BAKED APPLES WITH PECANS AND MAPLE SYRUP



Baked Apples with Pecans and Maple Syrup image

With our apple storer now replenished, we decided on a variation on the traditional baked apple using maple syrup and pecan nuts. The key to this recipe is the long, slow, very gentle cooking which helps the apples to keep their shape and produces a lovely nutty, syrup sauce.

4 medium-sized Bramley apples
3 oz (75g) pecan nuts
5 tablespoons maple syrup

Steps:

  • While the oven is pre-heating, pop the pecans in on a roasting tray for 10 minutes to crisp up (but keep an eye on them they shouldn't go too brown. Meanwhile, wipe the apples and use a corer to remove the stalks and cores then with a paring knife make a small incision all round the waist of each apple. Arrange them in a roasting tin, leaving some space between each one.Now chop up the crisped pecan nuts, fairly coarsely, and fill the centres of the apples with them. Scatter the rest of them around the apples, then drizzle a tablespoon of maple syrup into the centre of each apple and over the skins. Drizzle the last tablespoon over the nuts on the base of the tin. Transfer the roasting tin to the centre of the oven, and cook for 1¼ hours until the apples are tender. Serve each apple with a spoonful of the syrupy nuts and a helping of custard (or cream or crème fraiche, it's up to you).

2 juicy, sweet-tart apples, such as 'Jonathan,' peeled and cut into 12 wedges each
2 tablespoons pure maple syrup
1/4 teaspoon coarse salt

Steps:

  • Melt butter in a medium skillet over medium heat. Add apples; cook, turning once, until golden brown, about 5 minutes total. Stir in syrup and salt; reduce heat to low. Simmer until apples are soft, about 5 minutes. Serve warm.

1 cup pancake/waffle mix
½ cup milk
1 egg
2 tablespoons butter, melted
1 cup apple - peeled, cored and sliced
½ teaspoon ground cinnamon
⅓ cup pecans, chopped
3 tablespoons maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Mix together pancake mix, milk and egg until blended. Set aside.
  • Pour melted butter in 9-inch pie plate. Place apple slices in bottom of pie plate. Sprinkle cinnamon and pecans over apples and drizzle syrup over top. Pour batter over apples.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until top springs back when touched. Loosen edges and invert onto serving platter. Cut into wedges before serving.

6 large Golden Delicious apples (about 3 1/2 pounds)
2/3 cup plus 6 tablespoons coarsely chopped pecans
1/3 cup golden raisins
1/4 cup sweetened flaked coconut
2 tablespoons pure maple syrup
1 teaspoon grated lemon peel
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 tablespoons peach or apricot preserves
1 cup unfiltered apple juice or cider
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Preheat oven to 375°F. Core apples. Peel top third of each apple. Using small sharp knife, cut 1/4-inch-deep line all around each where peel and flesh meet. Using small sharp knife, cut about 1 1/4-inch-wide, 1-inch-deep hollow in top of each apple. Cut off thin slice from bottom of each to allow apples to stand flat. Place apples in 13x9x2-inch glass baking dish.
  • Finely chop 2/3 cup pecans, raisins and coconut in processor. Transfer to small bowl. Mix in maple syrup, lemon peel, cinnamon and nutmeg. Divide filling equally among hollows in apples.
  • Spread 1 tablespoon preserves over top of each apple and into hollows. Press 1 tablespoon chopped pecans atop each.
  • Combine apple juice and butter in small saucepan. Stir over medium heat until butter melts. Pour into dish around apples. Cover dish loosely with foil. Bake apples 30 minutes. Remove foil; bake until apples are tender, basting with juices every 10 minutes, about 35 minutes longer. Serve apples warm with pan juices.

1/2 cup pecan pieces
3 tablespoons light-brown sugar
3 tablespoons pure maple syrup
crackers or sliced baguette, for serving

Steps:

  • Preheat oven to 350 degrees. Place cheese on a rimmed baking sheet; bake until softened, 15 to 20 minutes. Transfer to a serving plate; cool about 20 minutes.
  • While cheese cools, place nuts on a clean baking sheet; bake until toasted and fragrant, 7 to 10 minutes. Sprinkle nuts over cheese.
  • In a small saucepan, combine sugar and maple syrup. Bring to a boil over medium heat; simmer until foamy, 1 to 2 minutes. Drizzle warm sauce over slightly cooled cheese and nuts; serve with crackers or baguette.

This is one of the two longer-cooking breakfast grain dishes this week. It takes about 1 hour 10 minutes in the oven, so it might be more practical for a weekend breakfast. Grits are much like polenta, and traditionally served as a savory dish, often with cheese added. Here I mixed the grits with the higher-protein millet, and liked the texture of the mix as well as the nuttier flavor. I warmed leftovers in my toaster oven and enjoyed this throughout the week.

1/2 cup corn or hominy grits
1/2 cup millet
3/4 to 1 teaspoon salt (to taste)
4 cups water
2 tablespoons butter
2 tablespoons honey or maple syrup, or 1 tablespoon each, plus additional for drizzling
1/3 cup chopped pecans, lightly toasted
Optional: Milk for serving

Steps:

  • Preheat the oven to 350 degrees.
  • Heat a 9- or 10-inch cast-iron skillet over medium-high heat and add grits and millet. Toast, stirring, until grains smell fragrant, a bit like popcorn, 3 to 5 minutes, and remove from heat. Add the salt and water and stir.
  • Place pan in oven and bake for 50 minutes. Stir in butter and honey or maple syrup and return to oven for 15 to 20 minutes, until the mixture is no longer watery. Remove from heat and serve, topping each bowl with a drizzle of maple syrup and a sprinkling of toasted pecans. Add milk if desired.

1 large apple - peeled, cored, and chopped (about 1 cup)
2 tablespoons maple syrup
1 tablespoon balsamic vinegar
1 teaspoon ground cinnamon
¼ cup gluten-free, old-fashioned rolled oats
2 tablespoons chopped pecans

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line an 8-inch square baking dish with parchment paper.
  • Combine apple and pear in the parchment-lined baking dish and drizzle maple syrup and vinegar over the fruit. Sprinkle with cinnamon and toss gently to combine. Sprinkle oats and pecans evenly over the top without mixing them in. They are meant to stay on top to become a bit crunchy.
  • Bake in the preheated oven, uncovered, until oats are lightly browned and crunchy and the fruit is soft and juicy, about 30 minutes.
