1/2 pound bacon slices
4 plum tomatoes, halved lengthwise
Kosher salt
1 whole-wheat baguette, cut into 4 pieces and split open
4 tablespoons extra-virgin olive oil
1 clove garlic
Freshly ground pepper
2 avocados, halved, pitted and thinly sliced
1 cup frisee or other salad greens

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate. Season the cut sides of the tomatoes with salt.
  • Heat a grill pan over high heat. Brush the cut sides of the baguette with the olive oil and grill, cut-side down, until toasted, about 2 minutes. Rub the grilled sides with the garlic. Rub just the bottom halves of bread with the tomatoes until most of the juice is absorbed, then top with the tomato skins and season with salt and pepper.
  • Layer the avocado slices on top of the tomatoes, then add the bacon and frisee. Close with the bread tops.

You may never want to eat a plain BLT again! Avocados and fried eggs are the perfect complements to this open-face spin on a classic. Enjoy one for any meal of the day.

2 ripe avocados, halved, pitted and peeled
3 scallions, whites and light greens chopped

1 tablespoon fresh lemon juice
1/2 teaspoon crushed red pepper flakes
Fine salt and freshly ground black pepper
8 slices smoked bacon
1 tablespoon unsalted butter
4 slices sourdough or crusty white bread, cut 3/4 inch thick
4 large eggs
2 cups loosely packed mixed greens
Four 1/2-inch-thick slices tomato

Steps:

  • Mash the avocados in a medium bowl until chunky-smooth. Stir in the scallions, lemon juice, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper; set aside.
  • Cook the bacon in a large nonstick skillet over medium heat until crisp, about 4 minutes per side; transfer to a paper towel-lined plate. Remove and reserve all but 1 tablespoon of the drippings. Add the butter to the skillet, and swirl to melt and combine with the drippings. Dip both sides of each bread slice in the fat to coat, then cook until browned and crisp, about 2 minutes per side. Transfer the toasts to a cutting board. Raise the heat to medium-high. Add 1 tablespoon of the reserved drippings to the skillet, crack the eggs in a single layer, cover and fry until the whites are crisp at the edges but the yellows are runny, about 2 minutes.
  • Meanwhile, spread each toast with 1/4 of the mashed avocado, and transfer to a serving plate with a spatula. Top each toast with 1/2 cup of the greens, 1 tomato slice sprinkled with salt and pepper, 2 slices bacon and a fried egg, and serve with a fork and knife.

  • spread one side of each slice of bread evenly with mayonnaise.
  • spread half the number with mashed avocado.
  • then top with red onion.
  • place the chicken, bacon, lettuce leaves and tomato on top.
  • season with salt and pepper.
  • top with remaining slices of bread and serve immediately.

This is my favorite company salad, especially in nice weather. Good with dinner or brunch/lunch. It looks and tastes fantastic and my guests always ask for the recipe. I adapted it from Martha Stewart but it's amazingly easy. (Also, despite the richness of the bacon and avocado, I figured it as only 4 weight watchers points per serving for 6 servings, 6 pts for 4!) I love this salad and I hope you enjoy it, too.

Number Of Ingredients 11

8 slices bacon (I prefer thick-cut, hickory-smoked)
1 1/2 bags pre-washed organic field greens or 1 1/2 bags baby greens (enough to cover large shallow serving dish)
tomatoes or yellow tomatoes, of different sizes (I use roma, grape, and little yellow ones, again enough to cover dish)
salt & freshly ground black pepper
1 avocado, mashed
basil, to taste (fresh or dried)
garlic, to taste (minced or pressed)
1 dash lime juice
1 dash red wine vinegar
2 dashes olive oil
salt & freshly ground black pepper

Steps:

  • Cook bacon until crisp and drain strips on paper towel.
  • Make dressing by mixing mashed avocado through salt and pepper well; adjust ingredients to taste and desired thickness.
  • Arrange greens on platter and lightly salt and pepper.
  • Drizzle greens with half of the dressing.
  • Slice large tomatoes and halve small ones.
  • Arrange tomatoes on top of greens and dressing, biggest on the bottom.
  • Arrange whole bacon strips on top of tomatoes, drizzle with remaining dressing, add salt and pepper to taste, and serve at once!

Spread
1 extra ripe avocado
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Sandwich
8 slices turkey bacon
8 slices whole-wheat bread
8 leaves romaine lettuce
2 medium tomatoes, cut into 12 slices
1 small red onion, thinly sliced

Steps:

  • Combine spread ingredients in a bowl. Mash until smooth and set aside. Prepare bacon as directed on package; drain thoroughly on paper towels. Toast bread. Place 4 slices on 4 plates. Spread an equal amount of avocado spread on each slice. Top each with 1/4 of the bacon, lettuce, tomato, and onion. Cover each with another slice of toast. Cut sandwiches in half and serve immediately.
