Baked Black Beans image

This recipe is adapted from one published online by the New York Times. Instead of using dried navy beans, which need to soak and then cook for several hours, I used canned black beans which shorten the cooking time considerably. The beans cook in a sweet and smoky sauce made with a generous amount of bacon, chili powder, apple cider vinegar, and brown sugar. Serve these beans with all of your favorite BBQ dishes.

6 slices thick cut bacon, cut into bite-sized pieces
1 bell pepper, diced
1 small yellow onion, diced
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground mustard
1 teaspoon kosher salt
2 tablespoons brown sugar
1/2 teaspoon black pepper
1/4 cup apple cider vinegar
1/2 cup molasses
2 (15-oz) cans black beans, drained and rinsed

Steps:

  • Preheat oven to 350°F degrees.
  • In a dutch oven or large oven-safe pot, cook the bacon over medium heat until it starts to brown. Add the bell pepper, onion, and garlic. Cook the vegetables until they soften for about five or so minutes.
  • Add the chili powder, dried oregano, ground mustard, salt, pepper, and brown sugar. Stir it all together and cook another two minutes.
  • Add the apple cider vinegar, molasses, and black beans. Stir everything to combine and then add water until it just covers the beans (about a 1/2 cup depending on the size of your pot).
  • Transfer the pot, uncovered, to the preheated oven. bake the beans for approximately one hour, or until the sauce has thickened.

I've recently been trying out a number of different Dim Sum recipes. This recipe for baked buns with a sweet bean paste filling is definitely my favourite so far. The buns look and taste delicious, it's hard not to devour them as soon as they come out of the oven, but they're also nice cool, and were still good the next day when reheated in the microwave for 10 seconds. Because the dough needs to rise, the recipe is time consuming, but not terribly difficult. You can use red bean paste instead of the black, depending on which you prefer.

3 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup sugar
1/4 cup vegetable shortening
1/4 cup lukewarm water
1 1/2 teaspoons active dry yeast
1 cup milk
1/3 cup water
1 (14 ounce) can sweet black bean paste
1 small egg, beaten
2 drops red food coloring (optional)
2 teaspoons water (optional)

Steps:

  • In a small bowl or cup, combine 1/4 cup lukewarm water with the yeast. Let stand for five minutes, while you do the following step.
  • In a large bowl, sift or stir together 2 cups of the flour, the salt and the sugar. Add the shortenning with a pastry blender or two knives, until the mixture resembles coarse meal.
  • In a microwave safe bowl or in a small saucepan, combine milk and 1/3 cup water and heat until warm, but not hot. Add the yeast mixture.
  • Add milk and yeast mixture to the dry ingrediants in the large bowl, mixing well. Add the remaining flour, little by little, until mixture forms a shaggy dough. You may not need the full amount of flour.
  • Using an electric mixer with dough hooks, mix the dough until it is smooth and elastic, adding more flour if necessary. (If you prefer, you can knead the dough by hand on a well floured surface - it takes 5-10 minutes).
  • Grease a large clean bowl with a bit of oil, butter or shortenning, and transfer the dough to this bowl, turning it so that the grease coats the dough. Cover with a towel, or with plastic wrap, and leave dough to rise in a warm place for two hours.
  • Punch down the dough, and transfer it to a well-floured surface. Using your hands or a rolling pin, flatten dough to just over a 1/2 inch thickness. Using a knife, divide dough into pieces roughly 2 1/2 by 2 1/2 inches - the exact shape is not particularly important.
  • On the floured surface or in the palm of your hand, flatten the dough slightly around the edges. Place a rounded teaspoon of black bean paste in the center, then gather up the edges of the dough and pinch them firmly together, making certain that the filling is sealed inches.
  • Place the bun on a baking sheet that is well greased or lined with parchment paper, pinched side down. Repeat for remaining pieces of dough. Place buns about 2 inches apart, to give them room to rise. Cover them with a clean towel and let rise for half an hour.
  • Preheat the oven to 350 degrees.
  • With a pastry brush, or your fingers, brush the tops of the buns with the beaten egg.
  • Put buns in preheated oven and bake 20-25 minutes, until buns are golden brown. The bread should look airy and cooked if a bun is torn open.
  • If you want to mark the tops of the buns with a red dot, mix the red food colouring and 2 tsp water in a small bowl and use the end of a chop stick to put a drop of the red water on the top of each hot bun.
  • Transfer the buns to a wire rack and let cool a little. Buns can be served warm, refrigerated and reheated (either for 10 seconds in the microwave or a few minutes in the oven) or frozen for later.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

3 tablespoons extra-virgin olive oil
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 teaspoons smoked paprika
1/4 teaspoon red-pepper flakes

2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

These steamed red bean-stuffed panda buns are almost too cute to eat! Fill all the buns with red bean paste, or experiment with your favorite fillings.

⅓ cup milk
½ teaspoon yeast
2 tablespoons sugar
1 ¼ cups all purpose flour
black food coloring
water, for brushing
¾ cup red bean paste, chilled

Steps:

  • In the bowl of a stand mixer, stir together the milk, yeast, sugar, and flour with a rubber spatula until the dough starts to come together.
  • Fit the stand mixer with the dough hook and mix the dough on medium-high speed for 10 minutes, until smooth.
  • Cover the dough with a wet towel and let rest for 1 hour.
  • Pull off about 2 tablespoons of dough and roll into a ball, then roll out into a log. Fold the outer ends of the log inward to overlap the center, then roll out into a log again. Repeat 2-3 more times, until the dough is very smooth.
  • Press into a flat disc. Roll 1 tablespoon of red bean paste into a ball, then place in the center of the disc. Wrap the dough around the red bean paste to seal, then roll the bun into a ball and set on a small square of parchment paper. Repeat to make 12 total buns, leaving some excess dough for decorating.
  • Add a bit of black food coloring to another portion of dough and roll out the dough as before, until the color is uniform.
  • Use a finger to slightly dampen the outside of a bun. Decorate with 2 pieces of black dough for the ears, 2 pieces for the eyes, and 1 piece for the nose. Repeat with the remaining buns.
  • Let the buns rest for 30 minutes.
  • Meanwhile, fill the bottom of a steamer with water and bring to a simmer over medium heat. (If you don't have a steamer, fill a large pot with a bowl at the bottom with water, then place a plate on top of the bowl, making sure the water does not come over the edges of the plate.)
  • Add the buns to the steamer, leaving enough space for the buns to expand. Cover the pot and steam the buns for 9-10 minutes, or until the dough is cooked through. Turn off the heat and let the buns rest in the steamer for 5 minutes before serving.
  • Enjoy!

1 cup chili-garlic sauce, Lee Kum Kee brand

1 cup shaoxing wine
1/2 cup oyster sauce
4 tablespoons dried garlic, pieces
4 tablespoons dried ginger, small cubes
3 tablespoons dried onion, small cubes

Steps:

  • Place the black bean into a colander and run over with hot water and let the black bean drain until dry. Place the dry black bean into a lightly oil nonstick skillet and toast the black bean over a medium heat until well toasted. Place the toasted black bean into a stainless bowl and cool down room temperature.
  • Combine all of the ingredients into the black beans and blend together and spoon into a glass jar and seal and place the refrigerator for three days before use.
