What a great way to have chicken. Had these boneless wings a while back at a pub and fell in love with the taste. A nice change from your regular chicken wings. Serve with blue cheese dressing for dipping.

oil for deep frying
1 cup unbleached all-purpose flour
2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon paprika
1 egg
1 cup milk
3 skinless, boneless chicken breasts, cut into 1/2-inch strips
¼ cup hot pepper sauce
1 tablespoon butter

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika in a large bowl. Whisk together the egg and milk in a small bowl. Dip each piece of chicken in the egg mixture, and then roll in the flour blend. Repeat so that each piece of chicken is double coated. Refrigerate breaded chicken for 20 minutes.
  • Fry chicken in the hot oil, in batches. Cook until the exterior is nicely browned, and the juices run clear, 5 to 6 minutes a batch.
  • Combine hot sauce and butter in a small bowl. Microwave sauce on High until melted, 20 to 30 seconds. Pour sauce over the cooked chicken; mix to coat.

1/3 cup chili sauce
4 teaspoons soy sauce

4 boneless skinless chicken breasts (1 lb), each cut crosswise into 1/2-inch-wide strips
1/2 cup blue cheese dressing
1/4 cup sour cream
2 tablespoons chopped fresh parsley
2 tablespoons crumbled blue cheese, if desired

Steps:

  • In medium bowl, mix all chicken ingredients except chicken. Add chicken; toss to coat well. Cover; refrigerate at least 30 minutes to marinate.
  • Meanwhile, in small bowl, mix dressing and sour cream until well blended. Refrigerate until serving time.
  • Heat 12-inch nonstick skillet over medium-high heat. With slotted spoon, remove chicken from marinade; reserve marinade. Add chicken to skillet; cook and stir 4 minutes. Add reserved marinade; cook over medium-high heat 6 to 7 minutes, stirring occasionally, until sauce thickens and chicken is no longer pink in center.
  • Spoon dipping sauce into small serving bowl; sprinkle with parsley and blue cheese. Place bowl on serving platter; arrange warm chicken around bowl. Serve with cocktail toothpicks.

2 lb boneless skinless chicken breast (patted dry and diced into 2" pieces)
1/2 c cornstarch (or arrowroot powder for paleo)
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
2 tbsp olive oil (or avocado oil for paleo)
1/2 c Frank's RedHot
1/2 c Texas Pete Original Hot Sauce (or your favorite hot sauce - see suggestions in post)
2 tbsp butter

Steps:

  • Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
  • Add the chicken to the cornstarch mixture; toss until evenly coated.
  • Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
  • Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
  • Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

1/4 cup cornstarch
1/4 teaspoon black pepper

2 1/2 pounds boneless skinless chicken tenders
1 cup milk
1 egg
1 cup water
canola oil (for frying)
1 cup hot sauce
2 tablespoon butter

Steps:

  • In a medium bowl, combine flour, seasoned salt, cumin, cornstarch, pepper, paprika, chili powder, and salt. In another bowl combine milk, water, and 1 egg, whisk together.
  • Cut chicken tenders into bite-sized pieces.
  • Prepare hot sauce by melting the butter and the hot sauce together over low heat in a pot. Stir to combine as butter melts. Remove from heat once the butter has melted and sauce is thoroughly combined.
  • Dredge chicken pieces in flour mixture, dip into milk and egg mixture and then dredge the chicken again in the seasoned flour. Shake off excess flour.
  • Deep fry coated chicken bites in hot canola oil until golden brown. Drain on paper towels.
  • Place chicken bites in a large bowl. Pour hot sauce over chicken bites and toss to coat.
  • Serve boneless chicken bites with blue cheese or ranch dressing and celery sticks.

Perfectly crisp buffalo chicken bites with a homemade bleu cheese dip is a classic appetizer that everyone loves!

3 oz bleu cheese (crumbled)
2/3 cup mayo
6 tablespoons sour cream
1 1/2 tablespoons cider vinegar
1/4 teaspoon pepper
pinch salt
pinch garlic powder
1 1/2 lbs boneless, skinless chicken breasts (cut into 1 1/2 inch chunks (about 2 large chicken breasts))
1/2 cup buttermilk
1 1/2 teaspoons salt
2/3 cup hot sauce ((I used Franks))
1/3 cup water
1/4 teaspoon sugar
1 tablespoon unsalted butter
1 1/2 cups cornstarch
3 teaspoons cornstarch
4 egg whites
1/2 cup all-purpose flour
1/2 teaspoon baking soda
3 1/2 cups vegetable oil

Steps:

  • Combine dressing ingredients in a food processor and process until smooth. Refrigerate until ready to use.
  • Place the buttermilk, salt, and chicken in a large Ziploc bag. Refrigerate for1- 2 hours.
  • In a small saucepan add the hot sauce, water, sugar, butter, and 3 teaspoons of cornstarch. Whisk over medium heat until thickened. Set aside.
  • In a small bowl, whisk the egg whites until foamy.
  • In a medium bowl combine the flour, baking soda, 1 ½ cups of cornstarch, and 1/3 cup of the hot sauce mixture (from the saucepan). Mix until combined and it resembles cornmeal.
  • Remove chicken from the buttermilk marinate and lightly pat dry with a paper towel.
  • Toss a third of the chicken in the egg white mixture, making sure the chicken has been covered. Then transfer to the flour mixture and dredge the chicken until all of the pieces are coated (press to adhere the flour). Transfer the coated chicken to a plate. Repeat until all of the chicken has been dunked in the egg whites and dredged in the flour mixture.
  • Heat the oil in a large Dutch oven over medium heat. The oil should register 350°F. (I use my instant read thermometer to check the temperature). Cook half the chicken at a time. Cook for 2 minutes, flip them over, and cook an additional 2-3 minutes.
  • Transfer fried chicken to a towel lined plate. Repeat frying for the second half of chicken. *Note, make sure the oil returns to the 350°F temp before adding the chicken to it!
  • At this point, you'll need to rewarm the hot sauce. Simply place it over low heat until it starts to simmer. Place the now fried chicken in a large bowl, pour the hot sauce overtop and toss the chicken until all of the pieces are coated in the sauce. Serve immediately with the homemade bleu cheese dressing.

4 heaping tablespoons of mayonnaise
2 c finely crushed cracker crumbs or 2 cups breadcrumbs
2 tsp garlic powder
1 tsp black pepper
6 Tbsp butter or margarine, melted
3/4 c frank's red hot sauce

Steps:

  • 1. Thoroughly mix chicken and mayonnaise covering the chicken in a thin layer of mayo. Mix cracker crumbs and seasonings in a shallow bowl. Dredge chicken in crumb mixture and place on a baking sheet sprayed with cooking spray. Bake at 375 degrees, for about 15 minutes, until crispy on outside and lightly browned. Combine melted butter and hot sauce. Gently toss cooked chicken in the hot sauce mixture, completely coating the chicken.
