Recipe video above. A fantastic quick-fix dinner - baked fish in a lemon cream sauce, all made in ONE PAN! Don't let the short ingredient list fool you, this tastes so good! The key to the tasty sauce is the fish juices that leeches out while baking and is essentially the broth for the sauce!

SWEET VINEGAR GARLIC PAN SAUCE (FOR ANY MEAT OR FISH)

Sweet Vinegar Garlic Pan Sauce (for any Meat or Fish) image

Within minutes you can have an Asian-inspired pan sauce that?s redolent of ginger, garlic, soy and sweet vinegar to top your meat or fish.

Provided by Food Network Kitchen

Time 10m

Yield about 1 cup pan sauce

Number Of Ingredients 8

2 tablespoons pan drippings and/or other fat, such as olive oil or butter
2 tablespoons chopped garlic
2 tablespoons chopped ginger
2 tablespoons rice vinegar
2 tablespoons soy sauce
1/2 cup mirin or sake
2 teaspoons toasted sesame oil
1 to 2 scallions, sliced

Steps:

  • After cooking your meat or fish, take it out of the pan. Do not clean the pan--the little brown bits left in the pan will be the base of your sauce. Pour out all but 2 tablespoons of the fat from the pan (or add some other fat, if needed).
  • Add the garlic and ginger to the pan and cook over medium heat until aromatic, 1 to 2 minutes. Add the rice vinegar and soy sauce and use a wooden spoon to scrape up the browned bits from the bottom of the pan. Simmer until the liquid has thickened and reduced by half.
  • Add the mirin and simmer to reduce until the sauce is thickened; swirl in the sesame oil. Add the scallions and stir to combine.

ROASTED FISH WITH CORIANDER IN VINEGAR SAUCE

Roasted Fish with Coriander in Vinegar Sauce image

Categories     Fish     Bake     Low Carb     Almond     Coriander     Gourmet

Yield Makes 6

Number Of Ingredients 15

For fish
3/4 stick (6 tablespoons) unsalted butter, 2 tablespoons of it softened
20 Turkish bay leaves
2 tablespoons whole coriander seeds
2 tablespoons coarse sea salt
1 (4-lb) whole bluefish, cleaned, with head and tail intact
1/2 lb whole almonds (1 1/2 cups), toasted and coarsely chopped
1 lemon, thinly sliced
For sauce
1 cup white-wine vinegar
2 Turkish bay leaves
6 whole black peppercorns, slightly crushed
1/4 teaspoon coarse sea salt
Special Equipment
a large (17- by 14- by 3-inch) nonreactive roasting pan

Steps:

  • Rub softened butter over bottom of roasting pan and sprinkle with 12 bay leaves, 1 tablespoon coriander seeds, and 1 tablespoon sea salt.
  • Rinse fish and pat dry, then arrange diagonally in roasting pan. If fish is more than 18 inches long, tail will curl up side of pan (wrap tail in foil to prevent burning).
  • Stir together almonds, 1/2 teaspoon coriander seeds, and 1 teaspoon sea salt. Stuff fish with lemon slices, almond mixture, and 2 tablespoons butter, cut into small pieces. (Some nuts may spill out.) Sprinkle fish with remaining 8 bay leaves, 2 1/2 teaspoons coriander seeds, and 2 teaspoons sea salt. Dot fish with remaining 2 tablespoons butter, cut into small pieces.
  • Put oven rack in middle position and place fish in cold oven. Set oven temperature to 500°F. Roast until fish is just cooked through, 40 to 45 minutes. (Cut into fish along backbone with a small knife to check doneness; fish should have turned from translucent to opaque.)
  • Transfer fish to a large platter using 2 wide metal spatulas. Reserve any pan juices.
  • Boil all sauce ingredients in a small nonreactive saucepan 1 minute. Stir in reserved pan juices and pour sauce over fish. Discard bay leaves.

WHITE FISH FILLETS IN SAUCE MADE WITH WHITE VINEGAR

White Fish Fillets in Sauce Made With White Vinegar image

This recipe has been made in my family since my grandmothers days- I am not sure of the origins but it could be some fusion recipe - maybe it was my grandmothers own creation but its a favorite with our family. Any firm fleshed white fish can be used. This goes well with rice or pasta or just with some good hearty home made bread

Provided by casamain

Categories     Whitefish

Time 30m

Yield 4 4, 4 serving(s)

Number Of Ingredients 13

4 firm white fish fillets (2 inches thick)
2 tablespoons all-purpose white flour
4 tablespoons white vinegar
1 1/2 tablespoons sugar or 1 1/2 tablespoons Splenda sugar substitute
1 tablespoon garlic paste
2 tablespoons whole cumin seeds
1 tablespoon cumin powder
2 green chilies, chopped fine
3 sprigs fresh cilantro, chopped fine
1 egg, beaten
salt
2 tablespoons corn oil
2 cups water

Steps:

  • WASH AND PAT DRY THE FILLETS.
  • In a medium deep skillet heat the oil on medium heat , add the garlic, the cumin seeds, green chillies and then add the flour and blend well , lower the heat and add the water and blend well so no lumps remain.
  • Mix the vinegar with 1 cup of water add it to the mixture. Keep the heat gentle , now add the sugar or splenda and salt. and the remaining water the cumin powder-taste it to see if it has a tangy sweet taste, add more salt if required if it's too sour add a bit more of the sugar or splenda, the sauce should be of a thick consistency. If satisfied with the taste, slip in the fish fillets gently and let it simmer.Do not cover the skillet.
  • Beat the egg in a bowl and keep ready.
  • Once the fish is done, (should take 10 to 15 minutes only), slowly drizzle the beaten egg and kill the heat. Do not stir just let the egg mixture swirl on the fish mixing it into the sauce-- shaking the skillet or dish will allow the egg to incorporate into the sauce.
  • If this dish is made and to be served later then DO NOT add the egg at this time , You can reheat the fish in the sauce and just before serving add the egg.
  • Garnish with the fresh chopped cilantro.

