Banana Bread - Lightened up - Spelt & Vegan image

Another adaptation from Vegan a Go Go. I changed this to spelt flour, just personal preference and a little more protein. I also halved the amount of oil and used some applesauce to save on some calories.

3 ripe bananas
1 tablespoon lemon juice
1/4 cup canola oil (or any light oil)
1/4 cup applesauce
1/2 cup sugar
1/2 cup dates, chopped
1 1/2 cups spelt flour
1/2 cup oat bran
1/2 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 375 degrees F. In a small bowl mash up the bananas and then mix in the lemon juice, oil, applesauce, sugar and dates.
  • In a larger bowl stir together the flour, oat bran, sea salt, baking powder and baking soda.
  • Add the wet mixture to the dry and mix gently until "just" mixed.
  • Spoon into a lightly oiled loaf pan and bake for 40-50 minutes (do the toothpick test to be sure).

3 ripe bananas
1/2 cup maple syrup
3 tablespoons canola oil
1 1/2 cups spelt flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup pecans
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F.
  • Oil a loaf pan.
  • In a bowl, mash bananas and mix in the maple syrup, canola oil, and vanilla.
  • In a separate bowl sift the dry ingredients together, adding the nuts last.
  • Blend the wet and dry mixtures and pour into the loaf pan.
  • Bake for 42 minutes.

Good comforting banana bread. You may substitute all spelt flour, or half spelt half whole wheat. It's up to you. Slightly modified from a recipe on a blog, and posting here for safe keeping.

nonstick cooking spray
3/4 cup all-purpose flour
3/4 cup spelt flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 egg whites
1 cup mashed banana (3 medium or 2 large)
3/4 cup sugar
1/4 cup canola oil

Steps:

  • Coat an 8" inch loaf pan with nonstick cooking spray and set aside. Mash bananas and set aside. In a medium bowl combine all-purpose flour, wheat flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl coming egg whites, banana, sugar, and oil. Once mixed well, add flour mixture all at one time to banana mixture. Stir until moistened. The batter should be lumpy. Spoon mixture into pan.
  • Bake at 350 degrees for 45 to 50 minutes. Test doneness by inserting a wooden toothpick near the center of the bread.
  • Cool in pan for 10 minutes. Remove from pan and cool completely on the wire rack.

  • Preheat oven to 350°F and grease an 8.5 x 4.5 inch or a 9 x 5-inch loaf pan. Also line it with a strip of parchment paper along the bottom, making sure it comes up over the ends so you can use it as a handle to lift the loaf out once cooked.
  • Peel the bananas then add them to a large mixing bowl and mash them with a fork or masher until they are a pretty smooth puree.
  • Add the oil/nut butter, sugar, molasses, salt and optional cinnamon or cardamom, then beat well until smooth.
  • Add the flour and baking powder to the bowl and gently stir it all together. Do not over-mix. You want it so that it is just combined and you cannot see any dry flour throughout the mixture. Overmixing or beating it hard will affect the texture of the banana bread.
