BACON-WRAPPED MEATLOAF WITH BROWN SUGAR GLAZE
Beef, pork, and eggs - these together make an incredibly moist meatloaf. And of course, everything's better with bacon.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
- Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
- Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
- Bake in the preheated oven on the middle rack for 30 minutes.
- While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
- Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
- Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

- Preheat the oven to 350 degrees F (175 degrees C) .
- Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
- Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

- Make sure you preheat smoker to 150, or preheat oven to 350 degrees. Ensure there are pellets or wood chips inside your smoker, enough to last almost 3 hours. We used apple chips for this smoked meatloaf recipe.
- In a bowl add all ingredients except bacon and cheese. Mix together well. Set out a piece of parchment paper on to your countertop. Lay your meatloaf mixture down and spread out so it forms a square and is about 1/2" thick all the way across.Sprinkle your shredded cheese on top, then place your sliced pieces of cheese (if you decide to add more) on top of that spread out.Lay your precooked slices of bacon down, spread out evenly.Lift one end of your parchment paper up and begin to roll this into a long log of sorts.Roll up in such a way that you can remove the parchment paper when you're done. Once completely rolled up pinch the ends of your meatloaf roll so the least amount of cheese escapes in the smoking process.
- Lay meatloaf log on a long grill plate as you see we used in this post.Place inside your smoker, on grates, in the middle. If baking in your oven, use a baking sheet. Then, if you want to add barbecue sauce on to the top pour some on at this time.

- When ready to cook, set Traeger temperature to 225˚F and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available. Grill: 225 ˚F.
- Mix together carrots, celery, mushrooms and onions in a bowl and drizzle with olive oil. Cover bowl with plastic wrap and microwave for about 2 minutes to soften vegetables.
- Let vegetables cool then mix them in a large bowl with ground beef, garlic, thyme, egg, bacon, Worcestershire sauce, salt, pepper, breadcrumbs and tomato soup.
- Make your bacon weave using the bacon, weaving it on a large piece of parchment paper. Ingredients. 1 Pound thin bacon.
- Gently flip and lay the weave on top of the meatloaf so that the parchment is on top. Peel off the parchment paper.
- Cook the meatloaf on the grill for 45 minutes. Remove the meatloaf from grill and increase temperature to 325˚F. Allow Traeger to preheat, lid closed for 10 minutes.
- Once grill comes to temperature, place the meatloaf back on the grill and cook until the internal temperature reaches 160˚F on an instant-read thermometer, about an hour.

- First, soak the cedar plank in water for at least 30 minutes. Naturally, the plank will try to float, so you may need to use something to weigh it down. We normally use our mortar bowl, which is made of stone. We soaked our plank for approximately 1 hour prior to smoking.

- Preheat the smoker to 275 degrees Fahrenheit for indirect smoking. This meatloaf is awesome with hickory or oak wood.
- While the smoker is heating, lay a piece of parchment, wax paper, or a silicone baking mat on a large cutting board or baking sheet, and weave the bacon blankie. To do so, lay out four slices of bacon horizontally on the parchment, spaced apart about the width of a slice of bacon. Lay one piece across them, vertically.
