BACON-WRAPPED ONION BOMBS



Bacon-Wrapped Onion Bombs image

Don't worry, these bombs are harmless! The only thing exploding is their amazing flavor. How do you make them you ask? First make a regular minced beef mixture, and then use the mixture to fill the onion rings. Then use some bacon to wrap the onion rings. Drizzle with BBQ sauce and slide them in the oven.

10 ounces of ground beef
2 eggs
1 red onion, chopped
⅓ cup breadcrumbs
salt
pepper
1 teaspoon garlic powder
¼ cup milk
2 onions
7 ounces of bacon
barbecue sauce

Steps:

  • Preheat the oven to 400°F/200°C.
  • Place the meat in a large salad bowl. Add the eggs, red onion, and breadcrumbs. Season with salt, pepper, garlic powder, and parsley. Pour the milk and mix with your hands until smooth.
  • Slice off the top and the bottom of the onions and peel off their skin. Cut the onions and stop right before getting to their middle and start to peel off their layers. Take the onion rings and fill them with beef mixture.
  • Wrap each ring with 2 slices of bacon. Make sure you cover them entirely. Use toothpicks to secure. Place the onion bombs in a baking tray and brush with barbecue sauce.
  • Place the tray in the oven for the next 25 minutes.
  • You can serve the onion bombs with ketchup, or with one of your favorite dip!

This may take a little time to make but well worth the little extra effort, very impressive to serve to your dinner guests, this is one of the best recipes for baked onions you will ever have! The onions may be boiled and the insides removed ahead of time and refrigerated to finish filling and baked later. The original recipe called for only for 4 onions, but I increased and "tweaked" the recipe slightly.

8 onions (about the size of a tennis ball, with outer skin removed, no larger as you will not get the bacon or)
1 -2 tablespoon minced fresh garlic (or to taste)
4 -6 tablespoons oil
1 cup whipping cream (unwhipped)
1 1/4 cups grated parmesan cheese
salt and pepper
8 slices uncooked bacon or 8 slices pancetta, slices

Steps:

  • Cook the onions in boiling water until tender, but not falling apart (about 25 minutes).
  • Remove from pot with a slotted spoon and cool.
  • When cool enough to handle, cut off about an inch off of top of onions with a very sharp knife, and finely chop the tops.
  • Trim the root end of the onions slightly, just enough so they can stand straight.
  • Scoop out about a heaping tablespoon from the center of each onion (make certain to keep the inside intact) and finely chop the center, adding to the rest of the chopped onions.
  • Transfer the hollowed onions to an oiled baking dish (I use an 11x7-inch for 8 onions, if you are only making 4 onions, then use an 8x8-inch).
  • Set oven to 375 degrees.
  • In a skillet over medium heat, saute the chopped onions for about 3 minutes in oil.
  • Stir in whipping cream and remove from heat.
  • Stir in the Parmesan cheese, salt and pepper.
  • Fill the whole onions with some of the sauted onion and Parmesan mixture, then spoon the remainder of the mixture around the onions in the baking dish.
  • Wrap a piece of pancetta or a bacon slice around the middle of each onion and secure with a toothpick.
  • Bake the onions for about 40-50 minutes (depending on the size of your onions).

1 small onion, chopped
3 cups all-purpose flour, plus more for dusting
1/3 cup powdered milk
5 teaspoons baking powder
1 tablespoon sugar
2 teaspoons cream of tartar
2 teaspoons kosher salt
1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
1/2 cup shortening
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  • Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and use your hands to press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, about 15 minutes.

2 large sweet onions, cut in wedges
8 slices hickory smoked bacon, thick, cut in half
2 tablespoons light brown sugar
2 tablespoons balsamic vinegar
1 tablespoon molasses

Steps:

  • COMBINE sugar, vinegar, and molasses in a zip-lock bag. Squish bag to combine ingredients.
  • WRAP onion wedges with bacon; secure with long wooden picks. Place in zip-lock bag.
  • PUT in refrigerator overnight. Turn bag over a couple of times.
  • REMOVE onion wedges from marinade; reserve marinade.
  • BAKE in a 350 degree oven until bacon starts to crisp, about 15 minutes.
  • GRILL to finish cooking onion and bacon. Basting with reserved marinade.
  • Don't cook too long, the onion should still be crisp-tender.
  • OR if you don't want to grill the onions, let them finish in the oven. Basting occasionally.

1 egg
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon worcestershire sauce
1 tablespoon honey
4 medium onions
8 oz cheddar cheese, cubed
16 strips bacon
1 bottle barbecue sauce

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
  • Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
  • Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
  • Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
  • Brush the meatballs with barbecue sauce, covering them completely.
  • Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.

The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.
