Steps:
- Heat a skillet over medium high heat. Top four of the tortillas with shredded cheddar, cheese and a portion of the green chiles.
- Top with remaining four tortillas.
- Add one tortilla "sandwich" to the skillet and cook for 2-3 minutes, until the bottom is toasted and the cheese is melted. Flip and cook the other side for 1-2 minutes.
- Repeat for the remaining assemble quesadillas.
- Slice into wedges and serve with sliced black olives, sour cream, and salsa.

BARBEQUE BACON QUESADILLAS

- Heat 1 tablespoon olive oil over medium heat in a large skillet. Add onion; cook and stir onions until softened about 5 minutes. Stir in bacon pieces and brown sugar, and cook until bacon pieces are crisp. Remove from skillet.
- Spread 1/4 cup barbecue sauce on one tortilla. Sprinkle with 1/4 of the bacon and onion mixture, 1 tablespoon cilantro, and 1/2 cup Cheddar cheese. Top with a tortilla.
- Heat 1 teaspoon olive oil over medium heat in a large skillet. Place the uncooked quesadilla in the skillet. Cook on one side until browned and crisp, about 3 minutes. Flip, and cook on the other side until the cheese is completely melted, about 2 minutes more. Remove to a paper towel lined plate to cool. Repeat with remaining six tortillas. Slice into quarters using a sharp knife or kitchen scissors when cool enough to handle.

- Preheat the oven to 400 degrees F. Arrange the bacon slices side by side on a parchment-lined baking sheet and bake until browned and crisp, 15 to 18 minutes. Drain on paper towels.
- Meanwhile, make the pistachio cream: Combine the pistachios, red pepper flakes, garlic, lemon juice and spinach in a food processor and pulse until chopped; with the motor running, slowly stream in the olive oil until incorporated. Season with salt and pepper and process 5 more seconds. Pour the mixture into a bowl and whisk in the crema; set aside.
- Assemble the quesadillas: On 1 half of each tortilla, layer 1/2 cup cheese, 3 slices bacon and a few date slices. Fold the tortillas in half to cover the filling. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add 2 quesadillas and cook until golden on both sides and gooey in the middle, 4 to 5 minutes per side. Repeat with the remaining 2 quesadillas, adding the remaining 1 tablespoon oil to the pan.

- In medium bowl, roughly mash avocado with fork. Add remaining guacamole ingredients and mix together; set aside.
- In 8-inch skillet, cook bacon over medium heat until crisp; drain on paper towels.
- Place 4 tortillas on work surface. Divide guacamole evenly among the 4 tortillas, spreading to within 1/2 inch of edges. Divide bacon evenly among the 4 tortillas. Divide cheese among the 4 tortillas. Top each with another tortilla.
- In 10-inch skillet, heat 1 teaspoon of the oil over medium heat. Carefully transfer 1 of the quesadillas to skillet. Cook until browned, then turn over to brown second side.
- Repeat with remaining quesadillas, adding more oil to skillet as needed.
- Cut each quesadilla into wedges before serving.

- Guacamole: Coarsely mash the avocado in a large bowl. Add the tomato, scallions, lime juice, cilantro, jalapeno, and garlic until blended. Cover and chill until ready to serve.
- Quesadillas: Preheat oven to 450 degrees F. Spray a large baking sheet with cooking spray.
- Lightly spray a medium nonstick skillet with cooking spray and set over medium-high heat. Add the bacon and cook, turning occasionally, until browned, 3 to 4 minutes. Transfer the bacon to paper towels to drain. Crumble and set aside.
- To the same skillet, add the scallions, jalapeno, garlic, cumin, and coriander. Cook, stirring often, over medium heat, until the scallions are soft, 2 to 3 minutes. Remove from the heat.
- Place the tortillas on the baking sheet; sprinkle 1/3 of the cheese, 1/3 of the scallion mixture, and 1/3 of the bacon over half of each tortilla. Fold the unfilled half of each tortilla over the filling. Lightly spray the quesadillas with cooking spray. Bake until lightly browned and crisp, 8 to 10 minutes.
- Cut each quesadilla into 4 wedges and serve with the guacamole and sour cream, if using. Garnish with cilantro.

- Season to taste with salt and pepper.

- Reserve 2 tablespoons bacon.
- In mixing bowl, combine remaining bacon, refried beans and 1/2 cup salsa, blend well.
- Spread 1/4 cup mixture onto half of each tortilla.
- Sprinkle with cheese.
- Fold tortillas in half over filling.
- In ungreased skillet, over medium heat, heat 2 filled tortillas at a time for 2 minutes on each side, or until cheese melts.

- Seed tomatoes and cut into 1/4-inch dice. Quarter avocado, removing pit, and peel. Cut avocado into 1/4-inch dice. In a small bowl stir together tomatoes, avocado, onion, lemon juice, and Tabasco and season with salt and pepper. In another small bowl stir together sour cream, coriander, and salt and pepper to taste.
- Preheat broiler.

- Heat a skillet over high heat. Add the bacon and cook until cooked to your liking. Remove bacon onto a paper towel lined plate.
- Drain excess fat from the skillet and wipe away/scrape off any black bits. Return to the stove over medium heat.
- Place a tortilla in the skillet. Place avocado slices around the rim of half the tortilla and thinner slices across the middle to form a "ring" to hold the egg - as per the photo below. Squish the pieces close together to seal them so egg does not leak.
- Crack an egg into the centre, sprinkle with bacon, cheese and season with salt and pepper. Fold the tortilla over and cook for 4 minutes or until golden and crisp. I usually cook 2 in the skillet.

- First thing first, cook the bacon, drain it well and crumble it. To reduce some of the fat, place it on paper towels. Don't discard all of the bacon drippings, keep about a tsp of it and add the diced green onions to it and cook about 3 minutes until softened.
- Add the chicken, make sure it's cut into bite size pieces and keep sauteing for about 5 min until chicken is thoroughly cooked, turning over the chicken pieces, to make sure all sides are cooked. Add the salt and pepper and stir.
- In a clean skillet, add a bit of the butter and melt. Add a tortilla and move it around until it's buttery. Now the fun stuff begins. Add a little bit of the chicken and onion mixture to half of the tortilla, a bit of bacon, a bit of avocado and a bit or lots of cheese, depending on how you like it.
