BACON AND HUMMUS BAGUETTE SANDWICHES
I found this in the UK cooking magazine called Olive but I have been making a variation of this on my own for a while now. I love hummus and wondered how it would go with bacon and I ended up being pleased with the results. I have also done this with turkey bacon when I wanted to drop the calories and fat a bit. Also, whenever possible I go for a reduced fat version of the hummus

Steps:
- Grill the bacon on both sides until crisp.
- Cut the baguette in half lengthways and spread generously with hummus.
- Fill with the bacon and cut into 8 sandwiches.

Steps:
- Preheat a panini press.
- Spread the bread slices with the jam, all way to the edges. Lay 3 strips of bacon on 4 of the bread slices, breaking the strips as needed to fit the bread. Top with the remaining bread slices, jam-side down. Butter both sides of the sandwiches and sprinkle with the Parmesan.
- Place the sandwiches on the panini press and cook until golden brown and the cheese is crispy, 2 to 3 minutes. Cut the sandwiches into 4 triangles and serve.
ENGLISH BACON SANDWICH

- Preheat the oven to 400 degrees F.
- Line a sheet pan with parchment paper and place a baking rack on the sheet pan. Arrange the bacon in one layer on the baking rack. Bake for 25 minutes until it's deep golden and crispy. Transfer the bacon to a plate lined with paper towels.
- Toast the bread slices and slather them with butter.
- Arrange 4 slices of bacon on every other slice of bread and top with second slice of bread to make four sandwiches. Slice each sandwich in half diagonally and serve.
FRENCH EGG AND BACON SANDWICH
French Toast with egg and bacon in the center with maple syrup on top. Sprinkle with powdered sugar if desired.

- Dip bread slices in beaten eggs. Heat a lightly oiled griddle or frying pan over medium high heat. Cook until browned on both sides. Set aside but keep warm.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. Reserve 1 tablespoon of bacon grease in pan and fry remaining two eggs.
- Place one piece of French toast on each of two plates. Place the fried eggs on top of the bread, top the eggs with strips of bacon. Cover with the remaining pieces of French toast. Following that by pouring on the syrup.

THE GREAT BRITISH BACON BUTTY - BACON SANDWICH
The news is out - scientists at my old university, (Leeds University in West Yorkshire) have discovered the PERFECT way to make a "Bacon Butty", that quintessential British sandwich, and they have devised a mathematical formula for it!! The bacon butty is one of my FAVOURITE sandwiches of all times.......especially when doused in HP Sauce or Worcestershire Sauce! Here is my method - it's hardly a recipe, more of an idea and an assembly job! I have posted their mathematical formula at the end of the recipe - my formula is: Eat your bacon butty whilst it's still hot and crispy!! Please increase the quantities as needed. I like to use smoked bacon, but any good quality dry cure bacon will be fine.

Steps:
- Cook the bacon under a preheated oven grill for seven minutes at about 240C/475F - turning half way through the cooking time.
- Cook until crispy, but not burnt or too dry.
- (You can also fry the bacon in a pan if you wish).
- Butter the two slices of bread and place the grilled or fried bacon inside the two slices of bread to make a sandwich.
- Add sauces to taste.

- Grab a large handful of the watercress, roughly snap off the large stalks, then put into a mini blender or food processor (or use a hand blender) with the crème fraîche and a good squeeze of lime juice. Whizz until the watercress is finely chopped, then season with pepper and chill until ready to assemble.

- Spread about 1 tablespoon of the goat cheese mixture on the top half of each ciabatta roll.
