EASY BAKED FISH WITH GARLIC AND BASIL



Easy Baked Fish with Garlic and Basil image

Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

2 lb fish fillet like halibut
Salt and pepper
1 1/2 tsp dry oregano
1 tsp ground coriander
1 tsp sweet paprika
10 garlic cloves, minced
15 basil leaves, sliced into ribbons
6 tbsp extra virgin olive oil (I used Private Reserve Greek EVOO)
Juice of 1 lemon
2 bell peppers any color, sliced (I used 1 red and 1 green bell pepper)
2 shallots, peeled and sliced

Steps:

  • Pat fish fillet dry and season with salt and pepper on both sides.
  • Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
  • Heat oven to 425 degrees F.
  • Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
  • Bake in heated oven for 15 minutes or until fish is done and flakes easily.

  • Cut fish fillets into 4 serving pieces if needed. Place pieces, skin sides down, in the pan, folding thin ends under if necessary for even thickness.

2 large cloves garlic, minced
1 tablespoon minced flat-leaf parsley leaves
1 tablespoon minced cilantro leaves
1 teaspoon ground cumin
1 teaspoon paprika, preferably hot
1 pinch saffron threads, crushed
2 tablespoons white wine vinegar
Juice of 1 lemon
1 tablespoon tomato paste
1 and 1/2 pounds fish fillets (4 fillets): fluke, black sea bass, hake
1 pound large Yukon Gold potatoes, peeled, in half-inch-thick slices
3 tablespoons extra virgin olive oil
Salt and black pepper
1 red bell pepper, cored and slivered
1 pint (1 pound) cherry tomatoes, halved
Half-cup pitted Kalamata olives

Steps:

  • Combine garlic, parsley, cilantro, cumin, paprika and saffron in a dish big enough for the fish. Mix vinegar, lemon juice and tomato paste in a small bowl. Add to dish and mix. Place fillets in the dish, turning to coat them, cover and set aside to marinate 2 hours at room temperature, 3 hours if refrigerated.
  • Place potatoes in a saucepan, add water to cover, bring to a boil, reduce heat and simmer 15 minutes. Drain.
  • Brush a baking dish that can go to the table and will hold the fish in a single layer with a little of the oil. Heat oven to 350 degrees. Spread potatoes in the dish, season with salt and pepper, and place fish fillets on top. Scatter peppers and tomatoes over fish. Add a little more salt and pepper. Spoon any excess marinade over fish, strew with olives, drizzle with remaining oil and bake about 30 minutes, until fish is just cooked through.

I've never heard of Salona before and there weren't any other recipes by that name here. * I found in reading a book called Jewish Cookery from Boston to Baghdad, by Malvina W. Liebman, "that among places to which Jews fled the from Spain, in the 15th century, was Salonica, then under Turkish rule. Some of the refugees founded small towns in Turkey to which they gave Spanish names and where they maintained the old customs and food habits".

1 lb fish fillet, 4-6 thick pieces
4 medium onions, sliced
1 tablespoon vegetable oil
2 medium tomatoes, cut into chunks
1 (8 ounce) can tomato sauce
4 tablespoons tomato paste
2 -3 tablespoons curry powder
1/2 cup sugar
1/4 cup white vinegar
1/4 cup water
salt, to taste
pepper, to taste
2 tomatoes, sliced

Steps:

  • In a large skillet, on a low flame, place cut up onions with vegetable oil and stir unil brown. Add the chunks of tomatoes and 1/4 cup water.
  • Keep stirring on low heat as you add the rest of the ingredients (not the fish). Continue cooking on low flame for 10 minutes. Taste sauce. It should have a mild sweet and sour taste.
  • Cover the bottom of a rectangular pyrex baking dish with the sauce. Lay the fish on top of the sauce and then cover the fish with the rest of the sauce.
  • Preheat oven to 400 degrees F. Bake for 45 minutes. Remove and add the sliced tomatoes over the entire top of the fish. Now broil for 10 minutes.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup sharp Cheddar cheese
⅓ cup dry bread crumbs
1 egg, beaten
1 pound cod fillets
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a bowl, mix the spinach, 1/2 cup Cheddar cheese, about 5 tablespoons dry bread crumbs, and the egg. Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of the spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.
  • Cover, and bake 20 minutes in the preheated oven, or until fish flakes easily with a fork.

2 lbs fish fillets (halibut, ray, bass or cod)
1/4 cup olive oil
4 onions, thinly sliced
1 garlic clove, pressed
2 cups tomatoes (or 1 part tomato puree diluted with 2 cups water)
1/2 cup parsley, chopped
1 teaspoon oregano
1/8 teaspoon cinnamon
salt and pepper
1/2 cup red wine (preferably mavrodaphne or port)

Steps:

  • Rinse fish with cold water. Oil baking pan with half the oil.
  • Place slices of fish on pan.
  • Sauce: heat remaining oil in frying pan, fry onions and garlic on medium heat for 5 minutes.
  • Add remaining ingredients, cover and cook for 10 minute.
  • Pour sauce over fish.
  • Bake 45 minutes at 375 degrees F.
  • Serve with a salad and crusty bread.
