Loaded Mashed Potatoes with Bacon image

Mashed potatoes that could be a meal. Hardy, filling, and savory. I started making mashed potatoes this way mainly for my daughter who loves loaded baked potatoes. The first time I tried this was because we were having company for dinner and I was running low on potatoes. It was the hit of the dinner. About a year after I started making them this way, we went to a restaurant that had a similar offering. My daughter said mine was still better.

1 pound turkey bacon
6 Yukon Gold potatoes, peeled and chopped
1 (16 ounce) container sour cream
1 (8 ounce) package shredded sharp Cheddar cheese
4 green onions, chopped
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Lay bacon strips in a single layer on the prepared baking sheet.
  • Bake in the preheated oven until browned and crisp, about 15 minutes. Drain bacon slices on paper towels. Leave oven on.
  • While the bacon is cooking, place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain, place in a large mixing bowl, and mash with a fork or potato masher.
  • Chop bacon and add to potatoes. Stir in sour cream, Cheddar cheese, green onions, salt, and pepper until well mixed. Transfer to a large casserole dish.
  • Bake until potatoes are heated through and cheese is melted, about 45 minutes. Re-mix to blend cheese throughout and serve hot.

4 Idaho potatoes, peeled and quartered
1 red onion, quartered
3 garlic cloves
6 sage leaves, finely chopped
2 eggs
4 tablespoons all-purpose flour
Salt and freshly ground black pepper
Vegetable oil, for frying

Steps:

  • Special Equipment: Food Processor
  • In a large cast iron skillet over medium heat, cook bacon until crispy. Remove to a paper towel-lined plate. Discard bacon fat in the pan. In a food processor fitted with the grater attachment, push potato, onion and garlic through the grater. Remove mixture to a towel and squeeze out excess liquid. Place potato mixture in a large bowl and mix in sage, eggs, flour, cooked bacon and salt and pepper, to taste. Fill the skillet with 1/4-inch of vegetable oil and heat until it ripples. Once the oil is preheated, form potato cakes, measuring roughly 3 inches in diameter, and add to the pan. Continue forming patties, working in batches. Cook pancakes until crispy and nicely browned, pressing down on the pancakes periodically to flatten, about 2 minutes per side. Remove to a paper towel lined plate. Keep cooked pancakes warm in a preheated 275 degree F oven while remaining pancakes cook.

2 lbs potatoes, sliced in half lengthwise then crosswise to form paper-thin half circles (unpeeled)

  • In a large skillet, melt butter over medium low heat. Stir in onion and garlic and cook until translucent (2-4 minutes).

2 to 3 14.5-ounce cans chicken broth
3 tablespoons butter
2 1/2 cups shredded smoked Gouda cheese
4 slices bacon, fried until crisp and drained
2 tablespoons finely chopped fresh sage
Salt
Freshly ground black pepper

Steps:

  • 1 Place the potatoes and enough broth to barely cover them in a large saucepan and bring to a boil
  • 2 Cover, reduce the heat to medium-low and simmer just until tender, 10 to 15 minutes
  • 3 Drain the potatoes, reserving the cooking liquid
  • 4 Return the potatoes and 1 cup of the cooking liquid to the pot and, using a potato masher or the back of a wooden spoon, mash until smooth
  • 5 Add the butter and gouda and stir until incorporated and melted; do not overmix
  • 6 If necessary, add more broth to attain the desired consistency
  • 7 Stir in the bacon, sage and salt and pepper to taste

  • Remove the bacon with a slotted spoon and place it on a paper towel to drain. Remove about 1 tablespoon of bacon fat from the skillet and set it aside in a bowl. To the same skillet, add the butter and heat it over medium heat. Add the sage leaves and cook until they are crispy, about 1 to 2 minutes per side. Remove them with a slotted spoon and place on a paper towel to drain.
  • At this point, the potatoes are most likely finished, so drain the thoroughly and add them back to the pot. Mash them with a fork or potato masher, then use a whisk or electric hand mixer to whip them. Once whipped, add in the reserved bacon fat, the milk, the bourbon and the brown butter. Whip the potatoes again until everything is combined. Taste the potatoes and add the salt and pepper, seasoning more or less if desired.
  • If serving the potatoes immediately, spread them in a dish and top them with the crispy bacon. Crumble the sage on top. If you’re waiting a bit to serve them, heat the oven to 325 degrees F and top the potatoes with the bacon.
