BANANA OAT BRAN MUFFINS

Steps:
- Add the bananas to a bowl and mash them using a fork.
- Keep adding the almond milk, vegetable oil, brown sugar, and vanilla extract. Mix until even using the hand mixer.
- Add the flour, oat bran, sugar, baking powder, cinnamon, and salt to taste to another bowl.
- Mix them shortly using a spatula.
- Gradually add the flour mixture to the first bowl, while mixing.
- Use the mixture to fill the cups of a muffin pan.
- Top them with brown sugar and oat bran, then bake for 25 minutes at 360ºF/180ºC.

QUICK OAT BRAN AND BANANA MUFFINS

- Preheat oven to 400F; grease 12 (1/3 cup) muffin cups or use muffin liners.
- Combine first 6 ingredients in a large bowl.
- Put milk, oil, egg and vanilla in medium bowl and whisk to blend.
- Add milk mixture to dry ingredients, stirring just until combined; mix in banana, being careful not to overmix.
- Divide batter evenly among muffin cups.
- Bake about 20 minutes, or until toothpick inserted into centers of muffins comes out clean.
- Transfer to rack to cool.
CHUNKY BANANA BRAN MUFFINS

- Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
- Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
- With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

- In a medium bowl, mash the banana until mostly smooth. Add the egg and stir to combine.
- Add the honey, baking powder, cinnamon, nutmeg, salt, vanilla and Greek yogurt and mix well. Fold in the oats, then stir in the milk.
- Fill each cup of a greased 6-cup muffin tin ¼ of the way full. Add your additions of choice, then fill the muffin cups to the top with the rest of batter and top with more fruit or nuts.

This started out as a high fat recipe from epicurious.com. I replaced the white flour with whole wheat and whole wheat pastry flour, substituted nonfat yogurt and applesauce for the whole milk and butter and used raisins in place of nuts. In the end, you end up with a moist, flavorful, nutritious, fat-free muffin. What is better than that? They also freeze very well.
