MARIA'S PORTUGUESE BACALAU



Maria's Portuguese Bacalau image

This is a traditional Portuguese dish that brings back memories of mom. It is not only tasty but it is always a hit at parties. Plan ahead, because the salted cod needs to soak for 24 hours.

2 pounds dried salted cod fish
4 Yukon Gold potatoes
3 tablespoons butter
2 yellow onions, thinly sliced
2 cloves garlic, chopped, divided
½ cup chopped fresh parsley, divided
¾ cup olive oil
1 ½ teaspoons red pepper flakes
freshly ground pepper to taste
4 hard cooked eggs, chopped
10 pitted green olives
10 pitted black olives

Steps:

  • Soak the dried salted cod in cold water for 24 hours, changing the water several times.
  • Bring a large pot of water to a boil. Add the soaked cod, and boil for about 5 minutes, or until fish flakes easily with a fork. Remove cod from water, and save water for cooking potatoes. Remove skin and bones from the cod, and flake the meat into pieces using a fork. Set fish aside in a large bowl.
  • In a small bowl, stir together the olive oil, 1 clove of garlic, 1 tablespoon of parsley, red pepper flakes, and black pepper. Pour over the fish, and toss lightly to coat.
  • Preheat the oven to 350 degrees F (175 degrees C). Place the potatoes into the fish water, and bring to a boil. Cook for 20 minutes, or until tender. Drain under cool water, peel and cut into 1/4 inch slices.
  • While the potatoes are cooking, melt the butter in a large skillet over medium heat. Add the onions, and saute until golden and caramelized. Stir one clove of garlic into the onions. Set aside.
  • Layer half of the potato slices in the bottom of a greased 8x11 inch baking dish. Cover with half of the cod, then half of the onions. Repeat layers, ending with onion.
  • Bake for 15 minutes in the preheated oven, until lightly browned. Before serving, garnish the top with green and black olives, and hard-cooked eggs. Sprinkle with remaining parsley.

1 1/2 pounds 1 1/2 pounds salt cod
1/2 cup plus 1 teaspoon olive oil
2 cups thinly sliced yellow onions
1 tablespoon chopped garlic
Salt
Freshly ground black pepper
2 pounds waxy potatoes, sliced 1/4-inch thick and cooked until tender
4 hard boiled eggs
8 black olives
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • Soak the cod in cold water to cover for 24 to 36 hours, changing the water occasionally, drain. Flake the cod into small pieces, removing any bones. Set aside. In a large saute pan, over medium heat, add 1/4 cup of the oil. When the oil is hot, add the onions and the garlic. Season with salt and pepper. Saute until slightly golden, about 6 minutes. Preheat the oven to 350 degrees. Grease a medium ovenproof casserole dish with 1 teaspoon of olive oil. Season the potatoes with salt and pepper. Spread half of the potatoes over the bottom of the prepared dish. Sprinkle half of the salt cod over the potatoes. Place half of the onion mixture over the salt cod. Top the onion mixture with more salt cod. Place another layer of potatoes over the top of the cod. Drizzle the entire pan with the remaining 1/4 cup of oil. Place in the oven and bake for 30 to 40 minutes, or until golden. Place on a serving platter. Garnish with the sliced eggs, olives, and parsley.

Bacalhau com natas (literally "cod with cream") is a popular way of cooking salted cod (bacalhau) in Portugal. It is an oven-baked dish consisting of layers of bacalhau, onion, diced fried potato and cream. Use of dairy such as cream or cheese is not common in traditional Portuguese main courses, however the popularity of this dish-in households and restaurants-make it a classic. The origin of this dish is unclear, but a similar one using cod and cream was invented by chef João Ribeiro in the 1930s.

500 g Cod (Bacalhau)
6 potato
2 Onion
3 teeth garlic
200 ml Cream
200 ml Milk
Nutmeg
olive oil
Pepper
Salt

Steps:

  • If the cod is still not cooked, bake cod until ready, then takes the bones and skins apart in big chunks.
  • Start by cooking the potatoes I personally do not care much for the shell. But you can peel the potatoes and bring to bake in warm water until they are good. No need to cook too because then how will the oven may end there is still need of a minutes to be in point.
  • However in a frying pan put the onion cut into thin slices with a little olive oil with crushed garlic cloves and let it cook until the onion browned. After joining the cod, test and rectifies with salt and pepper.
  • Joins the prepared milk and cream and a tablespoon of butter and a pinch of nutmeg and let the sauce thicken a little, test to see if you need to adjust, as is the taste, remove from heat.
  • Strain out the potatoes and cut them into cubes and pour with the cod mixture and involves well. Then put it on a tray or baking dish to bring to a preheated oven hot to about 200ªC enough only for browning the top and is ready!

  • Gently rinse the salt cod under cold water to remove any surface salt. Soak overnight in cold water (12 to 18 hours) in the fridge, changing the water twice. Drain the fish, gently rinse again under cold water, then pat dry with paper towels. Shred the fish into bite-sized strips.
  • Using a cheese grater or the grater attachment of a food processor, grate the potatoes into shreds. Soak in cold water for 5 minutes, then drain and rinse thoroughly and pat dry with paper towels.
  • Warm the lard or duck fat in a large skillet on medium-high heat until shimmering. Add half of the potatoes and pan-fry, stirring often to keep the potatoes from sticking together; remove with a slotted spoon when they turn golden brown, about 5 minutes, and set aside to cool on paper towels. Repeat this process with the other half of the potatoes. Reduce heat to medium and discard all but 1 tablespoon of the cooking fat.
  • Add the chopped onion and saffron to the skillet and sauté until the onion is translucent, about 5 minutes. Add the fish and pepper; gently stir to combine. Allow to sauté until the fish is softened, 3 to 5 minutes.

  • Soak the salted cod fish (bacalhau) overnight in water. Change water twice during this process (I usually change it once in the evening and again first thing in the morning).
  • Par-boil the bacalhau: fill a large pot with water. Add the garlic cloves, bay leaf and a teaspoon or 2 of olive oil and bring the water to a boil. Turn the flame off, submerge the bacalhau in the water and cover with a lid. Let the bacalhau sit in the hot water for 15 minutes. Drain the water and transfer the bacalhau to a large bowl to cool. Once the bacalhau has cooled slightly, break it into flakes using your fingers. Move on to steps 3 and 4.
  • Prepare the eggs by placing them in a small pan, and filling the pan with water. Add the baking soda and bring the pan to a boil. Once it reaches a boil, turn the flame off, and cover the pan. Let the eggs sit in the boiling water for 12 minutes. Drain the hot water and transfer the eggs to an ice-bath. Keep the eggs in the ice-bath until you're ready to use them. Keep the water as cold as possible, by adding more ice cubes to the bath at any time.
  • Peel and slice the potatoes into 1/4-inch thick rounds. Cover them in salted water in a large saucepan and boil them until they are tender, but not too soft (about 15 minutes). Drain the potatoes and brush them with a little bit of olive oil and kosher salt. Cover them in plastic wrap until you're ready to assemble the dish.
