Quick & easy! Only 3 ingredients required: bacon, a block of Cheddar cheese and jalapeno peppers. The men in my family are crazy about these yummy treats. In fact, my husband often eats them as a meal!

1 (16 ounce) package Cheddar cheese
6 jalapeno peppers, seeded and halved
12 slices bacon

Steps:

  • Preheat the broiler.
  • Cut Cheddar cheese into 12 slices long enough to fit inside the jalapeno halves. Insert cheese slices into the halves. Wrap the jalapeno halves with the bacon slices, securing with a toothpick, if necessary. Place on a medium baking sheet.
  • Broil 5 to 10 minutes, or until the bacon is evenly brown.

Number Of Ingredients 17

4 ounces cream cheese, at room temperature
1 cup shredded sharp cheddar cheese
1/2 cup shredded pepper jack cheese
2 ears corn, kernels removed from the cob
1/4 cup fresh cilantro, chopped
2 tablespoons chopped fresh chives
1-2 cloves garlic, minced or grated
kosher salt and black pepper
12 jalapeños, halved
6 slices thin-cut bacon
1/2 cup sour cream or plain Greek yogurt
1/2 cup fresh cilantro, chopped
2 tablespoons chopped fresh chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
juice from 1 lime

Steps:

  • 1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.2. In a bowl, combine the cream cheese, cheddar, pepper jack, corn, cilantro, chives, garlic, and a pinch each of salt and pepper. 3. Halve the jalapeños, then scoop out the seeds. Stuff each half with the cheesy corn mix, then wrap with 1 half slice of bacon. Place the jalapeños on the prepared baking sheet. Bake 20-25 minutes, until the cheese has melted. At the end of cooking, switch the oven to broil, broil for 1-2 minutes to crisp the bacon. 4. Meanwhile, make the ranch. Combine all ingredients in a glass jar and shake or stir until creamy. 5. Serve the poppers warm with cilantro lime ranch for dipping. Enjoy!

12 jalapeno peppers
1 package (8 ounces) cream cheese, softened
1-1/4 cups shredded sharp cheddar cheese
4 green onions, finely chopped
1/3 cup all-purpose flour
6 large egg whites, lightly beaten
1-1/2 cups panko bread crumbs
1/2 teaspoon salt
1/2 teaspoon pepper
LIME CILANTRO DIP:
2 cups sour cream
4 green onions, finely chopped
1/4 cup lime juice
2 tablespoons minced fresh cilantro
1/2 teaspoon garlic salt

Steps:

  • Cut jalapenos in half lengthwise and remove seeds. Place jalapenos on an ungreased baking sheet. Broil 4-in. from the heat for 4-6 minutes on each side or until lightly blistered. Cool slightly., In a small bowl, beat cream cheese and cheddar cheese until blended. Stir in onions. Spoon into pepper halves., Place the flour, egg whites and bread crumbs in separate shallow bowls. Coat jalapenos with flour, then dip in egg whites and coat with crumbs. Place on a greased baking sheet; sprinkle with salt and pepper. Bake at 350° for 18-20 minutes or until lightly browned. , For dip, combine all ingredients in a small bowl. Serve with poppers.
