)
1 1/2 tbsp fish sauce
3 tsp palm sugar
3 tbsp curry paste, red (click on the ingredient for the recipe)
4 kaffir lime leaf (shredded as thinly as you can manage)
7 ozs beans, long (sliced thinly, cross-wise)
1 cup coconut oil (for frying)
1/2 cup white vinegar
1/2 cup sugar
1 cup cucumber, lebanese (sliced thinly)
1/2 tsp chili powder
3 tbsp peanuts (roasted and ground)
1/4 cup cilantro (coriander) (leaves only, for garnish)

Steps:

  • In a small saucepan over low heat, warm the vinegar and sugar (do not boil). Stir until thick and well combined. Put aside and allow to cool. Add the cucumber, chili powder and peanuts and stir to combine. Place in a serving bowl and refrigerate until needed. Add the cilantro leaves as a garnish when serving.
  • Mix all the ingredients, except the cup of oil, until they are well combined.
  • Press small handfuls of the fish mixture into small discs. Wetting your hands with water will make this easier.
  • Heat the oil over medium low heat. Place the fish cakes into the hot oil and cook until golden brown, turning once. This should take about 3 minutes. I usually cook in 3 or 4 batches.
  • As the fish cakes are cooked, drain on paper towel. Serve with the cucumber sauce.

450g (1lb) skinless fish fillets (salmon, haddock, etc) cut into chunks
4 spring onions, finely sliced
1 red chilli, deseeded and finely chopped
2 tbsp Thai Taste Red Curry Paste
2 tbsp fresh coriander leaves
1 tbsp Thai Taste Palm Sugar
1 tsp Thai Taste Fish Sauce
1 tbsp fresh lime juice
50g (2oz) fine green beans, finely sliced
1 tbsp Thai Taste Rice Bran Oil, for frying
Dipping sauces
Lime wedges
Shredded spring onions

Steps:

  • Place the fish chunks, spring onions, chilli, curry paste, coriander, palm sugar, fish sauce, lime juice and a pinch of salt in a food processor and blend until finely minced.
  • Transfer to a bowl and stir in the sliced green beans.
  • Divide the mixture into 16 pieces, roll each one into a ball and then flatten into discs.
  • Transfer the fish cakes to a plate, cover with cling film and place in the fridge for 30 minutes to 1 hour to firm up
  • Heat the oil in a large frying pan and when very hot fry the fish cakes for about 1-2 minute each side, until golden brown and cooked through. Lift out and drain on kitchen paper, then serve with a selection of dipping sauces and a wedge of lime. Garnish with spring onions.

Steps:

  • Into a food processor put the garlic, ginger, lemongrass, spring onion, chilli, coriander and the tbsp oil. Pulse until it is well chopped up.
  • Add the fish, fish sauce, salt, lime zest, sugar and egg and whizz until it forms a smooth paste. Scoop out into a bowl and, using your hands, pick up the mixture and repeatedly through it against the side of the bowl. Do this for 3-4 minutes (this thickens and aerates the mixture). Chill the mixture for 15 minutes.
  • Shape into little patties and shallow fry for a few minutes on each side until golden and cooked through.
