Chicken Breasts with Balsamic Vinegar and Garlic image

4 skinless, boneless chicken breasts
salt and pepper to taste
¾ pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
2 tablespoons olive oil
6 cloves garlic
¼ cup balsamic vinegar
¾ cup chicken broth
1 bay leaf
¼ teaspoon dried thyme
1 tablespoon butter

Steps:

  • Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
  • Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
  • Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

1 kg / 2 lb chicken thighs (5 pieces, bone in, skin on), or drumsticks or wings (any combination) (Note 1)
1/4 cup (65 ml) balsamic vinegar
2 1/2 tbsp / 50 ml soy sauce (, all purpose or light (not dark soy sauce))
1/4 cup (85 g / 65 ml) honey
1/4 cup (45g) brown sugar (, loosely packed (Note 2))
2 garlic cloves, minced ((or 1 1/2 tsp garlic paste from jar))

Steps:

  • Preheat oven to 180C/350F.
  • Line a baking dish with foil and baking / parchment paper.
  • Mix together Sauce in a bowl.
  • Place chicken in baking dish, skin side down for thighs and wings. Make sure the pan is big enough so the chicken is squished up next to each other (sauce may not reduce enough), but not so large that there is more than 4"/10 cm between every piece of chicken (sauce may reduce too much).
  • Pour over Sauce. Bake 30 minutes. Turn chicken over, spoon over sauce.
  • Bake 20 minutes or until chicken is cooked through. The Sauce should have thickened.
  • Stand for 5 minutes, then spoon Sauce over chicken and serve.

1/2 cup low-salt chicken broth
1 teaspoon lemon zest

Steps:

  • Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
  • Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

1 1/2 cups rice vinegar (unseasoned)
1/2 cup reduced-sodium soy sauce
1 tablespoon turbinado or light brown sugar
3 bay leaves
1 head garlic, cloves peeled and smashed

8 pieces bone-in, skin-on chicken thighs and drumsticks (about 3 pounds total)
2 tablespoons vegetable oil

Steps:

  • Combine vinegar, soy sauce, sugar, bay leaves, garlic, and 1 teaspoon pepper in a bowl; add chicken and toss until coated with marinade. Cover bowl and refrigerate at least 2 hours and up to overnight.
  • Remove chicken (reserving marinade) and pat dry with paper towels. Heat oil in a large Dutch oven over medium. Add half of chicken and cook until golden brown, 3 to 5 minutes. Turn and brown other sides about 2 minutes more; transfer to a plate and repeat with remaining chicken.

1 teaspoon salt
1 teaspoon pepper
2 tablespoons butter
1 tablespoon olive oil
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/4 cup balsamic vinegar
1 tablespoon fresh lemon juice
1 1/2 teaspoons honey
3 garlic cloves, chopped

Steps:

  • Pat chicken dry with paper towels. Sprinkle with salt and pepper.
  • In 10- or 12-inch skillet, melt butter over medium-high heat. Add oil. Place chicken in skillet; cook 6 to 7 minutes on each side until both sides are browned and juice of chicken is clear when center of thickest part is cut (at least 165°F). Place chicken on plate; cover with foil to keep warm.
  • In same skillet, mix broth, vinegar, lemon juice, honey and garlic. Cook about 5 minutes or until sauce has thickened, scraping bottom of skillet with pancake turner to loosen browned bits.

Very juicy and easy--clean up isn't bad either. I saw a recipe for barbecue chicken in foil and decided to alter it for my tastes. Prep time includes roasting the garlic (optional, you can just get canned garlic if you want, I haven't tried it that way.)

lemon pepper seasoning (to taste)
9 roasted garlic cloves (I really love garlic so if you don't, you can use a lot less)
1/2 cup shredded colby-monterey jack cheese
aluminum foil
minimal butter
1 pinch salt

Steps:

  • Preheat oven to 375°.
  • Lay out foil and make a small "pan" with it, two to three layers is okay because it will help clean up.
  • Spread a very light layer of butter on the foul where you will place the chicken later.
  • Season the chicken breasts with lemon pepper seasoning, press it down into the chicken a little.
  • Sprinkle balsamic vinegar on all sides of chicken, don't make a bath for it but just put it on the chicken.
  • Place three garlic cloves on each piece of chicken, evenly spaced, smashed on top of each chicken, sprinkle with a pinch of salt.
  • Cook in the oven for 35 minutes, open foil.
  • Sprinkle desired amount of shredded cheese on top of the chicken and cook uncovered for another 2-3 minutes. Cooking time might differ depending on the size of the chicken (mine were pretty small).
  • Enjoy while its hot! Dip in more vinegar or the juices in the foil if you need more flavor.

