Bake a spiced sweet potato with spinach for lunch, or as a budget supper for one. It's low-calorie, packed with vitamin C and packs big flavour

1 sweet potato
2 tsp oil
½ onion , finely chopped
1 garlic clove , crushed
small knob of ginger , grated
1-2 tsp curry paste (use what you have or buy a Madras or red curry paste)
knob of butter
handful of spinach

Steps:

  • Heat oven to 200C/180C fan/gas 6. Prick the potato and bake it for 40-45 mins or until soft when you squeeze the sides.
  • Meanwhile, heat the oil in a small frying pan and fry the onion until softened, add the garlic and cook for 1 min, then add the ginger and curry paste and cook for another min. Stir in the butter and spinach, and continue stirring until the spinach wilts. Season well.
  • Cut open the top of the sweet potato, scoop out some of the flesh, add it to the mix in the pan and stir through, then spoon the mixture back into the potato.

2 teaspoons extra-virgin olive oil
1/4 teaspoon grated garlic
1/2 cup frozen edamame
Kosher salt and freshly ground pepper.
3 tablespoons labneh
1 teaspoon fresh lime juice
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground turmeric

Steps:

  • Preheat oven to 400°F. Prick sweet potatoes all over with a fork and place on a parchment-lined baking sheet. Roast until very tender, about 1 hour. Heat oil and garlic in a small skillet over medium; cook, stirring, until fragrant, 1 minute.

2 tablespoons canola oil
1/2 teaspoon mustard seeds
2 small green serrano chilies, cut horizontally in half
1 medium red onion, finely chopped
1 teaspoon ginger, freshly grated
1/2 teaspoon ground turmeric
1/2-3/4 teaspoon salt
2 tablespoons lemon juice, to taste

Steps:

  • boil sweet potatoes in water to cover till just tender. cool, peel, and cut into 1-inch pieces.
  • heat oil in large saute pan over high heat. when oil begins to smoke, add mustard seeds, covering pan. when seeds stop sputtering, add chiles. when chiles are toasted, add onion and ginger. saute until onion is lightly browned, then add turmeric and stir.
  • add sweet potatoes and salt and toss gently to mix. cover and steam over low heat until flavors meld, about 4 minute sprinkle with lemon juice and serve hot.
