2 cups all purpose flour
1 teaspoon coarse kosher salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons (or more) ice water
2 tablespoons chilled whipping cream

Steps:

  • Blend flour and salt in processor. Add butter; using on/off turns, cut in until mixture resembles coarse meal. Add 3 tablespoons ice water and cream. Process just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic; chill 1 hour. (Can be made 2 days ahead. Keep chilled. Soften slightly at room temperature before rolling out.)

1 3/4 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
1/4 cup cold vegetable shortening
3 to 5 tablespoons ice water
Special equipment: a pastry or bench scraper; an 11- by 1-inch fluted round tart pan with a removable bottom; pie weights or raw rice

Steps:

  • Blend together flour, sugar, salt, butter, and shortening with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with small (roughly pea-size) butter lumps. Drizzle evenly with 3 tablespoons ice water and gently stir with a fork (or pulse in food processor) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until just incorporated, then test again. (If you overwork mixture, pastry will be tough.)
  • Turn out mixture onto a lightly floured surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion. Gather dough together with scraper and press into a ball, then flatten into a 6-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Roll out dough with a floured rolling pin into a 13-inch round on a lightly floured surface and fit into tart pan. Trim excess dough, leaving a 1/2-inch overhang, then fold overhang inward and press against side of pan to reinforce edge. Lightly prick bottom and sides with a fork. Chill 30 minutes.
  • Preheat oven to 375°F.
  • Line tart shell with foil or parchment paper and fill with pie weights. Bake in middle of oven until pastry is pale golden along rim, 20 minutes. Carefully remove foil and weights and bake until pale golden all over, 10 minutes more. Cool in pan on a rack.

3 cups all-purpose flour

  • Cut butter into bits. In a bowl with a pastry blender or in a food processor blend or pulse flour, confectioners' sugar, and salt until combined well and add butter, blending or pulsing until mixture resembles coarse meal. In a small bowl whisk together yolks, ice water, and vanilla until combined well and add to flour mixture, tossing with a fork or pulsing until incorporated. Form dough into a ball and divide into 2 pieces. Form each piece into a ball and flatten to form disks. Chill disks, wrapped separately in plastic wrap, at least 1 hour and up to 1 week.
  • Preheat oven to 400°F.
  • Form 1 dough disk into twenty-four 1-inch balls, keeping remaining disk wrapped and chilled. Press dough balls into bottoms and up sides of twenty-four 1/8-cup mini-muffin cups (about 1 3/4 inches across top and 1 inch deep). Trim any overhang with a knife and prick bottoms of shells with a wooden pick. Chill shells 15 minutes, or until firm. Bake shells in middle of oven 12 minutes, or until golden, and cool in cups on racks. Gently loosen shells with a knife and remove from cups, reserving shells for Chocolate Raspberry Bites .
  • Make more shells (for Lemon Meringue Bites ) in same manner but after loosening shells do not remove them from cups. Tartlet shells may be made 2 days ahead and kept in an airtight container at room temperature.

Steps:

  • Pulse together flour, sugar, salt, and butter in a food processor until most of mixture resembles coarse meal with small (roughly pea-size) butter lumps. Add yolks and vanilla and pulse just until incorporated and mixture begins to clump.
  • Turn out mixture onto a lightly floured surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion. Gather dough together into a ball with scraper and transfer to tart pan. Pat out ball with floured fingertips onto bottom and up side of tart pan in an even 1/4-inch layer. (If mixture sticks to your fingers, spread a sheet of plastic wrap over it and pat through plastic wrap.) Prick bottom of shell all over with a fork, then chill until firm, at least 30 minutes.
  • Preheat oven to 375°F.
  • Line shell with foil and fill with pie weights. Bake in middle of oven on or over a large sheet of foil (to catch any drips of butter) until sides are set and edges are light golden, about 20 minutes. Carefully remove foil and weights and bake shell until bottom is golden and sides are golden brown, 14 to 16 minutes more. Cool shell completely in pan on a rack before filling.

