BAKED BEANS WITH CARAMELIZED BACON TOPPING
Steps:
- Preheat oven to 350 degrees.
- In a large pan, add diced bacon. Cook over medium-high heat until fat renders, and bacon begins to crisp. Once cooked, remove bacon and place into a small bowl. Discard bacon drippings, leaving 2 tablespoons in the pan.
- Add butter to the pan with bacon drippings, cooking until melted over the heat. Add 1 cup of the shallots and cook until browned, about 3-4 minutes. Remove shallots, leaving the butter mixture in the pan. Place cooked shallots in the bowl with bacon. Stir in ¼ cup of brown sugar, and 1 teaspoon of smoked paprika to create topping.
- Add the remaining ½ cup of shallots and green pepper to the pan. Cook until vegetables have softened, about 3-4 minutes.
- Stir in tomato sauce, ketchup, molasses, mustard, the remaining 3/4 cup of the brown sugar, garlic powder, Worchester sauce and 3 teaspoons of smoked paprika to create a sauce.
- Stir in the beans, and then pour bean mixture into a deep sided 9 x12 baking dish.
- Cover dish with foil, and bake in the oven for 30 minutes.
- Remove pan from oven and raise oven temperature to 400 degrees. Remove foil, and place back into the oven, about 20-25 minutes or until sauce is thick and bubbly.
- Sprinkle on bacon topping, continuing to cook for 10 additional minutes or until bacon is browned and caramelized.
- Remove from oven, and let rest for about 10 minutes before serving.

EASY CHEESY MAC AND CHEESE (WITH OPTIONAL CRUNCHY TOPPING)
I have made baked macaroni and cheese since I was little. I stumbled upon this recipe through experimentation and then modified until I love it! I even brought this to a party with a bunch of people from around the US, and no one could believe it was so easy to make! It tastes exactly the same! Not only is it super easy to make, the clean-up is quick!

How about topping these delicious baked beans with crunchy rye bread crumbs? I bet you'll be glad you did. I've adapted this recipe from one I "found" in a Cuisine at Home magazine.

Steps:
- Preheat oven to 400 degrees.
- Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
- Drain bacon on a plate covered with paper towel.
- Pour off bacon drippings from skillet reserving 1 tablespoon.
- Sweat onion in the tablespoon of drippings until soft.
- Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
- Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
- You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.

- When the cake is almost done, melt the butter in a small sauce pan. Stir in the brown sugar, cream and coconut.
- Remove the cake from the oven and immediately spread the topping evenly over the cake. Broil 6 inches below the element for 2 to 3 minutes or until bubbly and golden. Serve plain or with ice cream.
- Double the cake ingredients and spread the cake in a 13 by 9 inch greased cake pan and bake according the regular recipe.
