A healthy banana oatmeal recipe to make for a delicious and wholesome breakfast.

1/2 cup rolled oats
1/4 tsp salt
1 cup milk of choice
1/4 cup water or additional milk of choice
1 large very overripe banana, (mashed)
optional 1/4 tsp cinnamon
optional crushed walnuts, (mini chocolate chips, shredded coconut, etc.)
sweetener of choice, (if needed)

Steps:

  • Combine all ingredients in a small pot. Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over. It will eventually thicken. Sweeten as desired. Add your favorite toppings. I like peanut butter, mini chocolate chips, or the healthy nutella recipe linked earlier in this post. This recipe has been handed down in my family for generations. It's a good way to use overripe bananas. It's also a moist cookie that travels well either in the mail or car. This is usually the first cookie to disappear at my house.

1 ½ cups sifted all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 cup white sugar
1 egg
1 cup mashed bananas
1 ¾ cups quick cooking oats
½ cup chopped nuts

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Sift together the flour, baking soda, salt, nutmeg and cinnamon.
  • Cream together the shortening and sugar; beat until light and fluffy. Add egg, banana, oatmeal and nuts. Mix well.
  • Add dry ingredients, mix well and drop by the teaspoon on ungreased cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 15 minutes or until edges turn lightly brown. Cool on wire rack. Store in a closed container.

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk

1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  • Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

1 small banana, cut four slices, save for top of oatmeal, cut rest into small pieces
1 pinch allspice

  • Bring milk, salt, vanilla, and brown sugar to a boil.
  • Add oats and allspice.
  • Reduce to medium boil for 5 minutes.
  • Add banana, turn off heat, let set for 2-3 minutes.

SO, after much trial and error, I figured out how to do it right in the ce4ereal bowl, in the microwave. Pre-loading single servings -- everything but the water -- into snack-size zip bags make this an even quicker way to have my oatmeal any day I want it.

1 tablespoon raisins (or other dried fruit)
1 tablespoon walnut pieces (or other nuts)
1 -2 dash salt

1 -2 teaspoon brown sugar (optional, I don't do this, but sometimes I'll add a little sugar after it's cooked, if I'm in the mo)

Steps:

  • Put everything into a microwave safe bowl. You need one deep enough to avoid boil-over messes.
  • Microwave on HIGH for 2 minutes.
  • Stir and eat with a little milk and a sliced half banana. Yum!