Steps:

  • Lightly flour your work surface (and rolling pin). Using as little flour as possible, roll out a half recipe of pâte brisée or pâte sucrée, rotating it 90 degrees every few minutes. Repeat until the dough is 1/8 inch thick. Brush off excess flour.
  • Gently fold the dough into quarters. Center the dough in the tart pan; unfold, letting the extra pastry droop over the sides. Alternatively, drape the rolled dough over the rolling pin for transfer into the pan.
  • Lift the overhanging dough, and tuck it into the side and corners of the pan. Gently press the pastry snug against the bottom edges of the pan with a knuckle. This extra dough makes it easier to form a decorative edge.
  • When the shell is completely tucked in place, firmly roll your rolling pin over the top of the tart pan, using the pan's sharp edges to trim off the excess dough. Refrigerate for 10 minutes before proceeding to step 5.
  • Working around the circumference of the pan, firmly press the dough into the fluting, gently pinching dough between forefinger and thumb and supporting the pan with the other hand as you go.
  • The crust will release steam when it's baked that can cause the pastry to bubble and buckle. Prevent this damage by docking (poking holes into the pastry with the tines of a fork to create steam vents). Refrigerate the dough for 1 hour, or wrap it and freeze for future use for up to 1 month.
  • Cut a square of parchment paper several inches larger than the tart shell, and place it into the chilled shell. Fill it with pie weights or dried beans (which should be stored in the freezer between uses to prevent them from becoming rancid). Bake in a 400° F oven for 15 minutes.
  • Then remove the parchment and weights to allow the bottom of the shell to bake until golden brown, 12 to 15 minutes more. Keep an eye on the edges: If they start to become too dark, cover them with foil.

This recipe, my trusted go-to, turns out a cookielike crust - sweet, golden and more crisp than flaky. Typically French - it's a pâte sablée - I use the recipe for my whole lemon tart as well as for the less French bakewell tart. I make the dough in a food processor using very cold butter, and while it sounds like culinary heresy, I roll it out as soon as it's made. Sandwiched between parchment or wax paper, the dough is a cinch to roll at this point - just make sure to chill it before you bake it (better yet, freeze it once it's in the pan). I also like to partly bake the crust before I fill it, a step you can skip, but prebaking will give you a crisper bottom crust.

Yield One 9-to-9 1/2-inch crust

1 1/2 cups/204 grams all-purpose flour
1/2 cup/60 grams confectioners' sugar
1/4 teaspoon fine sea salt
4 1/2 ounces/128 grams very cold unsalted butter (1 stick plus 1 tablespoon), cut into small pieces
1 large egg yolk

Steps:

  • Put the flour, sugar and salt in a food processor, and pulse to blend. Scatter in the butter, and pulse about a dozen times, until the butter is cut in - you'll have pieces the size of oatmeal flakes and others the size of peas. Stir the yolk to break it up and add it in 3 additions, pulsing after each. Pulse until the dough has curds and clumps; it should hold together when you pinch it. Turn it out onto a counter, knead it into a compact ball and flatten it into a disk.
  • Roll the dough into an 11-inch circle between layers of parchment (or wax) paper. If it's cold enough, fit it into a 9-to-9½-inch tart pan with a removable bottom, trimming the top even with the pan's edges; if it's not, chill it until you can work with it. Refrigerate the crust (in the pan) for at least 1 hour (or cover and freeze for up to 2 months).
  • Heat the oven to 400. Place the pan on a baking sheet, and cover with a piece of buttered foil or parchment, pressing it lightly to cover the crust's bottom and sides; fill with rice.
  • Bake for 20 minutes. Carefully remove the foil and rice. If you're going to bake the tart again with a filling, bake it uncovered for 5 minutes more. If you'll be using a no-bake filling, bake the uncovered crust for an additional 8 to 10 minutes. Cool for at least 30 minutes before filling.
