10 -12 ounces Baby Spinach, well cleaned and dried
4 -5 garlic cloves, sliced thin
1 -2 tablespoon olive oil
kosher salt
fresh grated nutmeg (optional)

Steps:

  • Heat oil In a large lidded sauce pan over a medium heat.
  • Add garlic and toss (or stir) until it just starts to turn color.
  • Remove from heat and IMMEDIATEY add spinach.
  • Toss with a set of tongs to coat the spinach with oil/garlic.
  • Salt to taste, some folks like it with a just a bit of fresh grated nutmeg.
  • Cover and let sit for a couple minutes, toss again and serve.
  • It should just be slightly warmed and retain it's crunch.

Steps:

  • In tightly covered container, shake all dressing ingredients.
  • In large bowl, toss dressing and remaining ingredients except nuts. Sprinkle with nuts.

Spinach salad with a simple dressing made from lemon juice & olive oil topped with cheese, walnuts, and cracked black pepper.

5oz baby spinach
1 tablespoon lemon juice
3 tablespoons olive oil
1/3 cup grated parmesan or Romano cheese
2 tablespoons diced walnuts
fresh ground black pepper

Steps:

  • Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
  • Meanwhile add the spinach to a large bowl and drizzle with lemon juice and olive oil.
  • Toss the spinach to coat in the lemon juice and olive oil. Add cheese, walnuts, and a dash of freshly cracked pepper. Toss again and serve immediately.

3 tablespoons extra-virgin olive oil
4 slices thick-cut bacon or 4 slices pancetta, chopped
3 shallots, thinly sliced
2 cloves garlic, chopped
3 tablespoons sherry vinegar
2 pounds triple washed spinach, stems removed
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
4 hard-boiled eggs, quartered lengthwise
Parmigiano-Reggiano, for topping

Steps:

  • Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

This easily adaptable salad can be tweaked to suit your guests' taste

3 tbsp olive oil
1 garlic clove , peeled but left whole
8 rashers smoked back bacon , chopped into large pieces
1 small baguette loaf (about 125g), cut into bite sized pieces
4 eggs
200g pack fine French bean , trimmed
140g mild blue cheese , crumbled into chunks
200g bag baby spinach , washed if necessary
2 tsp Dijon mustard
2 tbsp red wine vinegar
6 tbsp extra-virgin olive oil

Steps:

  • For the dressing, whisk the mustard and vinegar together with some salt and pepper and 1 tbsp of water. Whisk in the extra virgin olive oil and set aside.
  • Heat the olive oil in a large frying pan over a lowish heat and add the garlic and the bacon. Cook the bacon slowly until starting to sizzle, then add the bread to the pan and toss in the bacon juices. Fry everything together slowly (this can take a good 15 mins) until the bacon is ultra-crisp and the croûtons are crunchy, drizzling the pan with a little more oil if it becomes dry. Once cooked, fish out the garlic clove and set the pan aside.
  • While the bacon is cooking, tip the eggs into a pan of boiling water and boil for exactly 7½ mins. Cool in cold water, then peel and set aside. Cook the beans in a pan of heavily salted boiling water for 5 mins or until slightly crunchy but still bright green. Drain, tip into a pan of ice-cold water, then drain again and set aside.
  • To serve, tip everything except for the eggs and dressing into a large bowl. Drizzle over the dressing and toss gently with your hands. Scatter the salad over a serving platter, halve the eggs and strew over the salad, seasoning the yolks with sea salt flakes and a grind of black pepper.

This Spinach and Kale Salad with Honey Dijon Vinaigrette has been my family's favorite! It's a great spin on a traditional spinach salad.

About 8 cups baby spinach and baby kale combined
4 hard boiled eggs (peeled and chopped)
1 avocado (cubed)
4 small (ripe tomatoes, quartered)
1/4 medium red onion (sliced)
4 ounces feta cheese (crumbled)
4 tablespoons roasted sunflower seeds
4 tablespoons hulled hemp seeds
Honey Dijon Vinaigrette
2 tablespoons Dijon mustard
2 tablespoons honey
1/4 cup apple cider vinegar
1 clove garlic (minced)
1/2 teaspoon fine sea salt
1/4 teaspoon ground black pepper
1/2 cup extra virgin olive oil

Steps:

  • Either on a large serving platter or divided onto four dinner plates, arrange the spinach and kale and top with the remaining ingredients, up to the hemp seeds.
  • In a small bowl or in a jar with a tight fitting lid, combine the dressing ingredients and either whisk or shake until emulsified.
  • Top the salad with the dressing just before serving. Store any additional dressing covered in the fridge.

Steps:

  • Scrape seeds from papaya and coarsely chop enough seeds to measure 2 tablespoons. Discard remaining seeds, then peel papaya halves and slice.
  • Press ginger in a fine-mesh sieve or a garlic press into a small bowl to extract juice (about 1 teaspoon), discarding pulp. Whisk in chopped papaya seeds, onion, tarragon, garlic, mustard, lemon juice, salt, and pepper and add oil in a slow stream, whisking until emulsified.
  • Divide lettuce and papaya slices among 4 plates and drizzle with dressing.

  • Combine the vinegar, shallot, sugar, mustard and Worcestershire sauce in a blender. Blend the mixture thoroughly. With the blender running on low speed, add the oil and blend until emulsified. Add the papaya seeds and blend until they are coarsely chopped. Season with one-fourth teaspoon salt, or to taste.
  • Toss the salad with half the dressing. Add more to your taste. Sprinkle with the cashews and serve.

  • Clean peeled and deveined shrimp by rinsing in lemon water. Pat dry and season with salt and black pepper to taste. Add garlic powder and oil and set aside to marinate for 15 - 20 minutes.   • To make the dressing, in a small bowl, whisk together sherry or fig vinegar, 1/2 teaspoon of lemon juice, salt and black pepper to taste and slowly add oil and continue to whisk constantly until smooth. Add additional seasoning if necessary.
