Steps:
- Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
- Meanwhile add the spinach to a large bowl and drizzle with lemon juice and olive oil.
- Toss the spinach to coat in the lemon juice and olive oil. Add cheese, walnuts, and a dash of freshly cracked pepper. Toss again and serve immediately.

Steps:
- Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

Steps:
- For the dressing, whisk the mustard and vinegar together with some salt and pepper and 1 tbsp of water. Whisk in the extra virgin olive oil and set aside.
- Heat the olive oil in a large frying pan over a lowish heat and add the garlic and the bacon. Cook the bacon slowly until starting to sizzle, then add the bread to the pan and toss in the bacon juices. Fry everything together slowly (this can take a good 15 mins) until the bacon is ultra-crisp and the croûtons are crunchy, drizzling the pan with a little more oil if it becomes dry. Once cooked, fish out the garlic clove and set the pan aside.
- While the bacon is cooking, tip the eggs into a pan of boiling water and boil for exactly 7½ mins. Cool in cold water, then peel and set aside. Cook the beans in a pan of heavily salted boiling water for 5 mins or until slightly crunchy but still bright green. Drain, tip into a pan of ice-cold water, then drain again and set aside.
- To serve, tip everything except for the eggs and dressing into a large bowl. Drizzle over the dressing and toss gently with your hands. Scatter the salad over a serving platter, halve the eggs and strew over the salad, seasoning the yolks with sea salt flakes and a grind of black pepper.

- Clean peeled and deveined shrimp by rinsing in lemon water. Pat dry and season with salt and black pepper to taste. Add garlic powder and oil and set aside to marinate for 15 - 20 minutes. When ready, remove from marinade. On a heated griddle or a hot frying pan, roast each shrimp 2- 3 minutes on each sides
- In another small bowl, place sliced onion, red wine vinegar, salt and sugar. Mix well and let stand for about 30 minutes so the slices of the onion can soften. Drain liquid before serving.
- To roast the beets, cut both end and wash to remove any dirt. Dry beets, and with a knife carefully create a few non-deep slit onto the skin. Place beets in a large piece of aluminum foil paper. Drizzle a small amount of oil on top of each beet and sprinkle salt. Close tight and place on a baking sheet. Roast in an 415 degree Fahrenheit oven for 40 to 45 minutes. Remove and let cool before removing skin and slicing.
- To make the dressing, in a small bowl, whisk together sherry or fig vinegar, 1/2 teaspoon of lemon juice, salt and black pepper to taste and slowly add oil and continue to whisk constantly until smooth. Add additional seasoning if necessary.
