YAM FRIES
These quick & easy yam fries are a great alternative to french fries {a big weakness of mine!} & are so easy to make! I served them with turkey burgers...Yum!

Steps:
- Preheat oven to 375.
- Just wash your yams well & cut them into pieces of your desired size, I like them a bit thicker.
- Toss them in 1 tlbs. oil {you can use others but grapeseed oil is best since it doesn't become toxic once it reaches certain temps like oilve oil may}.
- Lay them out on a cookie sheet, meaty part facing down & season with kosher salt or I used Mrs. Dash since it's salt-less. Bake for 20 mins or until the thickest pieces are tender!

BAKED YAM FRIES
Because these are baked and not deep fried, then have a bit of a softer texture than you may be used to, but they also have a lot more flavour and vibrance and they make a beautiful side to steak or chicken.

Steps:
- Pre-heat the oven to 425°F with the rack one spot from the bottom.
- There are no measurements for the spices with this recipe as yams vary greatly in size and so do peoples taste buds. So you will need to use your judgement when you make them.
- Add the yams to a bowl. Drizzle with the oil and then toss to evenly coat. Now sprinkle with spices. Start with salt and pepper and toss, then move on to the garlic powder, paprika and bread crumbs. Toss very well to make sure that everything is evenly distributed and then transfer to a baking sheet.
- Place into the oven and bake for about 15 minutes. Remove from the oven and flip the yams on to the other side. Place back in the oven for 5 - 10 minutes or until nicely browned.
- Serve with dinner or for a snack and you will love them

SWEET POTATO FRIES
These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

BAKED SWEET POTATO FRIES RECIPE BY TASTY
Here's what you need: large sweet potatoes, water, corn starch, olive oil, pepper, paprika, garlic powder, brown sugar, salt, shredded parmesan cheese, fresh parsley

Steps:
- Rinse and peel sweet potatoes.
- To cut into fries, cut a small sliver off the edge of the potatoes lengthwise to create a flat side for them to rest on. Turn the potato over to lay on its flat side. Cut each slice lengthwise into three to four fries.
- Place the fries in a bowl of water and soak for one hour. (This helps remove excess starch from the potatoes so your fries will be crispier.) Rinse and dry off.
- In a large bowl or gallon bag, toss the fries with cornstarch until they're evenly coated. Then add the oil and toss to coat.
- Add the pepper, paprika, garlic powder, and brown sugar and toss to evenly distribute your spices. (Hold off on adding the salt until after baking. This will help make sure the fries are crispy.)
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the french fries, being sure not to overcrowd the pan. (You may need two pans, depending on how large your pans are. Avoid overcrowding one pan or your fries may not crisp up.)
- Bake for 15 minutes. Flip fries with tongs, then bake for an additional 10-15 minutes. Sprinkle on salt (to taste) and serve! Add shredded Parmesan and chopped parsley for an optional garnish.
- Enjoy!

Steps:
- Scrub the sweet potatoes and leave the skin on (best part.).
- I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
- Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
- Add the seasonings and toss well again.
- Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
- Turn the fries with a spatula and bake for another 10 minutes.
- Blot any excess oil with paper towels, serve, and enjoy!
