BACON-WRAPPED PORK CHOP WITH ROSEMARY
Tender center-cut pork chops are wrapped with bacon and rosemary are grilled on the pellet grill at 325° until the internal temperature is 145° and the bacon is crisp.

Steps:
- Preheat your Traeger to 325° and liberally coat the pork chops with the dry rub.
- Place a sprig of rosemary on top of each pork chop, and wrap in bacon. Secure with a toothpick, and place each on the grill.
- Let cook for 10 minutes and flip. Continue cooking until the internal temperature reaches 145°.
- Remove from the grill and serve hot!

Herbed bacon-wrapped pork chops and lemony roasted cauliflower come together in a simple sheet-pan dinner the whole family will love.

Steps:
- Heat oven to 425°F. Spray bottom of 18x13-inch rimmed sheet pan with cooking spray.
- In large bowl, toss cauliflower, 2 tablespoons of the olive oil, the salt and red pepper. Spread cauliflower mixture evenly in sheet pan. Roast 20 minutes; stir.
- Meanwhile, place bacon on microwavable plate. Cover; microwave on High 3 to 4 minutes or just until edges begin to brown but are still soft and pliable.
- Rub pork chops with remaining 1 tablespoon olive oil; sprinkle with thyme, rosemary and black pepper. Arrange 2 bacon pieces over top of each pork chop, and place in sheet pan with cauliflower, tucking ends of bacon underneath each pork chop.
- Bake 9 to 11 minutes or until meat thermometer inserted in center of pork chop reads at least 145°F. Garnish cauliflower with lemon peel before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Fry the bacon in a skillet over medium heat until cooked through but still flexible. Wrap two slices of bacon around each pork chop and top with a tablespoon of cheese sauce. Place the pork chops in a baking dish.

PORK TENDERLOIN WITH GARLIC ROSEMARY AND BACON
An experiment that produced a wonderfully flavored pork tenderloin with an excellent pan sauce. I was making recipe #198058 using (1) pound of tenderloin and since my tenderloins were in a (2) pound package, I made up this recipe to use the extra one.

- Trim all silver skin from pork tenderloin & cut 4 shallow slits in the surface. Push in garlic clove halves. Rub meat with olive oil. Sprinkle with pepper.
- Line a baking sheet with a large piece of heavy duty aluminum foil. Place a baking rack on the foil and lay out the bacon slices.
- Center the tenderloin across the bacon and arrange rosemary sprigs over the top.
- Wrap bacon slices around the meat and rosemary, securing with toothpicks if necessary. Try to cover as much of the rosemary as possible so it doesn't burn when roasting.
- Cover tightly and refrigerate for at least 2 hours.
- Preheat oven to 425ºF.
- Remove meat from fridge and place in oven still wrapped. Roast for 15 minutes.
- Uncover and bake for 10-15 minutes more or until internal temp reaches 150-155º. Don't overcook it - the temp will rise about 5º-10º more from carry-over cooking after you take it out of the oven. Your goal temp is ~160º. The meat may look faintly pink in the center but it is done if the juices run clear.
- Remove from oven and pour off pan drippings to a small saucepan. Loosely rewrap meat with the foil and let rest for 10 minutes.
- Whisk the cornstarch into pan drippings, heating and stirring until thickened. Add salt to taste and more pepper if you want.
- Remove toothpicks, bacon and rosemary from meat and discard. (My bacon wasn't uniformly crisp. If yours is, feel free to crumble it into the sauce.).
- Slice pork at an angle into thin slices. Serve with the gravy.

- Preheat broiler. In a large cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Steps:
- Preheat oven to 400°F.
- On work surface layer slices of bacon side by side. Place each chop on 2 pieces of bacon (picture 2 slices of bacon as the upright part of an H, and the pork chop as the across section). Season with salt and pepper.
- Slather the chops with barbeque sauce. Flip the chops and slather the other side as well, until barbeque sauce is used up.
- Lay a sprig of rosemary on each chop (letting the ends hang over the edge, for easy removal before serving).
- Wrap bacon slices tightly around each chop.
- Prepare broiler pan (or any roasting pan with a rack), by spraying surface with cooking spray.
- Bake for 30 to 35 minutes until a meat thermometer inserted in thickest part of the meat should register about 150°F
- Turn oven to broil and broil on each side until bacon is crisp.
- Let chops rest for a few minutes. Remove rosemary sprigs before serving.
- If desired, serve with additional warmed barbeque sauce.
- Note: To cook on grill, cook over direct heat for about 5 minutes per side, then transfer to indirect heat and continue cooking until internal temperature is 150°F (about 30 minutes).

- Preheat oven to 425°. Peel and finely chop 4 garlic cloves. Cut 2 whole heads of garlic in half crosswise. Strip leaves off 1 rosemary sprig, discard stem, and finely chop leaves. Finely chop 1 Tbsp. fennel seeds.
