HEALTHY HAM AND BARLEY SOUP



Healthy Ham and Barley Soup image

This is a hearty ham and barley soup that is not only comforting and filling, but healthy too.

Number Of Ingredients 10

1 Tbsp olive oil
1 cup each: onion (celery, carrots diced)
4 cups chicken broth or broth prepared from ham bone
1 Tbsp minced garlic
1 tsp Kosher salt
1/2 tsp freshly ground black pepper
8 oz fresh spinach
1 cup quick-cooking barley
1 cup diced ham
Optional topping: parsley and bacon bits

Steps:

  • Dice all vegetables
  • Saute vegetables in oil until tender, about 5-7 minutes.
  • Add garlic, salt, and pepper and heat for one minute more.
  • Pour in the chicken or ham broth and bring to it to a boil.
  • Add the barley, stir, and reduce heat to medium-low.
  • Let soup simmer for 8 to 10 minutes or until barley is tender.
  • Add spinach and diced ham and stir until spinach is wilted, about 1 minute.
  • Ladle ham and barley soup into bowls and top with parsley and bacon bits.

2 medium shallots, sliced
1 1/2 cups quick-cooking barley
1 teaspoon fennel seeds (optional)
Kosher salt and freshly ground pepper
10 ounces cremini or white button mushrooms, sliced
1/2 teaspoon minced fresh rosemary
1/2 cup dry white wine
2 cups low-sodium chicken broth
1 cup diced ham steak
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley

Steps:

  • Melt the butter in a medium saucepan over medium-high heat, then add the shallots and cook until just soft, about 2 minutes. Add the barley and fennel seeds (if using), 1/4 teaspoon salt, and pepper to taste and cook, stirring, until the barley is lightly toasted, about 4 minutes. Add the mushrooms, rosemary and wine and cook, stirring, until the mushrooms are soft and the wine is absorbed, about 3 minutes.
  • Add the chicken broth and bring to a simmer; cover, reduce the heat to medium low and cook until the barley is tender and almost all of the liquid is absorbed, 8 to 10 minutes. Stir in the ham, parmesan and parsley. Season with salt and pepper.

1/2 cup chopped onion
1/2 cup chopped celery
1 garlic clove, minced
1 tablespoon butter
4 cups reduced-sodium chicken broth
1/2 cup dried lentils, rinsed
1/2 teaspoon each dried basil, oregano and rosemary, crushed
1/4 teaspoon pepper
1-1/2 cups cubed fully cooked ham
3/4 cup sliced fresh carrots
1/2 cup quick-cooking barley
1 can (14-1/2 ounces) diced tomatoes, undrained

Steps:

  • In a large saucepan, saute the onion, celery and garlic in butter until tender. Stir in the broth, lentils, basil, oregano, rosemary and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Add ham and carrots. Cover and simmer 10 minutes longer. Return to a boil; stir in the barley. Reduce heat; cover and simmer for 15 minutes or until barley and lentils are tender. Stir in tomatoes; heat through.

This is a nice soup recipe with a lot of texture and flavor. It is a welcome change for those weeks when there doesn't seem to be a lot of variety... and all 3 of my kids even loved it. This can also be cooked in a pan on the stove until the barley and carrot are tender, but I prefer the slow cooker method. The flavors seem to blend better.

1 pound Italian sausage
½ cup diced onion
1 tablespoon minced garlic
½ teaspoon Italian seasoning
1 (48 fluid ounce) can chicken broth
1 large carrot, sliced
1 (10 ounce) package frozen chopped spinach
¼ cup uncooked pearl barley

Steps:

  • In a skillet over medium heat, cook the sausage, onion, and garlic until the sausage is evenly brown. Season with Italian seasoning. Remove from heat, and drain.
  • In a slow cooker, mix the sausage mixture, chicken broth, carrot, spinach, and barley.
  • Cover, and cook 4 hours on High or 6 to 8 hours on Low.

10 cups canned low-salt chicken broth
3 pounds smoked ham hocks
3/4 pound russet potatoes (about 2 medium), peeled, diced
1 14-ounce can diced tomatoes in juice
1 medium onion, chopped
2 medium carrots, peeled, chopped
1 cup chopped celery
3/4 cup pearl barley, rinsed
2 teaspoons dried oregano
8 ounces fresh green beans, trimmed, cut into 1/2-inch pieces

Steps:

  • Bring broth and ham hocks to boil in large pot. Cover, reduce heat to medium-low and simmer 15 minutes. Add diced potatoes, tomatoes with juices, onion, carrots, celery, barley, and oregano. Bring to boil. Reduce heat to medium-low; simmer uncovered until meat and barley are tender, about 1 hour.
  • Using tongs, remove ham hocks from soup. Cut meat off bones and chop coarsely. Return meat to soup; discard bones. (Can be prepared 2 days ahead. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.) Add green beans; simmer until beans are tender, about 15 minutes. Season soup to taste with salt and pepper.

1 cup milk (for richer soup) or 1 cup half-and-half (for richer soup)

Steps:

  • Heat olive oil in large soup pot over medium heat.
  • Add onions, then add pepper, salt, pepper sauce and stir twice.
  • Saute over medium heat for 3 minutes.
  • Add rinsed split peas,barley,chopped carrots, garlic, bay leaves and saute another 2 minutes, stirring several times.
  • Add chicken broth and the chopped ham or smoked turkey sausage.
  • Bring to boil, reduce heat and simmer for 1 hour, stirring occasionally.
  • Remove from heat, remove bay leaves,add milk or half and half and stir.
  • Enjoy with warm, crusty bread.

5 cups water
2 chicken bouillon cubes (or 2 teaspoons chicken bouillon granules)
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup dried split green peas
1/2 cup pearl barley (not quick-cooking barley)
2 cups ham, chopped
3/4 cup carrot, chopped
3/4 cup yellow onion, chopped
3/4 cup celery, chopped
1 bay leaf

Steps:

  • In a medium bowl or liquid measure, combine the water, bouillon cubes and spices and whisk to combine (it's ok if the bouillon cubes don't completely dissolve).
  • In a medium round slow cooker (about 4-quart), layer peas, barley, ham, carrots, onion and celery. Do not mix.
  • Pour in the water/spices mixture and add the bay leaf to the slow cooker.
  • DON'T STIR!
  • Cover the slow cooker and cook on high for four hours or on low eight hours, until the peas reach the desired creamy, soft texture.
  • Remove the bay leaf, stir well, and add salt and pepper to taste, if needed. Serve immediately.
  • Note: Upon sitting and/or refrigerating, this soup thickens considerably. Simply add water or chicken broth to thin the soup to the desired consistency before re-serving.