2 tablespoons flour

1 bay leaf

Steps:

  • Split each chicken breast lengthwise in half. Cut away and discard any thin membranes that may remain on the flesh.
  • Rinse the mushrooms; drain and pat dry.
  • Season the flour with salt and pepper and dredge the chicken breast halves in the mixture. Shake off excess flour.
  • Heat the oil in a heavy skillet and cook the chicken breasts until nicely browned on one side, about 3 minutes over moderately high heat. Add the garlic cloves.

An adaptation of a recipe I gleaned from the net. This is one of my absolute favorite dishes to cook for dinner guests.

6 -8 slices bacon (thick cut)
4 large boneless skinless chicken breasts (rinsed and patted dry)
10 ounces shallots, sliced thin
5 -6 garlic cloves, sliced thin
1/4 cup balsamic vinegar
1 cup water
salt
black pepper

Steps:

  • Cook bacon on medium heat until crisp in a large skillet. Remove bacon and allow to drain and cool on paper towels. Leave bacon fat in skillet.
  • Season chicken breasts with salt and pepper on both sides. Brown chicken in bacon fat over med. high heat, turning once halfway through cooking. When chicken is no longer pink, transfer to plate and pour off all but two tablespoons of fat from skillet.
  • Add shallots to skillet over med. low heat. Cover and stir occasionally until light golden color. Remove lid and cook a few minutes more until they are a deep golden color. Stir often to keep them from sticking and burning.
  • Add garlic to skillet along with 1 cup of water. Bring to a boil while stirring for about a minute.
  • Place chicken back into skillet, turning to coat with the liquid. Cover skillet and simmer for about 30 minutes.
  • While waiting, put bacon slices in a ziplock bag and crush with your hands into big bacon bits.
  • Remove chicken from skillet and arrange on a serving dish. Add vinegar to skillet and bring to a boil to reduce the sauce, stirring and mashing the garlic. Add more pepper to taste.
  • Pour sauce over chicken and garnish with bacon bits.

1 tablespoon extra virgin olive oil
2 ounces pancetta
1 chicken, cut into serving pieces, or 4 chicken legs, cut in two (or 8 thighs)
Salt and pepper
8 whole garlic cloves, peeled
3/4 cup white wine or water
2 tablespoons balsamic vinegar
Minced parsley, optional

Steps:

  • Heat oven to 400 degrees. Put oil in a large skillet, preferably nonstick; turn heat to medium-high. A minute later, add pancetta, and cook, stirring occasionally, about a minute. Add chicken, skin side down, and turn heat to medium. Season with salt and pepper; scatter the garlic in the pan.
  • Cook chicken, rotating pieces so they brown evenly. After 10 to 15 minutes, when skin side is brown, turn. Season again. Cook until nicely browned all over and nearly done. Remove to a plate, and put in oven.
  • Remove all but 2 tablespoons of fat from pan. Add wine or water; raise heat to high. Cook, stirring occasionally and scraping bottom of pan to loosen browned bits. When sauce is thick and glossy, barely covering bottom of pan, turn off heat, and stir in vinegar. Spoon sauce, pancetta and garlic over chicken, garnish with parsley, and serve.

