1 cup uncooked elbow macaroni
1 loaf (1 pound) frozen pizza dough, thawed
2 teaspoons olive oil
1/2 teaspoon dried rosemary, crushed
8 slices American cheese
1 package (8 ounces) shredded Velveeta cheese
2 cups shredded part-skim mozzarella cheese
3/4 cup shredded cheddar cheese
8 bacon strips, cooked and crumbled
1/4 teaspoon dried oregano

Steps:

  • Preheat oven to 400°. Cook macaroni according to package directions; drain., Press dough into a greased 14-in. pizza pan. Brush with oil; sprinkle with rosemary. Top with American cheese., Toss together shredded cheeses; sprinkle half of the mixture over pizza. Toss remaining cheese mixture with bacon, oregano and macaroni; distribute over top. Bake until crust is golden brown and cheese is melted, 35-40 minutes.

1 pound prepared pizza dough, at room temperature
All-purpose flour, for dusting
4 slices bacon, chopped
1 8-ounce can tomato sauce
2 tablespoons extra-virgin olive oil
1 clove garlic, grated
1/4 teaspoon dried oregano
Kosher salt and freshly ground pepper
1 cup shredded mozzarella cheese (about 4 ounces)
1 cup shredded white cheddar cheese (about 4 ounces)
1 tablespoon grated parmesan cheese

Steps:

  • Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. 1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

1-1/2 Tbsp bacon fat (reserved from bacon)
2 Tbsp flour
3/4 cup milk
4 cups shredded extra sharp cheddar cheese, divided
1/4 tsp ground mustard
1 tsp salt
1/8 tsp black pepper
1 cup dry elbow macaroni, cooked
1 lb pizza dough

Steps:

  • Preheat the oven to 400°F. Lay out the bacon slices in a single layer on a baking sheet. Cook the bacon until crisp, but still slightly underdone. Remove the bacon from the baking sheet and drain it on a paper towel-lined plate. Reserve the bacon fat for later use. Increase the oven temperature to 450°F. Set aside 6 whole slices of bacon and chop the remaining bacon. Add the flour and 1-1/2 Tbsp of bacon fat to a medium-size saucepan. Cook, while stirring, on medium heat for 30 seconds. Add the milk and bring to a simmer, stirring constantly. When the sauce begins to simmer, remove the pan from the heat and add 2 cups of the shredded cheese, mustard, salt, and pepper. Stir until all of the cheese has melted, returning the pan to the heat, if needed. Add the chopped bacon and the cooked macaroni to the cheese sauce and stir to combine. Set aside. Spray a 12" pizza pan with cooking spray. Spread the pizza dough out on the pan so there is about an 1-1/2" hanging over the diameter. Stuff the bacon into the crust by folding the dough over the bacon creating a 1/2" raised edge. Pinch the dough to seal the edge on the inside. Brush the crust with the reserved bacon fat. 1/3 cup all-purpose flour
1 teaspoon black pepper
1 teaspoon dry mustard
3 cups whole milk
1 cup whole buttermilk
1/3 cup unsalted butter, plus more for greasing dish
12 ounces extra-sharp Cheddar cheese, shredded (about 3 cups)
4 ounces Monterey Jack, provolone, or mozzarella cheese, shredded (about 1 cup)
2 large eggs, well beaten

Steps:

  • Preheat oven to 350°F. Bring 3 quarts water to a boil over high in a large stock-pot. Stir in pasta and 1 tablespoon of the salt, and return to a boil. 8 oz elbow macaroni
4 slices thick cut bacon
6 tbsp butter (separated)
4 tbsp all purpose flour
2 cups milk
1 tbsp hot sauce
1 tbsp dijon mustard
1/2 tsp salt
1/2 tsp black pepper
8 oz cream cheese
2 cups mozzarella cheese ((or Monterey Jack))
2 cups cheddar cheese
1 cup Panko bread crumbs
1/4 cup parsley (chopped (loosely packed))

Steps:

  • Preheat oven to 400°F. In a small bowl mix together 2 tablespoons of melted butter, Panko breadcrumbs and chopped parsley. Set aside.
  • In a large stock pot boil pasta in heavily salted water per package directions. Drain and toss with 1 tablespoon of olive oil to prevent sticking in a 9x9" square or a 13x9" pan coated with cooking spray. Set aside.
  • In a large skillet, render bacon until crispy and browned. Remove bacon and set aside to crumble. Keep bacon fat in pan. Add crumbled bacon to pasta, reserving some to top pasta at serving.
  • In same skillet with bacon fat add 4 tablespoons of butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.
  • Add the cream cheese and stir to melt in the sauce. Add the mozzarella and cheddar cheeses and stir to melt and incorporate. Sauce should be smooth.
  • Pour cheese sauce over pasta and bacon and stir to mix in completely. Top with breadcrumb mixture and bake uncovered for 20 minutes until top is golden brown and crunchy. This should be enough for 4 large servings or 6 as a side.

1/2 pound elbow macaroni ((about 1 1/2 cups))
6 slices bacon
2 Tablespoon butter
2 Tablespoons all-purpose flour
1 1/2 cups milk
3/4 cup half and half
1 1/2 teaspoons cornstarch
1/2 teaspoons dijon mustard
1 1/2 teaspoons chicken bouillon paste (, or bouillon powder)
1/4 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley flakes
1/2 teaspoon salt (, or more to taste)
1/4 teaspoon ground black pepper (, or more to taste)
2 cups freshly grated sharp cheddar cheese (*)
1/2 cup freshly grated parmesan cheese
1/2 cup Panko breadcrumbs (, or regular breadcrumbs)
1 Tablespoon butter (, melted)
1/2 Tablespoon olive oil

Steps:

  • Boil pasta according to package instructions, just until al dente. Don't overcook! Strain (don't rinse) and set aside.
  • Shred cheese and set aside to allow to come to room temperature.
  • Preheat oven to 350 degrees F. Lightly grease a 8x8 baking dish.
  • Cook bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove bacon to a plate lined with paper towels. Remove some, but not all of the grease from the pan and chop/crumble into pieces.
  • Make Cheese Sauce: Add 1 tablespoon butter to the pan and then whisk in flour. Cook, stirring, for 2 minutes. Reduce heat to low and gradually whisk in milk. Add the cornstarch to the half and half and whisk until smooth. Gradually add it to skillet followed by mustard, chicken bullion, onion powder, garlic, powder, parsley, salt and pepper. Cook sauce, stirring well, for a few more minutes, just until it begins to slightly thicken. Remove from heat and stir in shredded cheddar cheese. Taste and add additional seasonings, if needed.
  • Add bacon (reserve a handful to top at the end), and cooked pasta and toss to evenly coat in sauce. Pour mixture into 8x8'' baking dish. Sprinkle parmesan cheese on top.
  • Breadcrumb topping: Add panko, melted butter and olive oil to a skillet (or the saucepan used to cook the pasta). Cook over medium-high heat, stirring constantly, until the crumbs are golden brown. Evenly sprinkle over the mac cheese. Add remaining bacon crumbles on top.
  • Bake 15-20 minutes or until bubbly. Serve warm.