CRISPY BAKED FISH WITH TARTAR SAUCE

Crispy Baked Fish With Tartar Sauce image

Charming fish shacks and salty sea air aren't a weeknight possibility for most of us, but thankfully, this recipe is. It features a clever technique from recipe developer Molly Kreuger: Creamy tartar sauce is spread on the fish to add flavor, keep the fillets moist during cooking and help the bread crumbs adhere to the fish. (Feel free to use your favorite tartar sauce in place of the one below.) The fish is baked until nearly cooked through, then broiled to toast the breadcrumb topping. The end result is crispy, creamy, tangy and moist, all of which is achieved without having to deal with a big pot of oil. Eat with more tartar sauce and a squeeze of lemon.

Provided by Ali Slagle

Categories     dinner, weekday, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 11

1 cup mayonnaise
5 tablespoons capers, drained and coarsely chopped
1/4 cup finely chopped pickles (such as cornichons or half sour)
2 tablespoons finely chopped tarragon, dill or parsley
1 teaspoon Worcestershire or soy sauce
1 small garlic clove
1 large lemon
Kosher salt and black pepper
1/2 cup panko bread crumbs
2 tablespoons extra-virgin olive oil, plus more for greasing
4 (6-ounce) thick white fish fillets, such as halibut or cod (skin on or off)

Steps:

  • Heat the oven to 400 degrees and set a rack in the upper part. In a medium bowl, stir together the mayonnaise, capers, pickles, herbs and Worcestershire sauce. Using a Microplane, finely grate the garlic into the bowl, then grate in the zest of the lemon. (Hold onto the lemon; you'll use the juice later.) Stir to combine and season the tartar sauce to taste with salt and lots of pepper.
  • In a small bowl, stir together the panko and olive oil; season with salt and pepper.
  • Pat the fish dry on all sides and season lightly all over with salt and pepper. Transfer to a lightly greased or foil-lined sheet pan. Coat the top with a thin layer of the tartar sauce (a scant tablespoon per fillet). Sprinkle the panko evenly on top (about 2 tablespoons per fillet), pressing gently to adhere.
  • Bake the fish on the top rack until almost cooked through, 10 to 15 minutes for fillets between ½- and ¾-inch-thick (though you should check earlier, if using a thinner fish). An instant-read thermometer should read somewhere between 125 and 130 degrees when inserted into the thickest part of the fish.
  • Meanwhile, add 1 tablespoon juice from the lemon to the tartar sauce and cut the remaining lemon into 4 wedges for serving.
  • When the fish is nearly cooked through, switch the oven to broil. Broil the fish on the top rack until the bread crumbs are golden and the fish flakes easily and registers 140 degrees in the thickest part, 2 to 3 minutes. Eat with a spoonful of tartar sauce, more black pepper and a squeeze of lemon. (Any extra tartar sauce will keep for up to a week in the fridge.)

BAKED FISH IN SOY GINGER SAUCE

Baked Fish in Soy Ginger Sauce image

Simple . . . flavorful . . . quick . . . low-cal. I advise the use of both LOW SODIUM chicken bouillon cubes as well as LOW SODIUM soy sauce when possible so that you can adjust the salt level to your own preference.

Provided by FlemishMinx

Categories     Catfish

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

4 (6 ounce) white fish fillets (catfish, basa, or of your choosing)
1 cup boiling water
1 chicken bouillon cube
3 large scallions
1 piece ginger, peeled (2" X 1")
1/4 teaspoon cayenne pepper, to taste
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 teaspoon cornstarch
2 tablespoons water
1 teaspoon olive oil
salt and pepper, to taste (careful with salt as regular bouillon and soy sauce are salty themselves !)

Steps:

  • Pre-heat oven to 425°F.
  • Place fish fillets in a 13 X 9 inch baking dish.
  • Dissolve the chicken bouillon cube in one cup boiling water, and set aside.
  • Clean the scallions, and cut each in half (basically, separating white part from green); slice the green portions, then cut the white portion in matchstick-size pieces.
  • Keep these apart, you will be using them separately.
  • Slice the ginger into matchstick-size pieces.
  • From the one cup bouillon, remove 1/4 cup and pour this over the fish; sprinkle the fillets with cayenne pepper, salt and pepper if using, then top with the green portion of the scallions.
  • Place, covered, in the oven and bake for 15 minutes, or until it flakes easily with a fork.
  • In a small bowl, mix the remaining bouillon with the soy sauce, rice wine vinegar, cornstarch and 2 TBS water; set aside.
  • Heat the oil in a small non-stick skillet.
  • Add the scallion strips and the ginger and cook until golden (just a few minutes).
  • Give the soy mixture a good stir, then add to the skillet.
  • Heat to boiling, and boil stirring for 1 minute or until the sauce has thickened.
  • Remove fish from oven and onto serving plates.
  • Serve sauce over the fish.