2 -2 1/2 lbs chicken, cut into pieces
2 teaspoons salt
2 teaspoons pepper
3/4 cup olive oil
3/4 cup balsamic vinegar
2 cups yellow onions, chopped
3 tablespoons fresh garlic, chopped
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh sage, chopped
3 tablespoons fresh parsley, chopped
3 tablespoons fresh basil, chopped
2 lbs red rose potatoes, peeled
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
2 (14 1/2 ounce) cans chicken stock
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Marinate The Night Before:.
  • Rinse and trim the chicken. Salt and pepper chicken pieces on both sides. Lay the pieces flat, skin side up, in a glass baking dish and sprinkle with the fresh garlic, herbs, and onion. Pour vinegar and oil over the chicken, cover with plastic wrap and refrigerate. Turn the pieces once or twice while in the marinade.
  • To Bake:.
  • Preheat the oven to 375 degrees.
  • Cut the potatoes 1 inch cubes for roasting. Sprinkle them with salt and pepper, coat them with olive oil. Set them aside.
  • Remove the chicken from the marinade, reserving the liquid. Strain the marinade through a fine sieve.
  • Reserve the liquid for making the gravy.
  • Put the potatoes on the bottom of a large roasting pan and place the chicken pieces skin side down on top of the potatoes. Bake for 30 minutes. Turn chicken skin side up and roast for an additional 45 minutes. The chicken will be golden brown with a crispy skin.
  • Remove chicken to a platter and cover with foil to keep warm.
  • Turn oven temperature up to 450 degees.
  • Continue to roast the potatoes in the pan for 15 -20 minutes until they are soft in the center when tested with a fork. Add the potatoes to the chicken platter. Cover with foil and keep warm.
  • Transfer the roasting pan to a burner on medium high heat. Deglaze the pan with the strained chicken marinade, loosening any browned bits on the bottom of the pan. Add the chicken stock and bring to a boil and cook for 5 more minutes.
  • Mix the cornstarch with the cold water until it is smooth and add to the sauce in the pan stirring well. Boil for 2-3 minutes, or until thickened . Ladle some of the sauce over the chicken and potatoes and place the extra sauce in a gravy boat. The masterpiece is ready to be served.
  • For an alternative way to thicken the sauce make a paste with 2 tablespoons of soften butter and 1 ½ TBSP of flour. Add it to the boiling sauce instead of the corn starch paste. Why should you do it? " because some time you feel like a nut, and sometime you don't !".

8 (4 ounce) boneless skinless chicken breasts
1/2 cup flour
2 tablespoons olive oil
8 cloves minced garlic
1 cup chicken stock
1/3 cup balsamic vinegar
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Dredge chicken breasts in flour.
  • In a large skillet heat oil over medium high heat.
  • Cook breasts 3 minutes on one side; add garlic.
  • Turn chicken and continue cooking 2 to 3 minutes.
  • Add stock, vinegar and pepper to taste.
  • Reduce heat to medium low; cover and cook five to ten minutes or until chicken is tender.
  • Remove chicken and keep warm.
  • In small bowl combine water and cornstarch, stirring until smooth.
  • Add to skillet and cook 1 to 2 minutes until thick and smooth.
  • Pour sauce over chicken and serve.

4 boneless skinless chicken breast halves
salt and pepper
1 cup mushroom, sliced
2 -4 tablespoons flour, you can add more if needed
2 tablespoons olive oil
6 garlic cloves, peeled and whole
1/4 cup balsamic vinegar
3/4 cup chicken broth
1/4 teaspoon dried thyme
1 bay leaf
1 tablespoon butter

Steps:

  • If breasts are connected, separate filets and cut away any membranes or fat. Sprinkle with salt and pepper. Rinse mushrooms and pat dry. Season the flour with some salt and pepper and dredge chicken in the mixture. Shake off the excess flour.
  • Heat oil in heavy skillet over medium-high heat and cook the breasts until nicely browned on one side. Add garlic cloves. Turn chicken and scatter the mushrooms over top. Continue cooking, shaking the skillet to redistribute the mushrooms so that they cook evenly. Cook about 3-4 minutes.
  • Add the vinegar, broth, bay leaf and thyme.
  • Cover tightly and cook over medium-low heat for 10 minutes. Transfer the chicken pieces to a warm serving platter and cover with foil. Continue cooking sauce with mushrooms, uncovered and over medium-high heat for about 7 minutes. Swirl in butter and discard bay leaf.
  • Pour the mushroom sauce over the chicken and serve.
