16 smoked almonds
8 thick slices applewood-smoked bacon, halved crosswise
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
  • Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.

gorgonzola cheese (or other cheese or chorizo or almonds, etc.)
8 slices bacon (cut in half)

Steps:

  • Cut the dates open along one side and remove the pits.
  • Stuff the dates with their filling and wrap each in a slice of bacon.
  • Place the bacon wrapped dates into a baking pan with the seam of the bacon down.
  • Bake in a preheated 425F/220C oven until the bacon is cooked and slightly crispy, about 12-16 minutes, flipping once in the middle.
  • Let cool and enjoy.

15 Medjool pitted dates
1 pound aged Manchego, cut into 15 blocks
5 slices bacon, cut into thirds
1/2 cup maple syrup

Steps:

  • Preheat the oven to 400 degrees F.
  • Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
  • Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

Steps:

  • Preheat the oven to 425 degrees F.
  • Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.

Plump and sweet Medjool Dates are stuffed with creamy goat cheese and wrapped in bacon.

1 lb medjool dates ((I had 28 pieces))
11 ounce log* soft goat cheese
12 ounces** bacon ((14 slices))

Steps:

  • Preheat the oven to 375F. Line a half sheet pan with foil or parchment paper.
  • Using a paring knife, slice through the top half of each medjool date, then pull the two sides apart to expose the pit. Do not slice all the way through. Discard the pit, and also check the inside to make sure there are no signs of bugs or black mold (very rare, but important to check).
  • Stuff each date with about a tablespoon of goat cheese. I find this easiest to do by using a butter knife to carve out a hunk of cold goat cheese and pressing it in, using the knife.
  • Cut the bacon slices in half, then wrap each date with a bacon half, securing with a toothpick by pushing it through the entire piece.
  • Place all the bacon wrapped dates on the tray and bake for 30 minutes, flipping the dates halfway through. This is essential for even cooking of the bacon.
  • Let the dates cool enough to handle, then transfer to a platter to serve. Enjoy!

Not a low fat offering but what a yummy combo! Dates filled with cream and blue cheese then wrapped with bacon. Prep Time: 15 minures

Yield 2 servings

Number Of Ingredients 6

2 cups vegetable oil for frying
8 large Medjool dates
4 slices cured bacon (cut in half)
1 ounce cream cheese
1 ounce blue cheese
2 tablespoons garlic herb bread crumbs

Steps:

  • In a small bowl blend both cheeses well. Make 8 small cheese balls (marble size) in oval shape. Roll each cheese ball in the garlic herb bread crumbs (cover cheese balls completely with bread crumbs). Refrigerate until firm. Remove the pit from the dates by butterflying the dates. Do not cut through the dates all the way. Once the pit is removed, stuff the dates with cheese balls and close. Make sure the dates close all the way and seal. If not, make the cheese balls smaller. Wrap the bacon all around the date (stretching the bacon while rolling it around the dates). Secure bacon with a tooth pick by inserting it through the date. Set aside. In a small pot heat the vegetable oil to 450 degrees or until the oil is hot (but not smoking). Fry dates all around until bacon is crisp (but not burnt). This should take about 2 minutes. Remove dates from oil and let cool. Dates should be soft to the touch. If not, pop the dates in the microwave for 15 seconds. A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.
